QUICK AND EASY BAKED ZUCCHINI



Quick and Easy Baked Zucchini image

Recipe video above. This is just a really tasty, quick and easy way to cook zucchini in the oven. For all those times you need a quick veggie side dish! A little sprinkle of parmesan adds great flavour, and breadcrumbs adds a touch of terrific texture.Roasting at a high temp makes the parmesan golden and gets some browning on the zucchini before they turn into watery mush.

600g/ 1.2lb zucchinis ((4 large, 5 medium))
2 tbsp olive oil
1/2 tsp each salt and pepper
2 tbsp breadcrumbs
2 tbsp parmesan (, grated (store bought sandy type is best))

Steps:

  • Preheat oven to 240°C / 450°F (220°C fan) with the oven shelf set high in the oven.
  • Trim the ends off the zucchini. Cut medium zucchinis in quarters lengthwise, and large ones into sixths (halve then cut each half into 3 lengthwise to make 6 long "wedges").
  • Pile zucchini on a tray. Drizzle with 1 tablespoon oil, salt and pepper. Toss.
  • Line up in two rows so they're touching each other, with the skin side down.
  • Sprinkle evenly with breadcrumbs, then parmesan, drizzle with 1 tablespoon oil.
  • Bake 12 minutes until the parmesan is golden and zucchini is soft but not soggy.
  • Serve immediately!

4 medium-sized zucchinis
¾ cup bread crumbs
¾ cup shredded cheddar cheese
2 eggs
1 tablespoon garlic powder
1 teaspoon pepper
salt, to pull moisture from the zucchini

Steps:

  • Preheat oven to 400°F (200˚C.)
  • Grate the zucchini into a bowl and salt generously.
  • Allow zucchini to sit for 20 minutes as the salt draws out moisture.
  • Pour zucchini onto a clean dish towel and wring it out over the sink or into a separate bowl.
  • Pour the zucchini back into your bowl and add bread crumbs, cheddar cheese, eggs, garlic powder, and pepper. Mix together until well-blended.
  • Take a tablespoon of mixture and roll it into a tot, repeat for rest of mixture.
  • Place on a greased baking sheet and place in the oven for 20-25 minutes or until tots are crunchy. Serve warm.

  • Gather the ingredients.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add the sliced zucchini, salt, pepper, and garlic powder.
  • Cook, tossing the zucchini occasionally until it is crisp-tender. Taste and adjust the seasonings (add more salt and pepper, if necessary).

4 zucchini, quartered lengthwise
1/2 cup freshly grated Parmesan
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
Kosher salt and freshly ground black pepper, to taste
2 tablespoons olive oil
2 tablespoon chopped fresh parsley leaves

Steps:

  • Preheat oven to 350 degrees F. Coat a cooling rack with nonstick spray and place on a baking sheet; set aside. In a small bowl, combine Parmesan, thyme, oregano, basil, garlic powder, salt and pepper, to taste. Place zucchini onto prepared baking sheet. Drizzle with olive oil and sprinkle with Parmesan mixture. Place into oven and bake until tender, about 15 minutes. Then broil for 2-3 minutes, or until crisp and golden brown. Serve immediately, garnished with parsley, if desired.

3 green onions

  • Heat margarine and oil in skillet.
  • Add onions and garlic.
  • Cook unril onions are shiny but still crispy.
  • Add green onions zucchini and water.
  • Cook over medium heat for app 15 minutes or until zucchini starts to softened up.
  • Add tomatoes and cook another 7 minutes.
  • Add salt and be generous with the pepper
  • Just before removing from heat stir in Parmesan cheese.
  • Serve and enjoy.
  • If possible use freshly grated parmesan cheese
  • If you have no cherry tomatoes add 1 cup of tomatoes cut in wedges.

1/4 cup finely grated pecorino cheese (or sub parmesan or asiago)
6-8 torn basil leaves

Steps:

  • Preheat oven to 425F
  • Slice the zucchini into 1/3 inch disks. Place in a bowl and drizzle with the olive oil, sprinkle with salt, garlic powder, pepper and optional chili flakes. Place in a single layer on a parchment-lined sheet pan. Lightly sprinkle each slice with 1/3 teaspoon grated pecorino.
