ELLEN'S MACARONI AND CHEESE
Homemade Macaroni & Cheese which is creamy and delicious!

Steps:
- Grease the inside of a a large Corningware casserole container with butter stick
- Cook elbow macaroni for 1/2 the time specified on the noodle box. You will undercook the noodles in this step so they don't get overcooked when placed in the oven. For example, if the package says 5-7 minutes, take the lower time (5) and divide in half. In this case, you would boil for 2.5 minutes.
- Spread out each ingredient evenly from bottom to top: A.) Macaroni (bottom)B.) Cheese (Be very generous )C.) Flour (use sifter for best results)D.) Pepper E.) Dabs of of butter (top)
- Repeat above layer sequence until casserole dish is full.
- Set in fridge until ready to cook.
- When ready to cook, pour milk into casserole and fill 80-90% to top.
- Cook at 350 for 35-40 minutes. Top should be brown and crispy.

- Cook macaroni in boiling water until almost tender; drain. Meanwhile, in a Dutch oven, melt butter. Stir in the flour, salt, mustard, pepper and pepper sauce until smooth. Cook for 1 minute or until bubbly. Stir in the macaroni, milk and 4 cups cheese. , Transfer to an ungreased 13x9-in. baking dish. Cover and bake at 350° for 45-50 minutes or until bubbly. Uncover; sprinkle with the remaining cheese. Let stand for 5 minutes before serving.

- The night before, soak the cashew nuts in water and leave overnight.
- Heat the oven to 180C/160C fan/gas 4. Steam the carrots and potatoes together for 5 mins, until completely softened. Transfer to a food processor. Drain the cashews and add these with 60ml of the oil, then blitz to break down the nuts. Tip in the other ingredients - apart from the macaroni, breadcrumbs and the remaining oil - then blitz again until the mixture is smooth and season well. Add a splash of water and just a drizzle of olive oil if it looks too stiff, then set aside.
- Cook the macaroni in a large pan of salted water for 1 min less than packet instructions, drain then stir through the sauce. Transfer the mix to an ovenproof dish, stir the breadcrumbs with the remaining oil and some seasoning. Scatter over the top of the macaroni and bake for 20-25 mins until piping hot and crisp.

ELLEN'S FABULOUS PLAIN OLD MAC & CHEESE
This is the mac and cheese I have been making since Day One, meaning the day I learned to cook. The recipe most likely came from an old BH&G cookbook, because I don't remember my mother ever making mac and cheese. This has been a favorite in my family for years because it is so creamy throughout and crispy on top.

Steps:
- Cook macaroni according to package directions; drain and set aside.
- Melt butter in a medium saucepan over medium heat; blend in the flour, salt and pepper. Add milk gradually, stirring constantly until thickened and bubbly. Turn off heat.
- Add onion (optional) and 1-1/2 cups of the cheese. Stir until cheese is melted.
- Mix the cheese sauce with the drained macaroni in a separate large bowl until macaroni is completely coated with sauce. Turn mixture into a 2-qt. casserole dish which has been sprayed with cooking spray. Sprinkle remaining cheddar cheese over the top and bake in a preheated 350-degree oven, uncovered, for 45 minutes or until golden brown and bubbly.
- NOTE: For a creamier dish, use half-and-half instead of milk.
