ERIK'S OATMEAL COOKIES

1/2 cup (1 stick) plus 5 Tbsp. butter, softened
3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 tsp. vanilla extract
1 tsp. ground nutmeg
1 tsp. ground cinnamon
1 tsp. baking soda
1 + 1/2 tsp. baking powder
1 + 1/2 cups all-purpose flour
2 + 1/2 cups Quaker Oats (quick or old fashioned, uncooked)
Optional: 1/2 cup raisins, currants or diced fresh apple
olive oil cooking spray

Steps:

  • Heat oven to 350 degrees. Lightly spray cookie sheets with cooking spray.
  • In a medium or large bowl, beat butter and sugars with an electric mixer for about 1 minute. Add the eggs, vanilla, nutmeg and cinnamon and beat until smooth and creamy, about 3 to 4 minutes. Beat in baking soda and baking powder.
  • Gradually add in the flour and beat again with the mixer until creamy and smooth. Cookie dough should be sticky and very soft.
  • Stir in the oats with a wooden spoon until well combined. Optional: here is when you can stir in raisins, currants, or diced apple.
  • Drop dough by rounded teaspoons onto a lightly greased cookie sheets.
  • BAKE for 8 to 10 minutes, or until golden brown. Cool on cookie sheets for 1 minute before removing. Store tightly in a container.
  • Yields: 5 dozen

These oatmeal cookies are very moist with a good flavor. Add a cup of raisins or nuts if you desire.

1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 ½ teaspoons ground cinnamon
3 cups quick cooking oats

Steps:

  • In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats. Cover, and chill dough for at least one hour.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. Flatten each cookie with a large fork dipped in sugar.
  • Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Crisco® Original No-Stick Cooking Spray
3/4 cup Crisco® All-Vegetable Shortening or 3/4 stick Crisco® All-Vegetable Shortening Sticks
1 1/4 cups firmly packed brown sugar
1 large egg
1/3 cup milk
1 1/2 tsps. vanilla extract
3 cups old-fashioned rolled oats
1 cup Pillsbury BEST® All Purpose Flour
1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. ground cinnamon
1/2 cup raisins
1/2 cup coarsely chopped walnuts

Steps:

  • HEAT oven to 350 degrees F. Coat baking sheets lightly with no-stick cooking spray.
  • COMBINE shortening, brown sugar, egg, milk and vanilla in bowl of electric mixer; beat at medium speed until well blended.
  • COMBINE oats, flour, baking soda, salt and cinnamon. Mix into shortening mixture at low speed just until blended. Stir in raisins and walnuts. Drop by rounded measuring tablespoonfuls of dough 2 inches apart onto prepared baking sheets.
  • BAKE 8 to 10 minutes or until lightly browned. Cool 2 minutes on baking sheets. Place on cooling racks to cool completely.

1 cup raisins
½ cup hot water
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups quick cooking oats
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 cup packed brown sugar
½ cup chopped walnuts
2 eggs
¾ cup vegetable oil
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Soak raisins in hot water and set aside.
  • In large bowl, sift flour with soda, salt and spices. Blend in rolled oats, sugar and nuts. In a separate bowl, beat eggs with fork and add oil, vanilla, and raisins and water mixture. Pour into dry ingredients, stirring until well mixed. Drop by teaspoonfuls about two inches apart onto ungreased cookie sheets.
  • Bake 10 to 13 minutes in the preheated oven, until the edges are golden.
