MERINGUE FROSTING FOR RASPBERRY WHITE CAKE



Meringue Frosting for Raspberry White Cake image

Use this recipe to make Raspberry White Cake. Since sugar can slow the rate at which egg whites foam, it must be added very gradually to form these glossy peaks of frosting.

Yield Makes About 6 Cups

Number Of Ingredients 3

1 1/4 cups sugar
1 1/2 tablespoons light corn syrup
5 large egg whites, room temperature

Steps:

  • Bring 1 cup plus 2 tablespoons sugar, the corn syrup, and 3 tablespoons water to a boil, stirring. Wash down side of pan with a wet pastry brush, and cook sugar syrup, without stirring, until a candy thermometer registers 230 degrees.
  • Meanwhile, beat egg whites with a mixer until soft peaks form. Gradually beat in remaining 2 tablespoons sugar.
  • Add sugar syrup in a slow, steady stream down side of bowl. Beat on high speed until thick, fluffy, and cool, about 7 minutes.

1C heavy cream or evaporated milk
5 squares Bakers Unsweetened Chocolate
1/2C butter
1t vanilla

Steps:

  • 1. Combine sugar and milk in heavy saucepan and bring to a boil while stirring constantly 2. reduce heat, simmering for 6 minutes without stirring 3. remove pan from heat 4. add chocolate and stir to blend 5. stir in butter and vanilla and stir to blend 6. chill until mixture begins to thicken. 7. use stand mixer to beat until thick and creamy

1/2 cup (1 stick) butter, at room temperature
3 cups powdered sugar
1/4 cup whole milk, at room temperature
1 teaspoon pure vanilla extract

Steps:

  • In a medium bowl, using an electric hand mixer, beat the butter until light and smooth. Beat in the powdered sugar, milk and vanilla until smooth and creamy.

1 cup evaporated milk or heavy cream
5 squares unsweetened chocolate
1/2 cup butter
1 teaspoon vanilla

Steps:

  • Combine sugar and milk in heavy saucepan bring to boil, stirring constantly. Reduce heat simmer six minutes without stirring remove from heat. Add chocolate stir to blend. Add butter and vanilla stir to blend. Chill until mixture begins to thicken, Beat until thick and creamy.
