WHITE BEANS RECIPE WITH TOMATO AND GARLIC

White Beans Recipe with Tomato and Garlic image

This White Beans recipe is so simple, yet so delicious! Cannellini beans cooked with tomatoes, garlic, and chicken broth make for one tasty side dish. It's perfect for holidays or easy weeknight meals!

Provided by Becky Hardin - The Cookie Rookie

Categories     Side Dish

Time 20m

Number Of Ingredients 11

1/3 cup olive oil & more for serving
¼ cup chopped fresh sage leaves
4 garlic cloves (sliced thin)
1 28-ounce can diced tomatoes, drained
1 teaspoon kosher salt
½ teaspoon fresh ground black pepper
1 teaspoon granulated sugar
1 cup low-sodium chicken broth
2 16 ounce - 32 ounces total cans cannellini beans, drained and rinsed
2 tablespoons minced fresh parsley leaves
Garnish: crispy bacon (optional)

Steps:

  • Heat olive oil in a medium skillet over medium heat.
  • Add the sage and sliced garlic. Shake the pan so the garlic doesn't stick, but don't stir it because the garlic might clump.
  • Reduce the heat to medium-low and cook 3-4 minutes or until the garlic turns very light gold and the sage darkens a bit.
  • Add the tomatoes and salt. Simmer, stirring often, until the tomatoes are shiny and their juices have evaporated; 8-10 minutes.
  • Add the pepper, sugar and chicken broth, stirring often, and bring the broth to a boil.
  • Reduce heat to low, add the beans, simmer (stirring often) until the liquid has evaporated, 18-20 minutes.
  • Remove the beans/tomatoes from the heat and stir in the parsley. Season, if needed, with more salt & pepper.
  • Serve with extra olive oil for drizzling and a sprinkle of crispy bacon (optional).
  • Enjoy!

BASIC WHITE BEANS

Basic White Beans image

This basic white beans recipe is ideal if you are just getting started in the world of cooking. Just remember, dried beans will not soften if cooked in salted water. Do not add any salt or commercial stock products until the beans are soft. The garlic, oil, and herbs will give them plenty of flavor.

Provided by Cook for Your Life Staff

Categories     Basics

Number Of Ingredients 1

1 cup dried white beans (baby lima, cannellini, or great northern), soaked overnight Water, to cover 1 small sprig rosemary 3 cloves garlic, smashed and peeled Extra virgin olive oil

Steps:

  • Soak the beans. Rinse the dried beans in water and put them in a large bowl. Cover with at least 4 times their volume of water and leave to soak overnight.
  • Drain and rinse the beans and put them into a pot with a heavy lid. Add just enough cold water to cover them.
  • Add the rosemary, garlic, and a drizzle of olive oil. Bring the beans to a boil, then cover and simmer them gently for 20 to 30 minutes or until the beans are tender but not mushy. The cooking time will depend on the size and age of the beans. Smaller and newer beans will require a shorter cooking time, so check on them after 20 minutes.

EASY WHITE BEAN DIP

Easy White Bean Dip image

This delicious recipe for Easy White Bean Dip is a staple in gluten free, vegan, vegetarian, and the healthy Mediterranean Diets.

Provided by Food, Wine, and Love | myposhmedia llc

Categories     Appetizers and Sides

Time 10m

Number Of Ingredients 6

Cannellini Beans (white kidney beans- 1 can (15-16 ounce). Drain and then rinse the beans before using in this recipe.)
Olive Oil (extra virgin preferred- 1/4 cup.)
Water-1 1/2 tablespoons (I suggest using fresh water rather than drained from the bean can water.)
Lemon Juice- 1 1/2 tablespoons.
Garlic- 1 clove minced.
Seasonings to taste- while you could use salt or pepper

Steps:

  • To make this you can use a blender, Vitamix, or food processor.
  • If you have not rinsed and drained your beans, do so before you start.
  • Combine all of your ingredients in your food processor (or whatever you are using to make this in). I suggest waiting to add any seasonings until you are able to taste the progress of your dip.
  • Process your dip for 30 seconds, stopping to taste the progress and scrape the sides of the container. Season as needed at this point. Repeat this step until your dip is a smooth texture.
  • Transfer to a serving bow, cover, and refrigerate. When ready to serve, add any additional oil, lemon, or seasonings to the top as desired.

