- Place chocolate chips and milk in a microwave-safe bowl; microwave on high for 3 minutes, stirring halfway through. Stir in vanilla. Refrigerate, covered, until firm enough to shape, about 3 hours., Shape into 1-in. balls; roll in nuts or jimmies. Place in a 15x10x1-in. pan; refrigerate until firm, about 1 hour.

EASY CHOCOLATE TRUFFLES
For these five-ingredient truffles, it takes only a few minutes to whip up a batch of rich ganache from heavy cream and semisweet chocolate. After pouring the mixture into a pan and chilling, you can choose to take the easy route and simply cut them into bite-size squares, or roll up your sleeves and form them into beautiful bonbons.

Steps:
- 1. Line an 8-inch square baking pan with parchment, with overhang on two sides. In a saucepan, bring heavy cream and salt to a simmer.
- Place chocolate in a heatproof bowl and pour hot cream mixture over top; let stand 5 minutes then stir until smooth. Pour mixture into baking pan and refrigerate until set, at least 2 hours.
- When mixture is firm, cut into 1-inch squares and toss in cocoa powder. (See variation section below for instructions on rolling the truffles into balls). To store, box up truffles and refrigerate them at least 15 minutes and up to 2 weeks.

Steps:
- Put a pot on a medium low heat and melt the butter with the condensed milk.
- Stir in the cocoa powder and continue to stir for 10-15 minutes until the mixture begins to pull away from the edge of the pot.
- It's done when you run the spoon through the centre of the mixture and it takes a few seconds to combine again.
- Spread the mixture onto a buttered plate and refrigerate for 2 hours.
- When set, roll the mixture into small balls and coat them in the chocolate sprinkles (you may need to apply a small amount of butter to your hands to help them from sticking).
- Enjoy!

- In a microwave safe bowl, melt Guittard chocolate according to package directions.
- Once apeels have melted, add half of the whipping cream; stir thoroughly.
- Add remaining whipping cream; stir.
- Add extract; stir until ingredients are completely mixed, cover.
- Allow ganache to harden at room temperature (about 2 hours).
- Using truffle scoop, scoop out ganache and hand roll into 1 to 1 1/2 inch balls.
- Outer Coating 1 lb. (1 and 1/4 bags) dark chocolate In a microwave safe bowl, melt chocolate according to package directions.
- Working rapidly, drop ganache center into melted chocolate.
- Cover entire truffle center.
- Lift out dipping tool.
- Remove excess chocolate by tapping truffle on the bowl and place it on a cookie sheet lined with wax paper.
- Put truffles in the refrigerator for a shiny outer coating.
- Fill 2 oz. squeeze bottle with the white melted chocolate. Drizzle over truffles in a crossing pattern. Once dried, place truffles in Truffle Cups.

KIDS CAN MAKE: FRUIT-AND-NUT CHOCOLATE TRUFFLES
These one-bite treats are extra rich and satisfying, thanks to the surprising addition of dried apricots and prunes. For little kids: Let them roll and decorate the truffles. For big kids: Let them measure, scoop, decorate and package them. To wrap them up: Roll 5 to 6 truffles in parchment, and twist the ends closed.

- Special equipment: food-safe gloves
- Preheat the oven to 350 degrees F. Spread the pecans out on a baking sheet, and bake until brown and toasted, 8 to 10 minutes. Let cool completely, then very finely chop.
- Put the chocolate, vanilla, orange zest and salt in a large bowl; set aside. Heat the cream and butter in a small saucepan over medium-low heat until very hot and steaming; pour over the chocolate, then let sit for 10 minutes. Stir until all the chocolate has melted and the mixture is smooth. (If all the chocolate has not melted, microwave the mixture in 30-second increments, stirring after each, until smooth.) Add the pecans, apricots and prunes, and stir to combine.
- Transfer the chocolate-fruit mixture to a large baking dish, and let cool to room temperature. Cover with plastic wrap, and refrigerate until the mixture has hardened but is still soft enough to scoop, about 3 hours. (The mixture can be made up to 2 days in advance; let soften at room temperature until scoopable, about 30 minutes.)
- Line a baking sheet with parchment. Scoop heaping teaspoonfuls of truffle mixture, and place them on the prepared sheet. Once all the mixture has been divided up, roll the mounds into smooth, round balls. (Using food-safe gloves for this helps keep it from getting too messy.) Roll each ball into sanding sugar right before serving or wrapping. Keep refrigerated in an airtight container for up to 3 days.
EASY TRUFFLES
Steps:
- MELT chocolate chips in medium saucepan over low heat, stirring constantly; remove from heat. Stir in orange extract and frosting; blend well. Refrigerate 1 to 2 hours or until firm. PLACE each coating in its own pie pan. Scoop mixture into 1-inch balls; drop onto coating (mixture will be sticky). Roll to coat. Place in foil candy cups, if desired. Store in refrigerator.
MUMS CHOCOLATE TRUFFLES (NO BAKE)
My mum used to make these for us when we were kids, everyone loved them. All our friends used to hang around when it was baking day to see what they could get for a treat. These are great for the kids to make as there is no cooking, mind you most of the mix gets eaten before they get to the paper cases. You can make these with cocoa rather than the drinking chocolate for a more adult taste, but the kids love the drinking chocolate.

- Chop chocolate finely using a serrated knife, and place in a large heatproof bowl.
- In a medium saucepan, bring cream to a boil over medium-high heat; pour directly over chopped chocolate. Allow to sit 10 minutes; use a rubber spatula to gently stir chocolate and cream until combined. Allow to sit at room temperature until just thickened, about 15 minutes.
- Pour ganache mixture into a shallow glass dish. Cover with plastic wrap, and refrigerate until mixture is very cold and set but still pliable, about 30 minutes.
- Using a small spoon, scoop out ganache into 1-inch nuggets; place on a parchment-lined baking sheet. Chill for 10 minutes. Use fingertips to mold truffles into round shapes. Roll in cocoa powder to coat; chill in an airtight container until ready to serve.
