FRIED CHICKEN STRIPS

Fried Chicken Strips image

I recently made this recipe of Mom's for my in-laws and they told me it was the "best fried chicken ever." Slicing the chicken breasts into strips cuts down on cooking time and ensures every piece is crunchy and evenly coated. Serve the homemade chicken tenders with your favorite dipping sauce. -Genny Monchamp, Redding, California

This was my grandmother's and mother's recipe. It is 125 plus years old. If you are going to fry anything, let it be a frying size chicken. Cut your calories some other way! Start a new tradition, as I have, of fried chicken on Christmas Day!

ELECTRIC SKILLET CHICKEN

Electric Skillet Chicken image

A favorite with my family! This recipe is SO easy and requires NO OIL to fry the chicken in! It uses the fat from the chicken pieces (use dark, boned meat). There is something to be said for simple meals with seasoning like our ancestors used. Nothing fancy about what I cook but it's delicious!!!!!!!

Provided by Sara Do

Categories     Chicken

Time 1h10m

Number Of Ingredients 3

1 pkg chicken thighs
2 Tbsp salt
1 Tbsp pepper

Steps:

  • 1. Spray electric skillet with Pam and heat to medium.
  • 2. Remove chicken thighs from package and rinse them thoroughly in cold water. Pat dry with paper towel. (This is done so that it reduces popping caused by the hot grease once the chicken starts to cook and releases the oil from the chicken fat. Remember, oil and water do not mix!! If you have an oil fire ever, do not pour water on it. Either put flour on it or cover with a lid to starve it from oxygen, and remove from heat source).
  • 3. Place chicken thighs in skillet with the smooth skin pretty-side up. (Cook bottoms first, which also cooks the majority of the chicken as a whole).
  • 4. Sprinkle half of your salt and pepper all over tops of chicken thighs, using more or less according to your taste. Cover the skillet with your lid (important to cover!). (I use this time to start preparing the rest of the meal).
  • 5. Cook chicken for about 30 minutes (on the bottom side) then turn over, sprinkle salt and pepper on the other side and cook the remaining 30 minutes. If your chicken starts to look like it's getting too dark and it is done, take it out early. It typically takes me 1 hour total to cook this thoroughly (on medium heat in my electric skillet) but every skillet is different as far as heat goes. Do not serve if it is still pink or shows any sign of blood in the meat or near the inner bone. If it appears it is cooking too fast, turn your heat down. It is good to have a crispy skin, but not burned.
  • 6. Once chicken is done, take it out of the skillet and set it on a plate with a few paper towels underneath to drain the natural grease from the chicken.

DIXIE FRIED CHICKEN

Dixie Fried Chicken image

I think "Dixie Fry" boxed chicken breading makes the best coating for fried chicken. Why waste precious time salting and peppering flour? Marinating in canned chicken stock really brings out the chicken flavor, and I think chicken stock makes a better liquid to seal the breading with, than say plain water, or milk:

Categories     Chicken

Time 50m

Yield 4 serving(s)

Number Of Ingredients 4

6 -8 pieces frying chickens
1 packet Dixie Fry
1 -2 cup corn oil
1 -2 can chicken stock

Steps:

  • Pour canned Chicken Stock into wide shallow pan.
  • Marinate chicken in the chicken stock overnight in the refrigerator, or for two to three hours in fridge.
  • If using unsalted chicken stock, salt and pepper chicken on both sides, go easy on the salt, though.
  • Pour enough corn oil into electric skillet to come only 1/4 up the sides of skillet.
  • Set heat at 375-400.
  • Have electric skillet pre-heated before you begin to coat chicken.
  • Pour out 1 packet of Dixie Fry onto flat dish or pan.
  • Have another large flat pan ready to hold the just-coated chicken in.
  • Dredge the wet/marinated chicken in Dixie Fry, making sure the chicken is fully covered with coating, place in empty pan.
  • Shake off excess.
  • Once all chicken is coated, place all pieces of chicken in 400-420 electric skillet.
  • Make sure to keep the lid on while chicken fries, as this will seal in the flavors and juices.
  • Cook approximately 15-20 minutes on each side.
  • I like to use tongs to turn chicken.
  • Chicken should be golden brown when done.
  • Drain/cool on paper towels for at least 5 minutes.
  • Enjoy.

HOW TO FRY CHICKEN IN AN ELECTRIC SKILLET | EHOW

From ehow.com
  • Pat your chicken pieces dry with paper towels. Drying the pieces thoroughly will help the crust adhere to the meat.
  • Crack an egg into a shallow bowl and add 1 to 2 inches of milk. Whip the egg and milk together until they are thoroughly blended.
  • Fill a second shallow bowl with plain all-purpose flour. You can use breadcrumbs, but flour makes a more delicate crust because it absorbs less oil.
  • Dip your chicken pieces into the milk-and-egg mixture one at a time, holding each piece up for a few seconds to let the excess liquid drain off.
  • Roll the dipped chicken in the seasoned flour, patting the flour gently into place with your fingertips to help it stick. Dip the chicken back into the milk-and-egg mixture and roll it a second time for a thicker coating.
  • Fill your electric skillet with 2 to 3 inches of canola oil, vegetable oil or peanut oil. Chicken breasts with the bone in will require more oil than boneless breasts or tenders, but they do not have to be completely submerged to come out crisp and tender.
  • Heat the oil in your electric skillet to 350 degrees Fahrenheit. Add a few pieces of breaded chicken, being careful not to crowd the pan. Putting too many chicken pieces in at once can lower the temperature too much, resulting in soggy chicken.
  • Cook the chicken for 10 to 15 minutes, depending on how thick the pieces are. Boneless chicken tenders will cook much more quickly, so check the undersides after about 5 minutes.
  • Place the cooked chicken on a plate lined with a paper towel to drain. Place the plate in an oven heated to 200 F to keep it warm if you are cooking a crowd-sized batch.
