Steps:
- Heat oven to 200C/180C fan/gas 6. Mash 3 large black peeled bananas with a fork, then mix well with 75g vegetable or sunflower oil and 100g brown sugar.
- Add 225g plain flour, 3 heaped tsp baking powder and 3 tsp cinnamon or mixed spice, and combine well. Add 50g dried fruit or nuts, if using.
- Bake in an oiled, lined 2lb loaf tin for 20 minutes. Check and cover with foil if the cake is browning.
- Bake for another 20 minutes, or until a skewer comes out clean.
- Allow to cool a little before slicing. It's delicious freshly baked, but develops a lovely gooey quality the day after.

QUICK AND EASY EGGLESS BANANA BREAD
This eggless banana bread recipe uses milk/buttermilk as substitute. You can also use soy milk if you like. This egg free banana bread is very quick, fuss free yet nutritious, and makes a simple and wonderful snack for the family. It can be eaten plain or added with fruits, nuts, seeds and chocolate chips. Just add 1/2 cup of the nuts, etc to the mixture last, just before pouring the mixture into the loaf pan. Enjoy!

- Preheat oven to 325 degrees F (165 degrees C). Lightly grease an 8x4 inch loaf pan.
- In a large bowl, cream the shortening and sugar. Sift in the flour, baking soda and salt. Blend in the mashed bananas. Pour batter into prepared pan.

I looked in the fridge and she didn't have eggs or milk and I really didn't feel up to a trip to the store and found this recipe on the Internet....

- 1. Mash well ripened bananas in a small bowl and set aside.
- 2. Mix baking powder,baking soda,flour and sugar.
- 3. Add mashed bananas and oil . Stir well. This batter will be very thick.
- 4. Spoon ingredients into a greased (or spray with Pam) a 9x5x3" loaf pan or muffin tins.
- 5. Bake in a preheated oven at 350 degrees for approximately 50 minutes for a loaf or 20 to 30 minutes for muffins.
- 6. Insert a tooth pick to check if done.
- 7. Optional: I used 1 cup finely chopped walnuts and used brown sugar in place of white sugar. I also added cinnamon to the second batch. I tried both a loaf and muffins. (note) My loaf had to cook a little longer than specified, but it may have been the oven.
BEST EGGLESS BANANA BREAD
Steps:
- Preheat oven to 350º F. Grease with no-stick baking spray a bread loaf pan.
- In a medium bowl, mash the ripe bananas with a fork until completely smooth. Stir the melted butter into the mashed bananas; mix until combined. Add in buttermilk, vanilla, sugar; mix until well combined.
- Add dry ingredients: flour, baking powder, baking soda and salt; Mix to incorporate. Mix in walnuts (if using) and mix until just combined.
- Pour mixture into the prepared bread loaf pan.
- Bake for 1 hour or until a wooden pick comes out clean.
- Remove from the oven and allow the bread to cool completely in the pan set on a wire rack.

EGG-FREE BANANA BREAD
Primarily a vegetarian, I like to bake cakes and breads without using eggs and am always on the look out for good eggless recipes. During one of my Googling sessions, I stumbled upon an egg-free banana bread/cake recipe. However, when I tried it out the bread came out hard and sank badly. So I improvised and here's my banana bread recipe for those of you who can't eat or don't like to eat eggs. I hope you enjoy it!

- Peel and mash bananas well. Set aside.
- Sift all the dry ingredients together at least 2 times.
- Add oil, vanilla, sugar to the mashed bananas and mix well.
- Add the banana mixture to the flour mix.
- Slowly add milk to make a batter of thick consistency.
- Add nuts at this point. Mix together gently.
- Pour banana bread batter in a greased loaf pan and bake in a preheated oven at 150 deg.C for 35-40 mins or until toothpick comes out clean from the center.
- Cool for 5-10 minutes in the loaf pan, remove to a cooling rack to cool properly and serve slices.
EGGLESS BANANA BREAD
This eggless banana bread is super easy to make, it uses fewer than 10 staple cupboard ingredients and requires no gimmickry at all. It's naturally vegan, low-fat and can be refined-sugar and gluten-free too, if you feel so inclined.

- Warm up the oven to 175° C / 350° F and line a 900 g / 2 lb cake tin with baking paper. Move the oven rack a notch down from the middle position.
- Combine well mashed up bananas with oil, almond milk, lemon juice and sugar in a large bowl. Mix very well.
- In a smaller bowl, combine all the dry ingredients.
- Add dry ingredients to the wet ones in three batches, mixing well each time. Mix until there is no dry flour left, but do not overmix (that's only important if you are using a flour containing gluten)!
- Transfer the cake batter into the prepared baking tin. It should be fairy thick. Slice a banana in half lengthwise and place on top of the cake - do not press it down as the cake will raise all around it.
- Bake for about 50-55 minutes, or until a toothpick comes out fairy clean (this cake should be moist). Remove from the oven and brush with with a little maple syrup while the cake is still hot.
- Let the cake cool down completely before removing it from the tin and slicing. Use a serrated knife to slice if you have one - I find that it produces neater looking slices.

BANANA BREAD ~ WITH GLUTEN, DAIRY, AND EGG-FREE OPTIONS.
Steps:
- Preheat oven to 350. I have a convection oven setting, but I prefer to bake this on regular bake.
- This recipe will make 2 loaves. We eat one fresh and either share the other one or freeze it.
- Prepare loaf pans by spraying the bottom and sides with Pam and cutting wax paper to fit in the bottom of the pan. This will ensure easy removal of the finished product. To do this, place a loaf pan on top of wax paper. Trace around the bottom of the pan with a pen. Cut out traced shape and place in the bottom of the loaf pan. Works great for cakes as well. I prefer this method over greasing and flouring pans.
- Cream butter and sugar. Add bananas, eggs (or egg replacer) and vanilla. Blend well.
- In a separate bowl mix flour, baking soda, salt, and nuts together.
- Add dry ingredients alternately with buttermilk (or substitute)
- Be careful not to over mix. A quick bread should be tender, over mixing will toughen the final product.
- Pour into prepared loaf pans
- Bake for 50-60 minutes. Test with a toothpick or gently touching top center, it should gently spring back.
- Set on cooling racks for 10 minutes.
- Run a knife around edges and carefully remove from pan. Remove wax paper and let cool to room temperature

- Unfortunately, banana bread can dry out easily. For this recipe, check the bread at 40 minutes with a toothpick to see if it is done. If the toothpick comes out clean, the bread is done. If there are lots of crumbs on the toothpick, continue baking for up to five more minutes, checking periodically to see if it is done.
