eggless dates muffins - healthy and delicious whole wheat muffins packed with the goodness of dates.

1 cup whole wheat flour ( atta )
1/2 cup chopped dates ( khajoor )
1/4 cup granulated sugar ( or raw cane sugar )
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup milk
1/2 tsp vanilla essence
1/4 cup vegetable oil

Steps:

  • De-seed and roughly chop the dates.
  • Soak the chopped dates in hot milk for half an hour.
  • Then blend the dates with little of the soaked milk in a blender or mixer till the dates turn into a smooth paste, retaining the remaining milk to be used later.
  • Pre-heat the oven to 180 deg C / 350 deg F.
  • Meanwhile, spoon the whole wheat flour into a dry measuring cup and level off.
  • Sift whole wheat flour, baking powder, baking soda and salt together twice in a large bowl.
  • In another bowl, whisk together the sugar and oil till they are blended.
  • Then add the ground dates paste and vanilla essence along with the remaining milk that was soaked with the dates and whisk again till smooth.
  • Add the dry ingredients into the bowl and gently fold the batter to combine.
  • Grease a muffin pan with oil or alternatively line with paper cups.
  • Spoon batter into the prepared muffin pan.
  • Bake the muffins for around 20 minutes or until a toothpick inserted in a muffin comes out clean.
  • Cool them on a wire rack.
  • Eggless dates muffins are ready to be served.

Being made out of whole wheat and lowfat yogurt create some healthy muffins. The yogurt makes them very light and moist and the dates give them a sweet flavor.

3/4 cup sugar
1/3 cup butter
1 egg
8 ounces low-fat plain yogurt
2 cups whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup dates, chopped

Steps:

  • Preheat oven to 350 degrees.
  • In a food processor, cream the sugar, butter and egg together until smooth.
  • In a bowl, add the whole wheat flour, baking powder, baking soda and salt. Alternating with the flour mixture and the yogurt to the creamed mixture. When all combined, fold in the dates.
  • Spray muffin pan with non-stick spray or use muffin cups and fill 2/3 full with batter.
  • Bake for approximately 20 minutes.

100% whole wheat, these muffins are best fresh out of the oven (of course) but they keep well for at least a week in an airtight container, and are also wonderful split in half and toasted. Based on a recipe from Horn of the Moon cookbook.

1 1/3 cups whole wheat flour
1 1/3 cups whole wheat pastry flour
1 tablespoon baking powder
1/4 teaspoon salt
2 eggs
1/2 cup honey
1 cup buttermilk
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 cup dates, chopped
1/2 cup walnuts, chopped

Steps:

  • Preheat oven to 375.
  • Spray muffin tin with oil (or use paper liners).
  • Mix the flours, baking powder, and salt together.
  • Beat together the oil, honey, eggs, milk and vanilla.
  • Mix the dates with the dry ingredients, then add the wet ingredients. Finally, stir in the walnuts.
  • Fill muffin tins, adding a few coarsly chopped walnuts on the top if you'd like.
  • Bake 25 minutes, until golden.
