AUTHENTIC THAI STEAK SALAD



Authentic Thai Steak Salad image

An authentic Thai recipe. It was given to me by a family friend who was born in Thailand, but raised in the US when her parents immigrated.

½ teaspoon ground black pepper
¼ teaspoon kosher salt
1 (1 1/2-pound) flank steak
¼ cup fresh lime juice
2 tablespoons soy sauce
1 tablespoon brown sugar
1 tablespoon fish sauce
2 teaspoons minced garlic
1 teaspoon chile-garlic sauce (such as Sriracha®)
2 heads romaine lettuce
⅓ cup fresh mint leaves
⅓ cup fresh cilantro leaves
⅓ cup fresh Thai basil leaves

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Sprinkle pepper and salt onto flank steak.
  • Cook steak on preheated grill until desired doneness is reached, 5 to 6 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).
  • Whisk lime juice, soy sauce, brown sugar, fish sauce, garlic, and chile-garlic sauce together in a bowl.
  • Mix romaine lettuce, mint, cilantro, and basil together in a bowl; spoon about 6 tablespoons lime juice mixture over romaine mixture. Toss to coat.
  • Cut steak into strips and place strips into remaining lime juice mixture; let sit for steak to marinate, 1 to 2 minutes. Place steak on romaine mixture.

•1/2 cup vegetable oil
•1 stalk lemongrass, tough outer leaves removed, bottom four inches only, sliced as thinly as possible into rounds
•Kosher salt
•2 flat iron, flank, skirt, or hanger steaks, about 12 ounces total
•Ground white or black pepper
•3 medium cloves garlic
•2 teaspoons Thai red pepper flakes (more or less to taste, see note above)
•1 small green thai chili or 1/2 small Serrano chili, finely chopped
•1 tablespoon brown sugar (more or less to taste)
•1 tablespoon fish sauce (more or less to taste)
•1 tablespoon juice from 1 lime (more or less to taste)
•1 pint cherry tomatoes, sliced in half lengthwise
•1/2 small red onion, thinly sliced
•1 cup roughly chopped fresh mint leaves
•1 cup roughly chopped fresh basil leaves

Steps:

  • 1.Combine vegetable oil and lemongrass in a small skillet and place over medium heat. Cook, stirring frequently, until lemongrass is golden brown and crisp, about 6 minutes. Strain through a fine mesh strainer set in a small saucepan. Transfer crisp lemongrass to a paper towel-lined plate and season with salt. Set aside. 2.Season steak generously with salt and pepper. Transfer 2 teaspoons of reserved lemongrass oil to a large cast iron or stainless steel skillet (reserve remaining lemongrass oil for another use or discard, see note above). Heat over high heat until lightly smoking. Cook steak, turning frequently, until well browned and an instant read thermometer inserted into the center registers 125°F for medium, 3 to 8 minutes total depending on thickness (see note above). Transfer steak to a cutting board and set aside. 3.Combine garlic, pepper flakes, and Thai chilies in a mortar and pestle and pound into a fine paste (see note above). Add sugar, fish sauce, and lime juice, and pound until the sugar is dissolved. Taste dressing and add more sugar, fish sauce, lime juice, or pepper flakes to taste. It should be strongly spicy, sweet, salty, and acidic. 4.Thinly slice steak against the grain and transfer to a large bowl along with any juices that have accumulated on the cutting board. Add fried lemongrass, tomatoes, onion, mint, basil, and dressing. Toss to combine. Serve immediately.

1 (5 ounce) package prewashed fresh herbs and greens lettuce mix
1 ripe mango, sliced
1 small ripe avocado, sliced
½ cup shredded carrot
½ cup diced red and/or yellow bell pepper
½ teaspoon coarse sea salt
2 tablespoons dry roasted peanuts, chopped
Lime wedges
3 tablespoons agave nectar or honey
2 tablespoons creamy or chunky natural peanut butter
2 tablespoons hot water
1 tablespoon reduced-sodium soy sauce
1 tablespoon rice or white vinegar
1 teaspoon sesame oil

Steps:

  • Place beef steak on grid over medium, ash-covered coals. Grill, covered, 11 to 15 minutes (over medium heat on preheated gas grill, 13 to 16 minutes) for medium rare (145 degrees F) to medium (160 degrees F) doneness, turning occasionally.
  • Meanwhile, whisk all Dressing ingredients in medium bowl until smooth; set aside. Arrange lettuce on serving platter; arrange mango, avocado, carrot and bell pepper over lettuce.
  • Carve steak into slices; season with salt. Arrange beef over salad. Drizzle with dressing. Sprinkle with peanuts, if desired. Serve immediately; squeeze lime wedges over salad, as desired.

2 medium limes
1 bunch fresh cilantro leaves, stems removed (about 2 cups)
1 cup sugar
1 Thai red chile pepper, seeded and chopped
2 garlic cloves, halved
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups canola oil
1 head Chinese or napa cabbage, finely shredded
1 small head red cabbage, finely shredded
1 English cucumber, chopped
1 package (10 ounces) frozen shelled edamame, thawed
2 medium ripe avocados, peeled and cubed
1 cup shredded carrots
3 green onions, sliced

Steps:

  • Finely grate enough zest from limes to measure 1 tablespoon. Cut limes crosswise in half; squeeze juice from limes. Place zest and juice in a blender; add cilantro, sugar, red chile pepper, garlic, salt and pepper. While processing, gradually add oil in a steady stream., In a large bowl, combine cabbages, cucumber, edamame, avocados, carrots and green onions. Drizzle with dressing; toss to coat.

This delicious marinated steak salad will compete with anything you get at a Thai restaurant.

1/4 cup freshly squeezed lime juice
1 tablespoon soy sauce
1 tablespoon sugar
1/4 to 1/2 teaspoon red-pepper flakes
3 tablespoons vegetable oil
2 boneless rib-eye steaks (each 8 ounces and 3/4 inch thick)
Coarse salt and ground pepper
1/2 pound carrots (3 to 4 medium)
1 medium head romaine lettuce, cut crosswise into 1-inch ribbons
1/2 cup fresh mint leaves
1 cup fresh bean sprouts (optional)
1/3 cup salted peanuts, chopped (optional)

Steps:

  • Make marinade: In a medium bowl or liquid measuring cup, whisk together lime juice, soy sauce, sugar, red-pepper flakes, and oil. Season steaks with salt and pepper; place in a baking dish. Pour 1/4 of marinade over steaks (reserve remaining marinade); turn steaks to coat. Let steaks marinate up to 30 minutes.
  • In a large skillet, cook steaks on medium-high heat, turning once, 2 to 3 minutes per side for medium-rare. Transfer to a cutting board; tent loosely with aluminum foil, and let rest, 5 to 10 minutes. Slice steaks across the grain into 1/4-inch-thick slices; halve slices crosswise. Transfer to a large bowl, and toss with reserved marinade.
  • With a vegetable peeler, cut carrots into long ribbons. Add to steak in bowl, along with lettuce and mint; toss to combine. Divide salad among 4 shallow bowls. Sprinkle with bean sprouts and peanuts, if desired.
