SALT COD SALAD
Steps:
- Rinse the fish under cold running tap water and remove any skin or fish bones that are visible if necessary.
- Steam the salt cod for 6 to 8 minutes. I used my KitchenAid Cook Processor for that. If you don't have a steamer, you can use a pasta pan. Place the fish in the pasta basket, add some water to the pan, put a lid on it and then place the pan over medium-high heat for about 10 minutes.
- The salt cod should be flakey and cooked through in the end. Remove it from the steamer (or pasta basket) and then tear it into bite-size bits. Transfer the to a large mixing bowl.
- Chop the tomato into 4 bits and deseed it under cold running tap water. Let the tomato drain a bit on a clean kitchen towel and then chop it up finely. Then add the diced tomato to the salt cod in the bowl.
- Stir the fish and tomatoes carefully. Chop the fresh herbs finely and add them as well. Season the salad with a pinch of pepper and salt as well.
- Add the caper berries (or capers) and the lemon juice.
- Drizzle the salad with a good glug of the olive oil.
- Stir the salad gently. Then check the seasoning and add extra pepper, salt or lemon juice to taste if necessary. Place the cod salad in the fridge for another 30 minutes. Serve cold.

- Soak salted cod in cool water for 15 - 30 minutes. Drain and transfer cod to a pot. Cover with water and bring to a simmer on the stovetop. Change the water and bring it to a simmer 3 - 4 more times or until cod reaches desired saltiness. Drain, using a fork break up the cod and set aside.
- Saute onion in a skillet with 2 tablespoons of olive oil until soft and translucent.
- In a large bowl combine cod with onions and remaining ingredients. Toss until well combined. If the salad is too dry to your liking add more olive oil.
- Serve with rice or boiled yucca root drizzled with olive oil.

- Arrange cooked bananas, avocados, eggs in a large platter. In a saucepan, warm olive oil. Add onion, garlic, bay leaf, and 1 sprig parsley. Cook on low for about 3-5 minutes. Add vinegar. Remove from heat. Mix in bacalao. Place bacalao mix in center of platter surrounded with bananas, avocado and eggs. Sprinkle with red peppers and 2 sprigs Chinese parsley, chopped. Serve.

- Advance Prep: Soak the cod overnight, draining and rinsing several times to remove the extra salt. 1. Place in a pot of fresh water and cook at medium heat for 15-20 minutes. Drain and flake. Remove any bones. 2. In another pot with fresh water, place the potatoes, green plantains, yautía (malanga), or other root vegetables, add salt to taste, and boil until the vegetables are tender. Check for doneness, usually 10-12 minutes. Drain. 3. In a large dish, thoroughly layer the potatoes slices, half of the codfish, the vegetables, the rest of the codfish, and place the tomato slices on top. Add the onions, sprinkle the capers and add the egg wedges. 4. In a small bowl mix olive oil, vinegar, garlic, salt and black pepper. 5. Pour dressing mixture over codfish mixture and toss just enough to evenly coat. 6. Taste and re-season if necessary. Serve or refrigerate until ready to serve.
ENSALADA DE BACALAO (SALTED COD SALAD)

- First rinse the salt off the cod. If you have the time you can also let it soak for about 30 minutes. I usually don't have the time so I just give it a good rinse. Bring a large pot of water to a boil, drop your cod in let it boil for about 10 mins and then change the water. Repeat this step 3 times, changing the water each time. During the last boil add your eggs. boil for about 7 minutes, transfer to a bowl with some of the hot water and let it sit about another 5 minutes or until ready to peel and dice. Sweat onions into a hot skillet with 2 Tbs of olive oil. Cook the onion until they just begin to get opaque, do not cook them through, you want to maintain a bit of a crunch. Drain cod fish. Combine, onions, cod fish, tomatoes, olives, eggs and avocado in a large bowl. Drizzle with 3 Tbs of olive oil and toss, breaking up cod fish. Served over a bed of white rice. Keep the olive oil handy in case you want an extra drizzle.
