SPICY CATFISH WITH TROPICAL FRUIT SALSA

- Preheat the broiler. To prepare fish, combine garlic, salt, black and red peppers, paprika and oil in a small bowl. Press pepper mixture onto catfish. Place fillets in a baking pan and broil until opaque in the center, 6 to 8 minutes. To prepare salsa, combine mango, cilantro, jalapeño pepper and green onions in a bowl. - Heat oven to 425°F. In 13x9-inch pan, melt butter in oven.
- In small bowl, mix Bisquick mix, cornmeal, chili powder and salt. Dip fish fillets into egg, then coat with Bisquick mixture. Place in pan.
- Bake uncovered 10 minutes. Turn fish; bake about 15 minutes longer or until fish flakes easily with fork.
- Meanwhile, in glass or plastic bowl, mix all fruit salsa ingredients. Serve salsa with fish.

- To make the salsa, stir together the lime juice and honey in a medium bowl. Add the remaining ingredients and stir gently until combined. Set aside.
- Catfish:.
- When you are ready to cook the fish, position the rack about 4 inches from the heat source and preheat the grill or broiler. Stir together the garlic, salt, pepper, and red pepper.
- Brush each fish fillet with olive oil and sprinkle with about 1/2 teaspoon of the spice mixture. Grill or broil the fish for about 6 minutes. Turn and cook for 4 to 6 minutes longer or until the fish is cooked through.
- Top each serving with about 1/2 cup of the fruit salsa.

- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Coat a broiler pan with nonstick cooking spray. Toss fruit salad, corn, onion, chile peppers, and cilantro in a small bowl. Reserve.
- Place fish on the prepared broiler pan; broil 4 minutes. Turn fish over, brush with lime juice, and sprinkle with paprika. Broil until fish flakes easily with a fork; 3 to 5 additional minutes. Top fish with salsa to serve.

CRISPY SNAPPER TACOS WITH AVOCADO AND TROPICAL-FRUIT SALSA

- Heat 6 cups oil in a deep large saucepan over moderately high heat until a deep-fat thermometer registers 375°F, then fry taco shells, 2 at a time, turning occasionally, until a shade darker, about 1 minute. Transfer to paper towels to drain and season with salt.
- Whisk together lime juice, 3 tablespoons oil, and salt and pepper to taste for dressing.
- Season fish with salt and pepper. Heat remaining 3 tablespoons oil in a large nonstick skillet over moderately high heat until hot but not smoking, then sauté scallions, stirring, 1 minute.
