ELEGANT CHICKEN

This is so easy! I use it when I'm having people over for dinner because it can easily be doubled to feed a large gathering or dinner party. Once you put it in the oven, you can forget about it for 2 hours and move on to something else. It's always a huge hit with our guests! Serve over rice and enjoy!

Ingredients

1 (2 ounce) package chipped beef
6 skinless, boneless chicken breast halves
1 pound sliced bacon
1 (10.75 ounce) can condensed cream of mushroom soup
1 (16 ounce) container sour cream
½ teaspoon paprika

Steps:

Preheat oven to 275 degrees F (135 degrees C).
Line the bottom of a 9x13 inch baking dish with slices of chipped beef. Wrap bacon slices around chicken breasts, and place on top of chipped beef. In a medium bowl, mix together condensed soup and sour cream. Pour sour cream mixture over chicken breasts, and sprinkle with paprika.
Bake in preheated oven for 2 hours.

Ingredients

4 chicken breasts
salt and pepper
1/2 cup margarine
1/2 cup sour cream
1/2 cup cooking sherry
1 (10 1/2 ounce) can cream of mushroom soup

Steps:

Season chicken with salt and pepper.
Brown in melted margarine.
Place in a shallow casserole.
Mix remaining ingredients in skillet and pour over chicken.
Cover and bake at 350* for 55-60 min, or until chicken juices run clear.

1 onion medium chopped
1 tablespoon butter or margarine
1 cup mushrooms sliced
2 cups chicken cubed cooked
2 cups bread crumbs soft
1 cup peas partially thawed
2 eggs large, lightly beaten
1 teaspoon sage dried, crushed
1/8 teaspoon garlic salt
1/8 teaspoon black pepper
1 (10 1/2-ounce) can cream of chicken soup condensed
1/4 teaspoon parsley dried
1/8 teaspoon paprika

Steps:

Preheat oven to 350°. Grease a 1 1/2 -quart baking dish.In a 10-inch skillet over medium heat, saute onion in butter or margarine for 6 minutes or until golden. Add mushrooms and saute for 2 minutes.In a large bowl, combine onion and mushrooms with chicken, bread crumbs, peas, eggs, sage, garlic salt and pepper, tossing lightly until mixed. Transfer to baking dish.Cover loosely with foil and bake for 40 minutes. Remove foil. Spread soup on top and sprinkle with parsley and paprika. Bake, uncovered, 20 minutes longer or until lightly browned.
