EGGPLANT AND LAMB KEBABS
Steps:
- Thread the cubes of eggplant, the lamb, the onion and tomatoes in alternate pieces on skewers. Brush with olive oil.
- Heat the coals until hot. Grill the kebabs for 15 to 20 minutes, turning frequently, or until the eggplant is cooked and the lamb is browned on the outside and pink in the middle. Season it with salt and pepper and serve with the following sauce.

Steps:
- Mix yogurt, lemon juice, onion juice, olive oil, garlic, black pepper, and saffron together in a large bowl. Add chicken pieces to the marinade and toss to coat. Cover with plastic wrap and marinate, 8 hours to overnight.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Remove chicken from marinade; thread through skewers. Discard unused marinade.
- Cook on the preheated grill, turning frequently, until golden brown on all sides and meat is no longer pink in the center, about 8 minutes per side.

Steps:
- Grate the hard boiled eggs finely.
- Combine with all other ingredients except oil. Mix well and knead into smooth dough.
- Divide mixture into 10-12 equal portions. Shape each portion into medallions (flat round cutlets) and keep aside.
- Heat oil in kadai/pan and fry kebabs, a few at a time, until crisp and golden brown.
- Serve hot, garnished with onion rings and mint.

- To make this easy kebab recipe, begin with boiling the eggs with a pinch of salt. Once the eggs are boiled, remove the shells and grate the boiled eggs in a large bowl. Then add all the other ingredients except bread crumbs and oil into it. Mix all the ingredients well using your hands. Add water only 1-2 tbsp at a time in the mixture. Dont add more water than required. Make sure the consistency of the mixture is sticky and not watery. Leave the bread crumbs aside for coating.
- Knead the mixture well with your hands so that it gets a smooth texture. Adjust the seasoning as per your taste and shape the mixture into 10 small kebabs. Dunk each kebab in the breadcrumbs and coat them properly.
- Heat the oil in a deep bottomed pan and cook the kebabs till golden brown on both sides. Keep the flame low or the spices in the egg kebabs will burn. Take the egg kebabs out on an absorbent paper.
