CHOPPED THAI CHICKEN SALAD

2 boneless skinless chicken breasts
1 small head green or white cabbage (2 cups shredded)
1 ½ cups shredded carrot
1 cup of canned pineapple
½ cup fresh cilantro
½ cup green onions
½ cup chopped peanuts
Dressing
2 cloves garlic
3 bird's eye chili peppers (sub ½ teaspoon minced hot pepper)
2 tablespoons soy sauce
2 tablespoons vinegar
2 tablespoons sugar
1 tablespoon fresh lime juice
1 tablespoon oil
½ teaspoon fish sauce
¼ cup peanut butter
¼ cup water

Steps:

  • Bring a large pot of water to boil. Add the chicken breasts, cover, and cook for 15-20 minutes. When the chicken is done, remove from heat, drain water, let cool, and shred with two forks.
  • If using an air fryer to cook the chicken, set the temperature to 400 degrees and cook the chicken breasts for 16 to 18 minutes. Finely chop them when they are cooled.
  • Chop the cabbage into very thin pieces, like it would be for coleslaw. Peel and grate the carrots. Drain the canned pineapple. Roughly chop the cilantro and green onions. Toss the chicken and vegetables in a large bowl and keep chilled.
  • Make the dressing: Mince the garlic and chili peppers. Place garlic and peppers in a small mixing bowl with the soy sauce, vinegar, sugar, lime juice, oil, and fish sauce. Whisk until smooth. Add the peanut butter and water and whisk again until smooth and creamy.
  • Toss the salad with the dressing. Add the crushed peanuts. Serve chilled. Leftovers can be stored in the fridge for up to one day. For best results, keep the leftover salad and dressing separate until ready to serve.
  • Safe bowl on high for 1 minute.

1 1/2 cups shredded purple cabbage*
1 cup shredded carrots*
1 red bell pepper (diced)
1/2 cup diced cucumber
2 cups shredded chicken (from a rotisserie chicken or about 1 pound of boneless, skinless chicken breast or thighs)
1/2 cup roughly chopped cilantro
1/4 cup sliced green onions1/4 cup crushed peanuts (for garnish)
1/4 cup natural peanut butter
2 tablespoon coconut aminos
2 tablespoons water
1 tablespoon lime juice
2 teaspoons honey
1 teaspoon sesame oil
Pinch crushed red pepper flakes

Steps:

  • For the peanut dressing: blend all ingredients until smooth.
  • For the salad, add all ingredients but crushed peanuts to a large bowl and toss to combine, then drizzle the peanut dressing over top and toss again. Top with crushed peanuts and serve. If you are planning to eat later, leave the dressing on the side and pour it over when you are ready to eat so that the cabbage doesn't get soggy. This will last for 4-5 days in the refrigerator.

Steps:

  • In a jar add 1 tablespoon water, fish sauce, rice vinegar, lime juice, thai sweet chili sauce, 1 teaspoon grated garlic, and 1/2 teaspoon minced chile. Shake well and refrigerate until ready to serve.
  • In a large skillet over medium-high heat add vegetable oil and begin to brown chicken, breaking up meat using a wooden spoon. Add 2 grated garlic cloves,1 teaspoon chopped chile, sugar, and 1 tablespoon fish sauce. Sauté for about 3 to 4 minutes. Stir in 1/4 cup water and continue to cook for 3 to 4 more minutes. Add more fish sauce or season with salt if needed. Mix in chopped cilantro.
  • Serve salad in 4 bowls with romaine, cucumber, shredded carrots, and large spoonful of chicken; drizzle with salad dressing and top with scallions.

2 pounds boneless chicken breast
3 cups water
1 tablespoon kosher salt
2 stalks lemongrass, minced
1 tablespoon minced garlic
2 teaspoons Thai chili powder
3 tablespoons canola oil
4 stalks celery, finely chopped
2 red onions, finely chopped
2 tablespoons coarsely chopped fresh mint
1 tablespoon coarsely chopped Thai basil leaves or regular fresh basil
1 tablespoon coarsely chopped cilantro leaves
1 teaspoon honey
2 tablespoons lime juice
1 head romaine lettuce, washed and chopped* see note

Steps:

  • Place chicken breast into a 2 quart saucepan with water (the water should cover the chicken breasts), the kosher salt and half of the lemongrass. Bring to a boil and lower to a simmer for 20 minutes. Remove chicken and cool completely. When cooled chop into 1/2 inch cubes and reserve in refrigerator.
  • Saute garlic, remaining lemongrass and chili powder in oil for 3 minutes. Remove from heat and cool completely. Next, toss together the celery, onions, mint, basil and cilantro. Combine chicken with sauteed garlic mixture and the salad components, Add salt, lime juice and honey to taste and place on the lettuce to serve.
