PINEAPPLE HAM LOAF

I "inherited" this recipe from the family that owned the building where I rented my first apartment. It's one of my favorites and very easy to prepare. It's great for company because you can mix the loaf in advance, then simply pour on the sauce before putting it in the oven...it's the sauce that makes it so good!

2 large eggs
1/2 cup milk
1 cup finely crushed saltines
1/4 teaspoon pepper
1-1/2 pounds ground fully cooked ham
1 pound ground fresh pork
SAUCE:
1 cup packed brown sugar
1 teaspoon prepared mustard
1/3 cup vinegar
1/4 cup water
1 can (8 ounces) crushed pineapple, undrained

Steps:

  • In a large bowl, beat the eggs; add milk, crackers and pepper. Add the ham and pork; mix well. Shape into a 9x4-in. loaf and place in a shallow baking dish. In a small bowl, combine sauce ingredients; pour over loaf. Bake at 350° until thermometer registers 170°, about 1-1/2 hours, basting frequently.

I was looking for something for dinner and this caught my eye and so we had to try it. This is tender and very yummy. Make and excellent dish for a church brunch or pot luck. I got this recipe from The Best of Country Cooking 2002 Taste of Home.

2 eggs
1/2 cup milk
1 teaspoon Worcestershire sauce
3/4 cup dry breadcrumbs
1 1/2 teaspoons ground mustard, divided
1/4 teaspoon salt
1/4 teaspoon pepper
1 lb cooked ham, ground (about 4 cups)
1 lb ground pork
1 (20 ounce) can sliced pineapple
1/2 cup packed brown sugar

Steps:

  • In a bowl, combine eggs, milk, Worcestershire sauce, bread crumbs, 1 teaspoon mustard, salt and pepper. Add ham and pork mix well.
  • Shape into eight oval patties, set aside.
  • Drain pineapple, reserving 1/2 cup of juice. Place a pineapple slice between each ham patty. (Refrigerate remaining pineapple and juice for another use.) Carefully place in an ungreased 9 in x 5 in x 3 in loaf pan.
  • Pat patties around pineapple to form a loaf. Combine brown sugar, remaining mustard and reserved juice; pour a small amount over loaf. Bake, uncovered, at 350 degrees for 1 1/4 hours or until lightly browned and meat thermometer reads 160 degrees, basting occasionally with remaining juice mixture.

1 ½ pounds ground ham
1 ½ pounds ground pork
2 eggs, beaten
1 cup milk
¾ cup crushed saltine crackers
½ teaspoon salt
½ teaspoon ground black pepper
¾ cup brown sugar
¼ cup cider vinegar
1 teaspoon dry mustard
1 (8 ounce) can crushed pineapple, drained

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix ground ham, ground pork, eggs, milk, crackers, salt, and black pepper together in a bowl; form into a loaf. Transfer loaf to a loaf pan.
  • Mix brown sugar, cider vinegar, and dry mustard together; pour over the loaf.
  • Bake in preheated oven for 1 hour. Spread pineapple atop the loaf; continue baking until no longer pink in the center, about 45 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

2 1/2 pounds boneless cooked ham, sliced into 18 slices
Two 20-ounce cans pineapple slices
18 maraschino cherries
3/4 cup packed brown sugar
2 tablespoons apple juice
2 teaspoons Dijon mustard

Steps:

  • Preheat the oven to 400 degrees F.
  • Shingle the ham slices in 2 rows on a ceramic baking dish. Top each with a pineapple slice, then place a cherry in the middle of each pineapple ring. Cover with foil and bake for 15 minutes.
  • Whisk together the brown sugar, apple juice and mustard. Remove the ham from the oven, uncover and drizzle with the glaze. Continue to bake, glazing in 5-minute intervals, for an additional 20 to 25 minutes. Serve in the baking dish.

1 can (8 ounces) sliced pineapple
2 tablespoons beaten egg
2 tablespoons 2% milk
1/4 teaspoon Worcestershire sauce
3 tablespoons dry bread crumbs
1/4 teaspoon plus 1/8 teaspoon ground mustard, divided
Dash salt
Dash pepper
1/4 pound ground fully cooked ham (about 1 cup)
1/4 pound ground pork
1 tablespoon brown sugar

Steps:

  • Drain pineapple, reserving 1 tablespoon juice. Place a pineapple slice in two 10-oz. ramekins or custard cups coated with cooking spray; set aside. (Refrigerate remaining pineapple and juice for another use.), In a small bowl, combine the egg, milk, Worcestershire sauce, bread crumbs, 1/4 teaspoon mustard, salt and pepper. Crumble ham and pork over mixture and mix well. Gently press meat mixture into each ramekin., Combine the brown sugar, remaining mustard and reserved juice; spoon over each loaf. Bake, uncovered, at 350° for 35-40 minutes or until lightly browned and a thermometer reads 160°. Invert onto serving plates.

1 tablespoon grated orange rind

1/2 cup chopped pecans (optional)

Steps:

  • Cream butter, sugar and egg.
  • Add orange juice and rind and mix well.
  • Sift flour, baking soda, and salt.
  • Add to creamed mixture and then stir in pineapple and pecans.
  • Pour into a greased 9" by 5" loaf pan.
  • Let stand while oven heats to 350 degrees.
  • Bake for 45 minutes.

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
  • Sprinkle ham, pineapple and onions in pie plate. In medium bowl, stir Bisquick mix, milk, eggs and mustard until blended; pour over ham mixture.
  • Bake uncovered about 25 minutes or until knife inserted in center comes out clean. Sprinkle with cheese. Bake 3 to 4 minutes longer or until cheese is melted.
