One of the easiest chicken recipes I know and always a hit!

4 skinless, boneless chicken breast halves
1 cup French dressing
1 ½ cups cornflakes cereal crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Place the dressing in a shallow dish or bowl for dipping. Do the same with the cornflakes crumbs or breadcrumbs (see Cook's Note). Dip the chicken breasts, one at a time, in the dressing, then in the breadcrumbs to coat.
  • Place chicken breasts in prepared baking dish. Bake in the preheated oven for 25 to 30 minutes, or until an instant-read thermometer reads 165 degrees F (74 degrees C).

Very moist chicken. Serve with a cheesy side if desired. Being from the South, I serve this with garlic cheese grits! (Note: For a slight variation in taste, you can use lemon flavored oil.)

4 bone-in chicken breast halves, with skin
1 tablespoon olive oil
1 pinch garlic powder
salt and pepper to taste
¾ cup Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Rub each chicken breast with olive oil, then place in a lightly greased 9x13 inch baking dish. Season with garlic powder, salt and pepper to taste. Pour Worcestershire sauce over each breast. Cover dish with aluminum foil and bake in the preheated oven for 45 minutes. Check chicken and remove cover if desired. Bake for another 15 minutes.

Steps:

  • Place chicken in a large resealable plastic bag or shallow glass container; add salad dressing. Seal or cover and turn to coat. Refrigerate for at least 1 hour. Drain and discard marinade. , Coat chicken with cornflakes; place in a greased 13-in. x 9-in. baking dish. Bake, uncovered, at 350° for 1 hour or until juices run clear.

4 chicken breast halves, bone in
1 (.7 ounce) package dry Italian-style salad dressing mix
2 tablespoons cold water
2 tablespoons olive oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Empty contents of salad dressing mix package into a small bowl. Add water and mix well, then stir in olive oil and mix again. Note: DO NOT add vinegar as per package instructions.
  • Place chicken breasts 'wrong side up' in a lightly greased 9x13 inch baking dish. Put 1/2 teaspoon of the dressing mixture on each breast and spread over the surface.
  • Bake at 400 degrees F (200 degrees C) for 15 to 25 minutes, depending on the size of the breasts. Turn breasts over and spoon remaining mixture on to the topside. Bake for another 15 to 20 minutes, or until tops are golden brown and chicken is cooked through (juices run clear).

2 packages (1/2 ounce each) butter-flavored granules
1-1/2 cups tomato juice
1/4 cup red wine vinegar
2 tablespoons soy sauce
2 teaspoons ground ginger
2 garlic cloves, minced
1 teaspoon dried oregano
1 broiler/fryer chicken (3 pounds), cut up and skin removed

Steps:

  • Prepared butter granules according to package directions. Stir in tomato juice, vinegar, soy sauce, ginger, garlic and oregano. Place chicken in a resealable plastic bag. Add half of marinade; seal and refrigerate for 8 hour or overnight. Cover and refrigerate the remaining marinade. , Drain marinade from chicken. Place chicken and reserved marinade in a 13-in. x 9-in. baking dish coated with cooking spray. Bake, uncovered, at 375° for 1 hour or until juices run clear, spooning marinade over chicken several times.
