A warming autumnal pud that's low fat, speedy and satisfying

Provided by Good Food team

Categories     Dessert, Dinner, Snack, Supper

Time 25m

Number Of Ingredients 5

4 ripe pears
100g ricotta
½ tsp cinnamon
4 tbsp clear honey , plus extra to serve
8 crisp amaretti biscuits

Steps:

  • Cut each pear in half, then place on a large baking tray. Use a teaspoon to scoop out the cores and make a dip in the centre of each pear. If your pears are firm, you may need to use a sharp knife to do this. Dollop about 1 heaped tsp ricotta into each dip, then sprinkle over the cinnamon and drizzle with a little honey.
  • Heat oven to 190C/fan 170C/gas 5, then roast the pears for 10 mins. Tip the biscuits into a food bag and use a rolling pin to lightly crush them. Remove the pears from the oven, then scatter the crumbs over each pear. Return to the oven for another 10 mins or until the pears are soft and the biscuit golden brown. Serve drizzled with honey.

  • Peel the pears, halve and core them. You can core them with a melon baller, with a metal measuring spoon, or with a paring knife, as I do in the video below. I like to leave the stems on - they make for a pretty presentation. But you can cut them off if you wish. You can also shave a thin slice off the bottom of each pear half, enabling them to stay upright in the baking dish.
  • In a small bowl, whisk together the butter, vanilla, and cinnamon. Brush the pears with the mixture on both sides.
  • Arrange the pears in the prepared baking dish, cut side down. Bake them until fork-tender, about 30 minutes per side, basting every 15 minutes with the pan juices.

  • Preheat oven to 375°F (190°C). I don’t line my baking sheet when I make these, but you absolutely can with parchment or a silicone baking mat.
  • Cut pears in half, then cut a small sliver off the underside so the pears sit flat when placed upright on the baking sheet. See video above for visual. Using a large or medium cookie scoop or melon baller (or even a teaspoon), core out the seeds. Arrange pears, facing up, on the baking sheet. Sprinkle evenly with cinnamon– feel free to add more cinnamon if you’d like.
  • Whisk the maple syrup and vanilla extract together in a small bowl. Drizzle most of it all over the pears, reserving about 2 Tablespoons for after the pears are finished baking.
  • Bake pears for about 25 minutes until soft and lightly browned on the edges. Remove from the oven and immediately drizzle with remaining maple syrup mixture. Serve warm with granola and yogurt. Store leftovers in the refrigerator for up to 5 days.

  • Melt the butter in an ovenproof skillet just large enough to hold the pears in a single layer. Add the brown sugar and maple syrup and cook over moderately low heat, stirring, until the sugar is dissolved. Add the pears and turn them several times to coat with the syrup. • Halve the pears and scoop out the seeds (a melon baller works great for this). Cut off a tiny bit off the bottom of each pear so that they sit flat. Place the pears cut side up in a baking dish (I use a 9x13).
  • In a small bowl stir together butter, honey and vanilla. If necessary you can heat the honey for a few seconds in the microwave to make it easier to stir.
  • Spoon the honey butter over the pears. Pour apple juice into the bottom of the baking dish (there should be a thin layer of juice at the bottom, add a little more juice or water, if needed). Cover the dish with foil and bake for 20 minutes. Remove the foil and carefully spoon some of the juices from the bottom of the pan over the pears. Continue cooking, uncovered, until the pears are tender, about 10 more minutes.

This EASY dish made with honey, walnuts and cinnamon is perfect for breakfast or dessert! Preheat the oven to 350F. Cut the pears in half and place on a baking sheet (I cut a sliver off the other end so they sat upright). Using a measuring spoon or melon baller, scoop out the seeds.

As a general rule of thumb, you can convert from the oven to an air fryer by reducing the heat by 25˚F to 50˚F and reducing the bake time by about half. Air fry until pears are tender.
