Spicy Catfish with Tropical Fruit Salsa image

1teaspoon minced garlic
1/4teaspoon salt
1/2teaspoon coarsely ground black pepper
1/4teaspoon ground red pepper
1/4teaspoon Paprika
1tablespoon olive oil
4-- (6-ounce) catfish fillets
1cup chopped ripe mango or papaya
1tablespoon finely chopped cilantro
1 1/2teaspoons jalapeño pepper
1 1/2teaspoons minced green onions
1tablespoon fresh lime juice

Steps:

  • Preheat the broiler. To prepare fish, combine garlic, salt, black and red peppers, paprika and oil in a small bowl. Press pepper mixture onto catfish. Place fillets in a baking pan and broil until opaque in the center, 6 to 8 minutes. To prepare salsa, combine mango, cilantro, jalapeño pepper and green onions in a bowl. 3 tablespoons butter or margarine
2/3 cup Original Bisquick™ mix
1/4 cup yellow cornmeal
1 teaspoon chili powder
1 1/4 teaspoons salt
1 lb orange roughy or other white fish fillets
1 egg, beaten
1 can (8 oz) pineapple chunks, drained
1 tablespoon finely chopped red onion
1 tablespoon chopped fresh cilantro
1 tablespoon lime juice
1 kiwifruit, peeled, chopped
1 mango or papaya, cut lengthwise in half, pitted and chopped
1 jalapeño chile, seeded, finely chopped

Steps:

  • Heat oven to 425°F. In 13x9-inch pan, melt butter in oven.
  • In small bowl, mix Bisquick mix, cornmeal, chili powder and salt. Dip fish fillets into egg, then coat with Bisquick mixture. Place in pan.
  • Bake uncovered 10 minutes. Turn fish; bake about 15 minutes longer or until fish flakes easily with fork.
  • Meanwhile, in glass or plastic bowl, mix all fruit salsa ingredients. Serve salsa with fish.

6 catfish fillets (6 ounces each)
3 tablespoons butter, melted
2 tablespoons Cajun seasoning
SALSA:
2 medium navel oranges, peeled, sectioned and diced
1 cup diced cantaloupe
1/2 cup diced honeydew
2 tablespoons lime juice

Steps:

  • Brush both sides of fillets with butter; sprinkle with Cajun seasoning. Place on a broiler pan; broil 6 in. from the heat for 8-10 minutes or until fish flakes easily with a fork. , For salsa, in a small bowl, combine the remaining ingredients. Serve with fish.

1 tablespoon honey
1 cup mango, diced
1 cup papaya, diced
1 tablespoon green onion, minced
1 tablespoon jalapeno pepper, minced

1/2 teaspoon pepper
1/4 teaspoon ground red pepper (cayenne, to taste)
24 ounces catfish fillets, u.s. farm-raised preferred for this recipe (approx size)
2 teaspoons olive oil

Steps:

  • Salsa:.
  • To make the salsa, stir together the lime juice and honey in a medium bowl. Add the remaining ingredients and stir gently until combined. Set aside.
  • Catfish:.
  • When you are ready to cook the fish, position the rack about 4 inches from the heat source and preheat the grill or broiler. Stir together the garlic, salt, pepper, and red pepper.
  • Brush each fish fillet with olive oil and sprinkle with about 1/2 teaspoon of the spice mixture. Grill or broil the fish for about 6 minutes. Turn and cook for 4 to 6 minutes longer or until the fish is cooked through.

6 cups plus 6 tablespoons canola or vegetable oil
12 taco shells
1 tablespoon fresh lime juice
4 skinless, boneless red snapper fillets (2 lb), cut into 1-inch pieces
6 scallions, chopped
2 canned chipotle chiles in adobo, finely chopped
3 cups arugula or watercress, torn into bite-size pieces
3 cups avocado and tropical-fruit salsa

Steps:

  • Heat 6 cups oil in a deep large saucepan over moderately high heat until a deep-fat thermometer registers 375°F, then fry taco shells, 2 at a time, turning occasionally, until a shade darker, about 1 minute. Transfer to paper towels to drain and season with salt.
  • Whisk together lime juice, 3 tablespoons oil, and salt and pepper to taste for dressing.
  • Season fish with salt and pepper. Heat remaining 3 tablespoons oil in a large nonstick skillet over moderately high heat until hot but not smoking, then sauté scallions, stirring, 1 minute. Add fish and sauté, stirring occasionally, until just cooked through, about 3 minutes. Remove skillet from heat and gently toss fish with chipotles.
  • Toss arugula with dressing and salt and pepper to taste.
  • Fill taco shells with arugula, fish mixture, and salsa.
