½ cup sugar, divided
1 (3 ounce) package JELL-O Brand Lime Flavor Gelatin
1 tablespoon lime zest
¼ cup fresh lime juice
1 (8 ounce) tub COOL WHIP LITE Whipped Topping, thawed
1 tablespoon chopped fresh mint
1 ½ cups finely crushed pretzels
6 tablespoons butter or margarine, melted

Steps:

  • Line 9-inch round pan with plastic wrap, with ends extending over side of pan. Beat Neufchatel cheese and 1/4 cup sugar with mixer until blended. Add dry gelatin mix, zest and juice; mix well.
  • Whisk in COOL WHIP and mint; pour into prepared pan. Mix pretzel crumbs, remaining sugar and butter; sprinkle over pudding mixture. Cover dessert with ends of plastic wrap; use to gently press crumb mixture into filling.
  • Freeze 3 hours or until firm. Invert dessert onto serving plate; remove pan and plastic wrap. Let dessert stand at room temperature 15 min. to soften slightly before cutting to serve.

1 ½ cups packed fresh mint leaves and stems
2 tablespoons lemon juice
2 ¼ cups boiling water
1 drop green food color
3 ½ cups white sugar
½ (6 fluid ounce) container liquid pectin

Steps:

  • Rinse off the mint leaves, and place them into a large saucepan. Crush with a potato masher or the bottom of a jar or glass. Add water, and bring the mint to a boil. Remove from heat, cover, and let stand for 10 minutes. Strain, and measure out 1 2/3 cups of the mint.
  • Place 1 2/3 cups mint into a saucepan. Stir in the lemon juice and food coloring. Mix in the sugar, and place the pan over high heat. Bring to a boil, stirring constantly. Once the mixture is boiling, stir in the pectin. Boil the mixture for a full minute while stirring constantly. Remove from heat, and skim foam off the top using a large metal spoon. Transfer the mixture to hot sterile jars, and seal.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 minutes.

4 cups sugar
1-3/4 cups water
3/4 cup lime juice
3 to 4 drops green food coloring, optional
1 pouch (3 ounces) liquid fruit pectin
3 tablespoons finely chopped fresh mint leaves
1/4 cup grated lime zest

Steps:

  • In a large saucepan, combine sugar, water and lime juice; add food coloring if desired. Bring to a rolling boil over high heat, stirring constantly. Stir in pectin, mint and lime zest. Continue to boil 1 minute, stirring constantly. , Remove from heat; skim off foam. Ladle hot mixture into five hot half-pint jars, leaving 1/4-in. headspace. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

Found this recipe at recipegoldmine while looking for a mint jelly that does not require apples or apple juice. Made this up and my DH who so loves mint jelly with his lamb (I don't) loves this. This is an easy recipe, and I will never have to run to the Market to buy Mint Jelly again when we have lamb. Yipee!!!

1 1/2 cups of fresh mint, washed and packed
3 1/4 cups water
2 -3 drops green food coloring
1/2 teaspoon lemon juice
1 (1 3/4 ounce) box pectin
4 cups granulated sugar

Steps:

  • Crush mint leaves (I did a rough chop). Add water. Bring to a boil.
  • Remove from heat, cover and let stand 10 minutes. Strain and measure 3 cups of mint infusion.
  • Add food coloring and lemon juice. Add Sure-Jell, dissolve and bring to a rapid boil.
  • Add sugar. Cook fast, stirring occasionally until it comes to a rapid boil that cannot be stirred down, then cook 1 minute more.
  • Pour into sterilized jelly glasses and seal. I processed in the steam canner for 10 minutes to insure a good seal.

2 cups fresh mint, firmly packed
2 cups water
3 tablespoons freshly squeezed lemon juice
3 1/2 cups sugar
3 ounces liquid pectin
2 drops green food coloring

Steps:

  • Blend mint and the water in the jar of a blender until mint is finely chopped. Transfer to a saucepan; bring to a boil. Remove from heat; let steep 45 minutes. Strain mixture through a fine mesh sieve into bowl; reserve liquid (1 3/4 to 2 cups). Discard mint.
  • Return liquid to saucepan; add lemon juice and sugar. Bring to a boil; cook 1 minute. Add pectin, and return to a boil; cook 1 minute. Remove from heat; stir in food coloring. Skim surface. Transfer to a large container; let cool completely. Cover; let chill overnight. Transfer to a serving dish, or store in refrigerator for up to 5 days.

6 large lemons
1 cup water
2 1/2 cups sugar
1 teaspoon crushed red-pepper flakes
5 large sprigs of mint, tied in cheesecloth
2 tablespoons chopped fresh mint

Steps:

  • Use a vegetable peeler to remove the zest (yellow part only) from 4 of the lemons. Cut the zest into fine julienne. Remove the peel and pith from all of the lemons and cut the sections out from between the membranes.
  • Place the julienned lemon peel, lemon sections, water, sugar and pepper flakes in a large nonreactive saucepan and mix well. Bring to a boil. Lower the heat slightly and simmer for 20 minutes. Place a small saucer in the freezer.
  • Add the mint sprigs to the mixture and simmer for 10 minutes longer. Check the jelly by placing a spoonful on the saucer and returning it to the freezer for about 5 minutes. If the mixture jells when you push your finger through it, it is ready. If not, simmer a little longer and test again.
  • Remove the pan from the heat and let cool. Remove the mint sprigs and stir in the chopped mint. Place in a clean container and store in the refrigerator.

