EASY BAKED WHITEFISH OLE'
I got this recipe off a package of frozen whitefish, and it was a lifesaver when I was drawing a mental block on what to cook one night. I added some black pepper to this, and I served the fish with rice, some corn, and a salad. Although this serves four, we can easily eat this all between the two of us.

QUICK AND EASY BAKED FISH FILLET
We love boating here in the Hamptons in NY. Fluke (summer flounder) fishing is one of our favorite past times. The water is so clean you can actually watch the fish going to the hook. With fresh fish, we enjoy very basic, tasty recipes. This is a keeper!

- Add the onion and half of the creme fraiche, spreading it over the potatoes, just enough to moisten. Sprinkle with paprika, cover and bake for 20 minutes.
- Remove the sweet potatoes from the oven and spread the fillets over the top. Pour the rest of the cream evenly over the fillets. Bake, uncovered, until the fish flakes with a fork, and the potatoes are soft, about 20 minutes.
