BAKED EGG BOATS
Steps:
- Preheat oven to 350
- Cut a V shape into each baguette and hollow out - leaving about 1/2 inch border of bread (see above photo).
- In medium bowl, scramble eggs.
- Add cream, ham, cheese, salt and pepper.
- Spoon into boats - making sure each egg boat gets equal parts ham and cheese.
- Bake for about 25 minutes until egg mixture is puffy and bread is nicely browned.
- Cool for 5 minutes - slice and eat!

- Preheat oven to 350 degrees F. Line a baking sheet with parchment or foil.
- Cut a slit in the center top of each roll. Hollow out, leaving about 1/2-inch for a "wall."
- Whisk eggs and cream in a medium bowl. Add the rest of the filling ingredients and stir well to combine.
- Divide egg mixture evenly between the rolls.
- Bake for 25-30 minutes or until eggs are just set. Let stand for 5 minutes before serving. If you prefer firmer eggs, then you can microwave on high for about 30 seconds after the standing time.

SISSY'S EGG IN A BOAT
Fun breakfast food! Just the basics. Sissy (my 22-year-old sister who would sooner starve than cook for herself) looooves this one!

Steps:
- Heat a bit of butter in a large skillet.
- Take a small glass (it has to be smaller than the bread) and press the top of it into the bread to cut out a circle. Remove the circle (the "man overboard") and set aside.
- Place the 2 slices of bread with the circle cutouts onto the pan.
- Flip them before adding the egg so both sides of the bread are buttery.
- Drop one egg into each hole in the bread slices. (the bread is the "boat").
- Add a little more butter to the pan and throw on the "men overboard". They make nice little crispy buttery toast bites to accompany the egg.
- Fry until desired consistency. Sissy doesn't like her eggs too runny so I flip them and cook both sides. Add salt and pepper to taste.
- If you want cheese on them -- add it on right at the end just long enough to melt one slice over each boat.

- Heat oven to 350 degrees Fahrenheit.
- Beat 2 of the eggs in a medium bowl, add the potatoes, 2/3 cup cheese, and meat (add spices now or sprinkle over eggs or cheese, later), mix well.
- Prepare 4 custard cups, ramekins or large muffin tin cups with nonstick spray or by greasing. If you don't have cups large enough, use a round cake pan or similar size casserole.
- Fill cups halfway with potato/meat mixture, then form a well in the center large enough to accommodate a whole egg, pressing the mixture up to the top edge of the cup. (For one pan, place all the mixture in the pan, then make 4 wells for the eggs.).
- Bake in oven for 10 to 15 minutes (until barely starting to brown), then take out of oven, break each of the 4 eggs into a cup one at a time, and then place each into one well apiece (sprinkle desired spices/parsley over egg, if you like, or put over cheese, next step). Return to oven for 5 minutes (just until white is cooked, or longer for medium or firm yolks), then sprinkle remaining cheese over the tops (could sprinkle with parsley and/or spices now, if desired/not used before) and return to oven for another 2 to 4 minutes, until cheese is melted.
- Serve in or out of the individual cups on plates, or use a pancake turner or pie server to plate individual servings if using a single pan.
- Serves 4.
