CHEESY EGG QUESADILLAS

Here's my fun spin on breakfast for dinner. These egg quesadillas are so easy to make, full of protein and plain delicious any time of day. -Barbara Blommer, Woodland Park, Colorado

Number Of Ingredients 9

3 large eggs
3 tablespoons 2% milk
1/8 teaspoon pepper
1 tablespoon plus 2 teaspoons butter, divided
4 flour tortillas (8 inches)
1/2 cup refried beans
1/4 cup salsa
2/3 cup shredded cheddar cheese
Optional: Sour cream and additional salsa

Steps:

  • Preheat oven to 425°. Whisk together first 3 ingredients. In a large nonstick skillet, heat 1 tablespoon butter over medium heat. Add egg mixture; cook and stir until eggs are thickened and no liquid egg remains. Remove from heat., Place 2 tortillas on a baking sheet. Spread with beans; top with eggs, salsa, cheese and remaining tortillas. Melt remaining butter; brush over tops., Bake until golden brown and cheese is melted, 10-12 minutes. If desired, serve with sour cream and additional salsa.

I haven't tried this yet, but wanted to save it. Taken from the Relish food magazine and created by Greg Johnson, a Seattle-based chef, he "came up with this recipe as a way to get eggs into a nice package". I'm thinking some crumbled bacon would be a tasty addtion!

Number Of Ingredients 7

1/2 teaspoon extra virgin olive oil
2 eggs
1 egg white
2 flour tortillas (8 or 10 inch)
1/2 cup shredded cheddar cheese
salsa (optional)
diced avocado (optional)

Steps:

  • Heat a nonstick saute pan, big enough to fit tortillas, over medium-low heat. Add oil. Add eggs, breaking yolks. (Add salt and/or pepper to taste.).
  • Cook until eggs are set enough to flip, about 2 minutes. Flip; cook until eggs are done, about 2 more minutes. Transfer to a plate and wipe out pan.
  • Return pan to heat and increase heat to medium. Place one tortilla in pan. Sprinkle on half the cheese.
  • Place cooked eggs over cheese. Top with remaining cheese and tortilla.
  • Cook until bottom tortilla is a little brown and cheese starts to melt, about 1 to 2 minutes.
  • Flip with a spatula and brown the other side. Remove from pan. Transfer to cutting board to cool one minute. Then slice into wedges.
  • Serve with salsa and and diced avocado, if desired.

A nice spin on a classic, these corned beef egg rolls are savory, creamy, and crunchy. Swiss cheese adds a wonderful creamy tang.

1 ½ cups shredded coleslaw mix
3 tablespoons water
¼ teaspoon kosher salt
¼ teaspoon ground black pepper
⅓ cup water
5 ounces cooked corned beef brisket
1 cup shredded Swiss cheese
8 egg roll wrappers
3 cups vegetable oil for frying, or as needed
1 cup mayonnaise
3 tablespoons ketchup
3 tablespoons sweet pickle relish
1 teaspoon lemon juice
1 teaspoon smoked paprika
¼ teaspoon kosher salt

Steps:

  • Stir together coleslaw, 3 tablespoons water, salt, and pepper in a medium microwave-safe bowl. Cover with a damp paper towel. Microwave until lightly steamed, about 1 minute and 30 seconds. Shred corned beef with hands or kitchen scissors, and add to coleslaw mixture along with Swiss cheese. Stir until evenly combined.
  • Fill a small bowl with remaining 1/3 cup water. Lay out egg roll wrappers on a clean work surface, and top each with about 1/3 cup of corned beef filling. Dip your finger in a bowl of water and wet edges of wrappers; tightly wrap, roll, and seal. Repeat this process with remaining egg roll wrappers and filling.
  • Heat oil over medium-high in a deep fryer or large Dutch oven until a deep-fry thermometer inserted in oil registers 350 degrees F (175 degrees C).
  • Working in batches, fry egg rolls until golden brown, 3 to 4 minutes, turning if necessary to ensure even browning. Let drain and cool on paper towel-lined plate or sheet tray, about 10 minutes.
  • While egg rolls cool, prepare dipping sauce by mixing mayonnaise, ketchup, relish, lemon juice, paprika, and salt together in a bowl. Place cooled egg rolls on a plate and serve with sauce.

Number Of Ingredients 5

1/2 pound sausage
6 eggs
salt and pepper to taste
6 10 inch flour tortillas
1 cup shredded Cheddar cheese

Steps:

  • 1. Crumble sausage in 10-inch skillet and cook until browned. Remove sausage from skillet and drain grease. 2. Whisk eggs and add to skillet. Cook, stirring occasionally, until set. Salt and pepper to taste. 3. Sprinkle half the cheese on 3 tortillas. Divide the sausage and eggs among the 3 tortillas and add on top of cheese. Sprinkle remaining cheese over the eggs and top with remaining 3 tortillas. 4. Heat skillet over medium heat and cook Eggadillas, one at a time, until golden on bottom. Carefully, turn over and cook remaining side until golden and cheese is melted. 5. Cut each Eggadilla in fourths with a pizza cutter.
