Steps:
- Preheat the broiler to high.
- Butter the halved muffins, place them in a single layer on a baking sheet and broil until golden, about 2 minutes.
- Meanwhile, make the tuna salad: In a large bowl, mix together the tuna, artichoke hearts, mayonnaise, olives, mustard, dill, hot sauce, celery, scallions and lemon zest. Season with salt and pepper.
- Top each muffin half with a large scoop of tuna salad, arrange 2 slices of cheese on each and broil until the cheese is melted, about 2 minutes. Remove and top with tomato slices and chives to serve.
ENGLISH MUFFIN TUNA MELTS
These classic tuna melts feature tuna salad on a toasted english muffin with melty provolone cheese on top for an easy dinner with things you probably already have in your pantry.

- Line your baking sheet with parchment paper or foil, for easy clean-up (optional). Place the halved English muffins cut-side-up on top. Preheat oven to 425 degrees F. Put the English muffins in the oven while it preheats, to toast them up a bit.
- Meanwhile, mix the tuna salad. In a medium bowl, mix canned tuna (flake apart with a fork first), diced celery, green onion, sweet relish (1 tablespoon), mayonnaise (½ cup), and salt and pepper to taste.
- Take the English muffins out of the oven. Spoon the tuna salad on top of each English muffin half evenly, pressing down on the top with the back of your spoon to pack it on a bit. Place a slice of cheese on top of each. Put back in the oven at 425 degrees F for about 10 minutes, until cheese is melted on top and starting to brown in places.
- Garnish with the remaining dark green sliced onions and serve.

TUNA MELTS ON ENGLISH MUFFINS
Steps:
- Preheat the oven to 450 degrees F (230 degrees C).
- Melt butter in a small frying pan over low heat. Add onion and garlic and saute over low heat until soft and translucent, 5 to 7 minutes. Stir in seafood seasoning, cilantro, onion powder, salt, and pepper. Remove from heat.
- Combine tuna and mayonnaise in a bowl. Add the sauteed mixture from the frying pan and blend well with a fork.
- Place all 6 halved English muffins on a cookie sheet. Spoon on tuna mixture, dividing it evenly between each muffin. Top each with a slice of tomato; add a slice of American cheese.
- Bake in the preheated oven until cheese is melted, about 5 minutes.

TUNA MELT
Steps:
- Preheat the broiler and set the rack about 4 to 5 inches from the heat source.
- Spread the bread out on a baking sheet and toast. Spread the toasted muffins or bread with the mayonnaise, if using. Top with the Tuna Salad and then the shredded cheese. Place the baking sheet under the broiler and heat for 3 to 5 minutes, until the cheese has melted. Serve immediately.
- In a small mixing bowl break up the tuna with a fork. Toss with the celery, onion, and parsley. Add the mayonnaise, mustard, and season with pepper to taste. Stir to combine. Add lemon juice, if using.
CHEESY TUNA MELTS
Steps:
- Preheat oven to broil.
- In a bowl, mix together tuna, celery, mayonnaise and salt. Spread tuna mixture onto the toasted muffin halves and place them on a baking sheet. Top each half with a slice of tomato and a slice of cheese.
- Broil until cheese is melted, about 3 to 5 minutes.