QUICK AND EASY WHITE BEAN SALAD

Quick and Easy White Bean Salad image

Simple white bean salad with red onions, a little lemon juice, olive oil, vinegar, herbs, salt and pepper.

Provided by Elise Bauer

Categories     Salad     Budget     Make-ahead     Pantry Meal     Bean Salad     Cannellini Bean     Picnic Salad     Salad     White Bean

Time 5m

Yield 4

Number Of Ingredients 7

1 14.5-ounce can white beans, drained but not rinsed
2 tablespoons chopped red onion
A squeeze of lemon juice
2 teaspoons wine vinegar (red or white)
1 tablespoon extra virgin olive oil
1/2 teaspoon dry Herbs de Provence (crumbled) OR 1 teaspoon of some combination of finely chopped rosemary, tarragon, thyme, and lavender
Salt and freshly ground pepper to taste

Steps:

  • Let the onion marinate in lemon juice: After you chop up the onion, squeeze a little lemon juice over it and let it sit while prepping the other ingredients. According to my mother, this will take the edge off the onion.
  • Combine all ingredients into a serving dish: You can serve right away if you want, but if you chill for a few hours, the flavors will come together better. Lasts a couple of days in the refrigerator.

CREAMY SOUTHERN STYLE WHITE BEANS | INSTANT POT RECIPE

Creamy Southern Style White Beans | Instant Pot Recipe image

This recipe easily doubles or triples!

Provided by Kirsten Sandoval

Number Of Ingredients 7

3 cups dried white beans (or 4 cans cooked white beans, rinsed and drained)
1/2 cup Mesa de Vida Creole cooking & seasoning sauce
2 cups high-quality chicken or vegetable broth of your choice
1 chopped onion (reserve 4 Tb for topping, if desired)
1 chopped bell pepper
3 bay leaves
Salt and hot sauce to taste *Mesa de Vida cooking and seasoning sauces are extremely low in sodium so you can salt to your own taste/health needs

Steps:

  • Rince and drain your beans, then place them in a large metal or glass container. If prepping the night before you want to make the recipe: Pour enough cool water over the beans to cover by two inches. If prepping the morning you want to make the recipe (my preferred method): Pour enough boiling water over the top to cover by 2 inches. Let the beans soak on your counter until you are ready to proceed.
  • About 45 minutes before you want to make the recipe, rinse and strain the soaked beans. Pour the beans into the Instant Pot, add 6 cups of fresh water. Cook at pressure for 10 minutes, then let the pressure release naturally. Strain all of the liquid, then proceed with the rest of the recipe.
  • Place your cooked beans, Mesa de Vida Creole cooking & seasoning sauce, chopped onion, chopped bell pepper, broth and salt, to taste, into the Instant Pot. Cook at pressure for 10 minutes, then let the pressure release naturally.
  • Remove the lid and stir the beans vigorously to mash them a bit to create a creamy, thick consistency. Keep stirring and mashing until the consistency is as thick as you like it! *If your beans happen to still be too firm to mash, cook at pressure in 5 minute increments until they are tender. This recipe was tested with dried cannelini beans and dried pinto beans, and the times given worked perfectly. Beans can differ depending on their age and variety, so you may have to adjust cooking time.
  • Serve the beans, topped with a bit of fresh chopped onion and hot sauce, if you wish. It is typical to serve these creamy Southern-style beans with Johnny cakes (also called hoe cakes, or corn cakes - similar to a pancake made with corn meal), or over hot cooked rice. Enjoy!

THE BEST RECIPES TO MAKE WITH A CAN OF WHITE BEANS ...
2013-11-01 White beans are weeknight dinner saviors, no doubt. For one, they're already cooked. Two, they've got a nice serving of protein. Three, they're cheap. And, in our humble opinion, they make almost any meal taste better. Chillies, stews, dips, burgers -- even quesadillas -- can all be made with the unassuming white bean.
