BLUEBERRY CREPES
We love these crepes! Blueberries are a great fresh filling, but so are meats and cheeses! This recipe is our take on a Pampered Chef® recipe that we make every other weekend!

Steps:
- Whisk milk, flour, egg, 2 teaspoons melted butter, and 2 teaspoons sugar together in a bowl until smooth. Cover and refrigerate crepe batter for at least 30 minutes, or overnight.
- Heat an 8-inch saute pan over medium heat. Brush pan with 1 teaspoon melted butter. Pour in 1/4 cup crepe batter; immediately tilt the pan and swirl so the batter covers the entire bottom of the pan. Cook until crepe begins to bubble and the edges are turning brown, 1 to 2 minutes. Flip crepe and cook until the other side browns slightly, about 1 more minute. Remove to a plate and repeat to cook remaining 3 crepes.
- At the same time, place orange juice, 1/4 cup sugar, and cinnamon in a small saucepan; bring to a boil. Remove from heat and let cool for 5 minutes. Stir in orange zest.
- Fill each crepe with blueberries and whipped cream. Roll up and pour syrup over top.

EGG CREPES WITH HERBS, SOFT CHEESE AND BLUEBERRIES

- Crack eggs into a glass bowl and season with a pinch of salt and a little pepper. Add fresh herbs and a squirt or small spoon of Dijon. Poke yolks, then whisk up eggs until just frothy.
- Heat a 12-inch nonstick skillet over moderate heat and use a very thin spatula or fish spatula to manipulate the eggs. Swirl in butter to coat the pan and when it foams, add eggs. Let eggs settle, then gently lift pan a bit and begin swirling the eggs to edges of bottom of pan, forming a thin omelet about 10 inches wide. When the eggs begin to dry on top and steam, a few bubbles will form.
- Add the cheese in a shingled format down the center of the crepe eggs going from edge to edge and top with blueberries. Remove from heat and fold both sides of the egg crepe in and over the filling-it will look a little like a swaddled baby doll. Loosen and slide onto plate.
CLASSIC CRêPES
This basic batter recipe for crêpes and pancakes is a versatile foundation for either sweet or savoury fillings

- Sift the flour with a pinch of salt into a medium-size bowl and make a well in the middle. Mix the milk and 100ml of water together. Break the eggs into the well and start whisking slowly. Add the milk and water in a steady stream, whisking constantly and gradually incorporating the flour as you do so.
- Whisk until the batter is smooth and all the flour has been incorporated. Set the batter aside to rest for 30 mins, then whisk the melted butter into the batter.
- Heat the pan over a medium heat. Very lightly grease the pan with melted butter. Using a ladle, pour roughly 2 tbsp of batter into the pan and swirl it around so the bottom of the pan is evenly coated. You want to use just enough batter to make a delicate, lacy pancake. Cook the pancake for about 45 secs on one side until golden and then using a palette knife or fish slice, flip the pancake over and cook the other side for about 30 secs until it freckles.
- Slide the pancake out of the pan and either serve immediately or stack on a plate with baking parchment in between. Continue until all the batter is used up.

Steps:
- Beat eggs well.
- Beat in milk and butter.
- Sift flour, measure, and sift again with sugar and salt into egg mixture.
- Beat until smooth.
- Heat a shallow 8-inch frying pan and butter well.
- Pour in about 3 tbsp batter then turn and tilt pan so batter covers entire surface.
- Cook until golden brown on both sides.
- Sweeten blueberries to taste with sugar.
- Spoon 3 tbsp of sweetened blueberries in centre of crepe; fold in half and lift to a heated plate; keep warm.
- Repeat, buttering pan before cooking each crepe.
- Serve about two filled crepes to each person.
- Pass powdered sugar and lemon wedges and melted butter, if desired.
