When sweet corn is available, I love making this splurge of a side dish. Frozen corn works, but taste as you go and add sugar if needed. -Anthony Bolton, Bellevue, Nebraska

1/2 pound bacon strips, chopped
5 cups fresh or frozen super sweet corn
1 medium sweet red pepper, finely chopped
1 medium sweet yellow pepper, finely chopped
1 package (8 ounces) reduced-fat cream cheese
1/2 cup half-and-half cream
1 can (4 ounces) chopped green chiles, optional
2 teaspoons sugar
1 teaspoon pepper
1/4 teaspoon salt

Steps:

  • In a 6-qt. stockpot, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 1 tablespoon in pan., Add corn, red pepper and yellow pepper to drippings; cook and stir over medium-high heat 5-6 minutes or until tender. Stir in remaining ingredients until blended; bring to a boil. Reduce heat; simmer, covered, 8-10 minutes or until thickened.

I grew up just outside of a Mexican border town, and at least twice month my grandmother would take me across the border to do some shopping. I remember the food stands found at every corner street and almost all of them sold elotes. It was one of my favorite vendor foods. Every time I make it, I am reminded of my childhood.

2 (15.5 ounce) cans whole kernel corn, drained
4 tablespoons mayonnaise, or to taste
4 tablespoons grated Parmesan cheese, or to taste
4 teaspoons chile-lime seasoning (such as Tajin®), or more to taste
1 lime, or more to taste

Steps:

  • Heat corn in a skillet over medium heat until steaming, about 5 minutes. Remove from heat and drain water.
  • Fill several cups or mugs halfway with the corn. Add 1 tablespoon mayonnaise, 1 tablespoon Parmesan cheese, and 1 to 2 teaspoons chile-lime seasoning to each cup. Squeeze lime juice on top.

I first had this made for me by a fellow named Eddie while on vacation in Florida. I've never had anything like it! The shoepeg corn is not too sweet and doesn't get mushy at all, and the serrano chiles give it a little heat. Great warm or room temperature, so great for picnics and potlucks. Gets recipe requests every time!

5 (11 ounce) cans white shoepeg corn
16 ounces cream cheese (2 bricks)
4 (7 ounce) cans chopped green chilies
1 dash milk
3 -5 serrano peppers, finely chopped (2-3 with seeds removed)
plain breadcrumbs
1/4 cup butter

Steps:

  • Preheat oven to 350.
  • In a large pot, melt the cream cheese with the chiles, peppers and milk (to get the cream cheese going). Stir to combine.
  • In a 9x13" baking dish put corn (no need to drain) and add melted items--stir to thoroughly combine. Season with salt and pepper to taste.
  • In a small pan, melt the butter and add enough breadcrumbs to make a crumbly topping. Top corn mixture with buttery crumbs.
  • Cook until bubbling and slightly browned, about 20-30 minutes.
