Easy Wheat Stalk Bread (Rustic

This is my favorite recipe from the cookbook "Artisan Bread in 5 Minutes a Day." I have baked it eighteen times now--it's foolproof and looks beautiful! The "secret" to this bread is mixing the dough ahead of time and storing it in your fridge, so you can make a fresh loaf daily. The "wheat stalk" shape allows diners at the table to twist off a roll-sized piece from the loaf.

3 cups water (lukewarm)
1 1/2 tablespoons dry yeast
1 1/2 tablespoons salt
6 1/2 cups bread flour

Steps:

  • Mix the yeast and salt with water.
  • Mix in flour without kneading, using a spoon or a stand-mixer (locked) with the dough hook. If not using the mixer, you may need to use wet hands to incorporate the last bit of flour.
  • Cover (not airtight--use a pice of foil or wax paper over the bowl) and allow to rest at room remperature until the dough rises and collapses (or flattens on top); about 2 hours.
  • Dough may be used right away, though it easier to handle when cold. I refrigerate the lidded (not airtight) dough for use over a 2-week period.
  • On baking day, dust the surface of the refrigerated dough with flour. Cut off a 1 pound (grapefruit-sized) piece. Dust the piece with flour and quickly shape into a ball by stretching the surface of the dough around to the bottom on all 4 sides, rotating the ball a quarter turn as you go. Gradually elongate the mass. With palms of your hands, gently roll into the shape of a baguette, tapering the ends to points.
  • Allow to rest on a flour-dusted board for 30 minutes. (I cover with a low-lint linen napkin).
  • Twenty minutes before baking, preheat oven to 450 degrees F. At this time, placea baking stone on the center rack, or use two overturned glass baking dishes of the same height as a surface. A metal cookie sheet will work in a pinch. Place an empty broiler pan on any other shelf that will not interfere with the rising bread.
  • Just before baking, dust the loaf with flour. With sharp kitchen scissors, cut from the top, at a 45-degree angle into the dough, stopping a quarter inch from the bottom. Make another identical cut about 3 inches down the loaf. Fold each cut piece over to one side, and repeat cutting, alternating sides each time to replicate a stalk of wheat (see photo).
  • Slide the loaf directly onto the hot stone (baking dishes, or cookie sheet). Pour 1 cup hot tap water into the broiler pan and quickly close the oven door. Bake 20-25 minutes, until deeply browned and firm.
  • NOTE: Use 7 cups all-purpose flour if you don't have bread flour. You will get 3-4, 1-pound loaves out of this recipe. Make the dough ahead of time and you'll have fresh bread every day for four days.

  • Combine some of the flour, yeast, and water in a bowl and let sit for at least 2 hrs. at room temperature.
  • While the batter rests, wash the sunchokes and boil in a large pot of salted water. Peel and use a fork to gently mash.
  • Add remaining yeast and water to the batter. Then add mashed sunchoke, remaining flours, and salt. On a floured work surface, knead dough and form the pain d’epi. Transfer to a parchment-lined baking sheet and let rise for at least 1.5 hrs.
  • Preheat oven to 220°C/430°F. Use scissors to cut baguettes and create the “wheat stalk” shape. Transfer to the oven and bake for approx. 30 min. Serve with butter and enjoy!

  • In a small bowl, add the active dry yeast. Pour the warm water over it, and do not mix. If you want to measure the water temperature, it should be about 105°F. Otherwise, simply test with your finger; the water should be warm but not hot. Just let the yeast rest in the water for about 5 minutes. It should look foamy and possibly bubbly.
  • In the bowl of a stand mixer (with the paddle attachment in place), add the flour and table salt. Alternatively, you can use a large bowl and a wooden spoon. Mix the flour and salt together until combined well. Pour in the yeast mixture and the lukewarm water. Stir everything together until a sticky dough forms that is mostly pulling away from the sides of the bowl. If your dough is looking too dry after it's been mixed well, then add a teaspoon of water in at a time.
  • Grease a large wooden board (like a cutting board) with a thin layer of vegetable oil. Flour your hands, then scoop the sticky dough out of the bowl and onto the wooden board. Use your hands to knead the dough for a couple of minutes. To knead, simply grab one end of your dough and lift up the dough, effectively stretching the dough. Place the dough back on the board, folding the dough over itself, like a book. Press the heel of your hand into the dough and push your heel forward. Again, grab hold of one end of the dough, lifting it up off the board, then drop back on the board and fold. Press the heel of your hand into the dough, then push your heel forward. Repeat this for a minute or so.
  • After a minute or two, you'll notice the dough starting to stick to your board. This is a good time to stop kneading. Grease a very large glass bowl, then transfer your dough to the bowl. Cover the top with a sheet of plastic wrap. Place the bowl in your microwave, and let the dough rise for 2 1/2 hours.