2 tablespoons finely grated lime zest (from about 3 limes)
1/4 cup/50 grams granulated sugar
1 cup/130 grams all-purpose flour
2 packed tablespoons finely chopped fresh mint
1/4 teaspoon baking powder
Pinch of kosher salt (Diamond Crystal)
1/2 cup/113 grams cold unsalted butter, cut into ½-inch pieces
3/4 cup/170 grams fresh lime juice (from about 7 limes)
1/4 cup/57 grams fresh lemon juice (from about 1 large lemon)
1 teaspoon cornstarch
Pinch of kosher salt (Diamond Crystal)
1 cup/200 grams granulated sugar
5 large egg yolks
1 large egg
6 tablespoons/85 grams cold unsalted butter, cut into tablespoons
Confectioners' sugar and finely grated lime zest, for serving

Steps:

  • Arrange an oven rack in the center position and heat the oven to 350 degrees. Line an 8-inch square pan, preferably metal, with 2 sheets of aluminum foil, crossing one over the other and pressing the foil into the corners and up the sides. Butter the bottom and sides of the foil, and set the pan aside.
  • Make the shortbread crust: In a medium bowl, use your fingertips to massage the lime zest into the sugar until the fragrant oils are released and the mixture looks like wet sand. Add the flour, chopped mint, baking powder and salt, and toss to combine. Add the ½-inch pieces of chilled butter and toss to coat in the flour mixture. Use your fingertips to smash the butter into the flour mixture, working until no large pieces remain and you have lots of moist crumbs that hold together easily when squeezed.
  • Bake the crust: Scatter the shortbread dough evenly across the bottom of the prepared pan. Use your hands to flatten the crumbs into an even layer, working it into the corners and against the sides. Bake the shortbread until lightly golden across the surface, about 30 minutes. Remove the pan from the oven. (Leave the oven on and reduce the temperature to 300 degrees.) Let the crust cool while you make the filling.
  • Make the lime curd filling: In a small saucepan, combine the lime juice, lemon juice, cornstarch, salt and ½ cup/100 grams of the granulated sugar, and cook over medium heat, whisking occasionally, to dissolve the sugar. When the mixture comes to a boil, whisk constantly until it thickens slightly from the cornstarch, about 1 minute, then remove the saucepan from the heat.
  • In a medium bowl, vigorously whisk the egg yolks, whole egg and remaining ½ cup/100 grams sugar until the mixture is smooth, thick and has paled in color a couple of shades, about 1 minute. Whisking constantly, slowly drizzle the hot citrus mixture into the eggs a tablespoon at a time to slowly raise the temperature, until you've added about half the citrus mixture to the eggs.
  • Whisk the egg mixture back into the saucepan, then set back over medium-low heat and cook, whisking constantly, until the curd turns opaque, is thick enough to coat the back of a spoon and barely hold the marks of the whisk (it will register 170 degrees on an instant-read thermometer), about 5 minutes. Remove the curd from the heat and whisk in the butter a piece at a time, waiting until each piece melts before adding the next, until the mixture is smooth.
  • Bake the bars: Pour the hot curd over the crust and shake the pan gently so it settles in an even layer. Bake the bars until the sides have puffed and the center is set but still a bit wobbly when you shake the pan, 30 to 35 minutes. Remove from the oven and let the bars cool completely in the pan
  • Chill before serving: Transfer the cooled pan to the refrigerator and chill until the bottom of the pan is cold to the touch, about 1 hour. This will harden the butter in both the curd and crust, making it easier to remove the bars from the pan and slice.
  • Use the edges of the foil to lift the bars out of the pan, then peel down the sides of the foil and slide a metal spatula underneath to loosen the crust from the foil. Slide the bars off the foil onto a cutting board and slice into 16 squares. Dust with confectioners' sugar and top with more lime zest before serving. They are best eaten on the first or second day, but will keep for up to 5 days stored in an airtight container in the refrigerator.

1 small seedless watermelon, halved
15 to 20 mint leaves, plus more for garnish (or basil would be good, too!)
Juice from 1/2 lime
1 to 2 tablespoons honey (depending on how sweet you like it)
2 packets unflavored gelatin, such as Knox
3/4 cup vodka or gin

Steps:

  • Scoop out the flesh from the watermelon halves with a spoon or ice cream scoop to yield 2 to 3 cups. (Depending on the size, you may not need the flesh from the second half.) Transfer to a blender. Add the mint and blend until smooth. Strain the juice through a mesh sieve into a medium bowl.
  • Pour 1 1/4 to 1 1/2 cups of the juice into a small saucepan. (Use less liquid for a firmer shot or if you plan to set them out for a long period of time). Add the lime juice and honey, and stir. Sprinkle with the gelatin packets. Allow the gelatin to soak in for a minute or two then heat over medium heat, stirring constantly, until the gelatin is dissolved, about 2 minutes.
  • Stir in the vodka or gin and pour into the watermelon rinds. Refrigerate for at least 4 hours, up to overnight. Slice into wedges, garnish with mint leaves, and serve!
