SIMPLE BEEF STEW
Simple and hearty beef stew I make for my family.

Steps:
- Heat oil in a large pot over medium-high heat. Add meat, flour, onion, and garlic; cook and stir until browned, 10 to 15 minutes.
- Add broth, tomatoes, potatoes, celery, and carrots, then stir in Creole seasoning and basil. Bring to a simmer. Reduce heat to maintain simmer and cook, uncovered, until potatoes are soft, meat is tender, and gravy is thick, about 1 hour.

EASY BEEF STEW
This is a very easy beef stew with few ingredients. There is lots of room for adjustments and additions. This is my creation.

Steps:
- make sure all the cubes of beef are cut down and that they are all the same size.
- Brown the meat in a deep pot - I used a 4.5 qt dutch oven.
- After all meat is browned add onion and garlic and saute them with the beef for about 5 minutes.
- Then add the gravy and chicken stock to the pot. You may use more of less chicken stock depending on the consistency you like.
- Add the bay leaves, thyme, salt and pepper.
- Turn the heat to low and simmer with the lid on for 45 minutes.
- After 45 minutes has past, add the diced potatoes and put the lid on and simmer for 1 hour. You can add more broth if the stew is too thick.
- At 1 hour and 45 minutes of cooking time, add the baby carrots. Put the lid back on and simmer for another 30 minutes.
- After 2 hours and 15 minutes, take out the bay leaves and serve with some fluffy rice.

QUICK AND EASY BEEF STEW
We don't eat red meat very often in our house, but every once in a while someone gets a craving for a hearty beef stew and some crusty Sourdough bread. This is my standby recipe.

Steps:
- In a medium mixing bowl put flour and teaspoon each salt and pepper, mix.
- Toss the beef cubes in the flour until coated.
- In a soup pot heat the olive oil over medium high heat until the oil blooms.
- Reserving the extra flour in the bowl, add the meat to the soup pot and cook until the meat is browned on all sides.
- Add carrot, onion, and potatoes to pot sprinkling the remaining flour over the veggies to coat.
- Mix the meat, veggies, and flour thoroughly and cook for 3-4 minutes, or until veggies start to soften.
- Add all three tins of beef broth and bring to a boil.
- Boil until veggies are tender, add the worcestershire sauce, season to taste with salt and pepper.

- Combine the uncooked meat, soups, water and tomato sauce in pot.
- Place pot in oven, uncovered and cook for 2 hours, at 325°F.
- Now add all your vegetables and seasonings, cover pot and cook for an additional hour or until the vegetables are tender.

REALLY EASY BEEF STEW
This is an extraordinarily easy recipe and so very good on a cold day. I found it in a Better Homes and Gardens Busy Woman's Cookbook that my mother has had for years. Adjust the seasonings to your preference. I've added oregano and garlic and it's turned out well.

- Cover with tomato soup, making sure all the pieces are covered.
- Bake at 325 degrees for 3 hours.

- Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Sprinkle beef with seasoned salt and pepper. Cook beef in skillet about 5 minutes, stirring frequently, until brown; drain.

- Brown and tenderize the stew meat.
- Chop the onion.
- Dice the potatoes.
- Place all the ingredients in the crockpot except the stew meat.
- Add 1/3 cup water.

EASY OVEN BEEF STEW

- Trim any fat from meat cubes; set aside. Mix flour and seasonings together in a bag, put the meat in the bag too and shake to coat meat with the flour mixture. Place coated meat and all remaining ingredients in a 3-4 quart casserole or dutch oven and mix.
- (TRUST ME - there will be enough liquid - do NOT add more than the canned tomatoes!).
- Cover and bake at 275 degrees for 4 hours or until meat is very tender. This recipe makes four very LARGE servings (or smaller with leftovers) and is a great company recipe especially for those who can't cook or are pressed for time. Turn on or pre-set your oven to come on at 2:00 and you will be serving at 6:00. Serve with crusty bread or rolls, a green salad and a good bottle of wine. So easy and so delicious! Bon appetite!
