4 (6 ounce) boneless skinless chicken breast halves
2 tablespoons extra virgin olive oil
2 teaspoons italian seasoning
1 1/2 teaspoons salt
3/4 teaspoon fresh ground black pepper
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 cup thinly sliced yellow onion
1 cup drained and chopped sun-dried tomato packed in oil
1/2 cup kalamata olive, pitted and halved
2 tablespoons minced garlic
1/2 cup dry white wine
2 tablespoons chopped fresh basil
1/2 teaspoon fresh thyme
4 ounces goat cheese or 4 ounces feta, crumbled

Steps:

  • Prepare a grill, or preheat the oven to 500 degrees F.
  • Prepare 4 sheets of heavy-duty aluminum foil to measure about 12 by 15-inches.
  • Fold in half crosswise to crease, then unfold.
  • Divide the spinach among the 4 foil sheets, placing it in the center of the bottom half.
  • Lightly coat both sides of each chicken breast with oil, then season with the Italian seasoning, 1 teaspoon of the salt, and 1/2 teaspoon of the pepper.
  • Place one chicken fillet in the center of each spinach portion.
  • In a medium bowl, combine the onions, tomatoes, olives, garlic, wine, basil, thyme, remaining 1/2 teaspoon of salt, and 1/4 teaspoon of pepper, and stir to combine.
  • Pile the tomato mixture on top of each chicken breast, spreading to cover evenly and allow any liquid to puddle around the chicken.
  • Top each portion with 1 ounce of cheese.
  • One at a time, fold the top of the foil over the chicken, and starting at the corner, fold the edges of foil over to tightly seal, each fold overlapping the previous one.
  • Place on the grill, or if using the oven, place the packets on a baking sheet and bake until the packages puff and the chicken is cooked through, about 12-18 minutes.
  • Remove from the grill or oven, and cut the tops of the packets open with a small, sharp knife.
  • Serve immediately either in the foil packets, or by removing the chicken, toppings and sauce to dinner plates.

4 boneless skinless chicken breasts (about 1 1/4 lb)
4 plum (Roma) tomatoes, each cut into 3 slices
1 small red onion, finely chopped (1 cup)
20 pitted kalamata olives

Steps:

  • Heat gas or charcoal grill. Cut 4 (18x12-inch) sheets of heavy-duty foil. Mix cheese, lemon peel and oregano. Place 1 chicken breast, 3 tomato slices, 1/4 cup onion and 5 olives on center of each sheet. Spoon 1/4 of the cheese mixture over chicken and vegetables on each sheet.
  • For each packet, bring up 2 sides of foil over chicken and vegetables so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • Place packets on grill over medium heat. Cover grill; cook 20 to 25 minutes, rotating packets 1/2 turn after 10 minutes, until juice of chicken is clear when center of thickest part is cut (170°F). Place packets on plates. Cut large X across top of each packet; carefully fold back foil.

2 large onions, cut into 1/4 inch thick slices

2 tilapia fillets, rinsed

Steps:

  • Heat gas or charcoal grill. In medium bowl, stir together tomatoes, artichoke hearts and olives; set aside.

1 summer squash
1 zucchini
2 plum tomatoes, cut into 1/2-inch dice
3/4 cup kalamata olive, pitted and coarsely chopped
1/2 cup basil leaves, chopped
2 tablespoons extra virgin olive oil
3/4 teaspoon salt
1 teaspoon lemon zest
1 lb salmon fillet, cut into 4 pieces (skinless)
feta cheese, to top

Steps:

  • Prepare outdoor grill for covered direct grilling over medium-high heat.
  • Trim ends from yellow squash and zucchini. With vegetable peeler, peel squash and zucchini lengthwise into long thin ribbons.
  • Transfer ribbons to a foil cooking bag. (Or, place two 30" by 18" sheets heavy-duty foil on work surface to make a double thickness.).
  • Sprinkle tomatoes, olives, basil, oil, and 1/2 teaspoon salt over squash and zucchini ribbons. Sprinkle lemon peel and remaining 1/4 teaspoon salt over salmon.
  • Place salmon on top of squash mixture; seal bag. (Or, if using foil, bring long sides of foil up and over salmon; fold several times to seal well, then fold in ends to seal tightly.).
  • Place foil packet on grill rack. Cover grill and cook 12 minutes.
  • When salmon is done, cut an X in top of foil packet to let steam escape, then carefully pull back foil to open.
  • Slide vegetables and salmon onto 4 dinner plates to serve. Top with feta cheese as desired.
