OATMEAL COOKIES
Add your choice of chocolate chunks, golden raisins, or toffee pieces to the basic oatmeal-cookie recipe.

- Heat oven to 350 degrees. Combine the brown sugar, granulated sugar, and butter in an electric mixer fitted with the paddle attachment. Starting with the mixer on low speed and increasing until it is on medium, beat until the mixture is creamy and fluffy, about 5 minutes. Add the eggs and the vanilla extract, then scrape the sides of the bowl with a rubber spatula, and mix to combine.
- Combine the rolled oats, flour, baking soda, baking powder, and wheat germ in a large bowl, and stir to combine. Add the dry mixture to the butter mixture, then mix on low speed just to combine, 10 to 15 seconds. Remove the bowl from mixer stand, and stir in your choice of chocolate chunks, golden raisins, or toffee pieces.
- Line the baking pans with parchment paper. Use a large (2 1/2 ounce) or small (1 1/4 ounce) ice-cream scoop to form balls of dough. Place the balls of dough about 4 inches apart on baking pans. Bake until golden and just set, about 18 minutes for large cookies and 14 minutes for small cookies. Remove from oven; let cool on pan 4 to 5 minutes before transferring to a cooling rack.

- Preheat the oven to 375 degrees F.
- Cream the butter and sugars. Add the vanilla and eggs. Next, add the flour, baking soda and salt. Add in the granola and oatmeal. Fold in the apricots, cherries, pecans and raisins.
- With a cookie scoop or two spoons, drop onto cookie sheets and bake for 12 to 14 minutes. Cool on a rack. Eat, and feel unguilty because there's no chocolate in this cookie.
EVERYTHING OATMEAL COOKIES
This recipe made delicious chewy cookies. I know you can't really call cookies healthy but I did what I could to make them a little better. The flours and flax that I use can all be replaced with all purpose flour if you like. Anytime I use raisins I like to soak them for a few minutes in warm water. This plumps and softens them nicely. Just squeeze out the water when you are ready to add them.

Steps:
- Preheat oven to 350 degrees.
- Cream together Butter and Sugar.
- Add eggs and Vanilla. Mix thoroughly.
- Mix remaining ingredients in a separate bowl. Excluding the milk. Optional: Soak raisins in warm water for a few minutes while you mix dry ingredients to give them a chance to plump and soften. Squeeze out the water and mix them in with the dry ingredients.
- Combine Dry mix and Wet mix together and add milk.
- Roll into balls about 1.5 inches.
- Bake for 15 minutes, until bottoms are golden brown.

CUP OF EVERYTHING COOKIES
These are one of my family's favorites. There's something for everyone in these. I have worked in the school cafeteria for 8 years and we have used this recipe a lot. The kids love them.

- Cream together the butter and the sugars. Mix in the oil and the flour. Add in oatmeal, crispy rice cereal, coconut, nuts, vanilla, salt, baking soda, cream of tartar, eggs and chocolate chips. Mix until well blended.
- Drop by teaspoons or tablespoons on a greased cookie sheet. Bake at 350 degrees F (175 degrees C) for 10 - 15 minutes.

OATMEAL AND EVERYTHING COOKIES

- Heat oven to 350°F. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats, raisins, nuts, and chocolate chips; mix well. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Bake 8 to 10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

- Preheat oven to 350°F with a rack in center. Beat butter with both sugars, baking powder, baking soda, and salt on medium-high speed until light and creamy, about 2 minutes. Add eggs, one at a time, beating to combine after each addition.
- Beat in vanilla. Add flour and beat on low to combine. Beat in cereal, chocolate, pretzels, and toffee bits to combine, a few seconds.
- Scoop 1/4-cup balls of dough onto parchment-lined baking sheets, spaced 2 inches apart. Flatten each slightly. Press pieces of chocolate and pretzel and a few cereal flakes on top of each cookie.
- Bake 8 minutes, then remove from oven and bang sheets on counter or stove top. Return to oven and bake until cookies are barely set in centers and starting to brown on edges, 8 to 9 minutes more. Let cool on sheets 5 minutes, then transfer to wire racks and let cool completely. Store in an airtight container at room temperature up to 3 days, or freeze up to 1 month.
OATMEAL EVERYTHING COOKIES
I came up with this recipe when I looked through my baking drawer and saw small amounts of different cookie "add-ins". They travel well and were a big hit when I sent them to a soldier friend in Afghanistan.

- 2. Combine dry ingredients, add slowly to creamed mixture. Stir in fruits, chips and nuts.

I took the basic oatmeal cookie recipe (right off the Quaker box) and added everything I could find in the pantry: chocolate chips, raisins, even some peanut butter. Was out of vanilla, so added almond extract. Wonderful chewy crunch!
