Time 1h5m

Number Of Ingredients 14

2 tbsp unsalted butter (or margarine such as Stork)
450 g (1 lb) apples, I used Granny Smith ((5 large or 6 medium apples))
65 g (⅓ cup) light soft brown sugar (increase if apples are not sweet)
1 tsp ground cinnamon
½ tbsp butter to grease baking dish ((or as needed))
200 g (1 ¾ cups) flour ((plain / all purpose))
200 g (1 cup) caster sugar
1 tbsp baking powder
180 g (¾ cup) softened unsalted butter (or margarine such as Stork)
3 eggs (room temperature)
60 ml (¼ cup) milk (room temperature)
2 tsp vanilla bean paste (or vanilla extract)
2 tbsp flaked almonds (OPTIONAL)
custard or vanilla ice cream

Steps:

  • Preheat the oven to 180 C (350F) or 160C (325F) Fan Setting. Peel and core the apples then slice into small pieces. Heat the butter in a small saucepan and add the apples, cinnamon and brown sugar.
  • Cook over low heat, stirring occasionally, for about 10 minutes or until the apples have softened. If you prefer the apples to be really soft then cook them for longer. Set aside to cool down while you prepare the sponge batter.
  • Sift the baking powder, flour and caster sugar into a mixing bowl (or the bowl of your stand mixer).
  • Add the softened butter, eggs, milk and vanilla extract. Start mixing on a low speed setting and gradually increase the speed to maximum until the batter is smooth. Use a spatula to scrape the bottom and sides of the bowl to make sure everything is well mixed.
  • Grease a deep baking dish (I used a glass Pyrex dish measuring 8x11 inches) with butter. Spread the apples on the bottom of the dish.
  • Pour the sponge over the apples and spread it evenly using a spatula (gently so as not dislodge the apples).
  • Scatter some flaked almonds over the sponge (this is entirely optional - I just like the look of it) and bake in a preheated oven for 45-50 minutes until golden and risen.
  • Cool slightly then serve warm with vanilla custard or ice cream. This recipe serves six very generously or you can stretch it to feed eight if you cut smaller slices.

BAKED APPLE AND ALMOND PUDDING

Baked Apple and Almond Pudding image

Since this recipe was given to me many years ago by the proprietor of the Sign of the Angel in Lacock, it has become really popular with readers, as I know from their many letters.

Yield Serves 4-6. Scroll to the bottom of the Method to see questions Lindsey has answered on this recipe

Number Of Ingredients 6

1 lb (450 g) Bramley cooking apples, peeled, cored and sliced
4 oz (110 g) ground almonds
2 oz (50 g) soft brown sugar
4 oz (110 g) butter, at room temperature
4 oz (110 g) golden caster sugar
2 large eggs, beaten

Steps:

  • Place the apples in a saucepan with the brown sugar and approximately 2 tablespoons of water, simmer gently until soft, and then arrange them in the bottom of the prepared baking dish. In a mixing bowl, cream the butter and caster sugar until pale and fluffy and then beat in the eggs a little at a time. When all the egg is in, carefully and lightly fold in the ground almonds. Now spread this mixture over the apples, and even out the surface with the back of a tablespoon. Then bake on a highish shelf in the oven for exactly 1 hour. This pudding is equally good served warm or cold - either way, it's nice with some chilled pouring cream. Once cooled, it will keep in the fridge for 3 or 4 days.

EVE'S PUDDING

Eve's pudding image

Eve's pudding is a deliciously comforting combination of stewed apples and sponge. Serve with plenty of custard or cream.

Provided by BBC Food

Categories     Desserts

Yield Serves 4

Number Of Ingredients 10

2 large cooking apples (about 500g/1lb2oz in total)
1 tbsp lemon juice
20g/¾oz butter
2 tbsp caster sugar
75g/3oz butter
100g/3½oz caster sugar
100g/3½oz self-raising flour
2 free-range eggs, lightly beaten
1 tbsp boiling water
cream or custard

Steps:

  • Preheat the oven to 180C/160C Fan/Gas 4.
  • Peel, core and roughly chop the apples. Add the apples to a saucepan with the lemon juice and 2 tablespoons water. Stir, cover and cook briskly for five minutes until the apples are soft.
  • Add the butter and caster sugar and stir. Then transfer to a 900ml/1½ pint capacity ceramic gratin dish, about 5cm/2in deep. Leave to cool while you prepare the topping.
  • For the topping, cream together the butter and caster sugar until fluffy and light.
  • Fold the flour and egg in alternate spoonfuls into the sugar mixture until blended, being careful to keep folding rather than stirring energetically - this will keep air in the mixture and fold in. Add a spoonful of boiling water to the mix.
  • Spoon the mixture over the apples. Cook in the oven for 30-35 minutes or until the topping is puffy and golden. Serve with cream or custard.

  • Strawberry Fool (Strawberries and Cream) Brits love strawberries and cream. They put it on everything! It might have something to do with the fact that summer is so short-lived that they like to make the most of it.
  • Jam Roly Poly. Many British puddings consist of some type of cake or sponge served in a bowl of warm custard. A few rogues prefer ice cream, but there’s nothing like a big bowl of vanilla custard.
  • Knickerbocker Glory. There’s nothing like a day at the seaside followed by fish ‘n’ chips and a Knickerbocker glory. This traditional ice cream sundae is best served in a tall glass with a nice long spoon.
  • Syllabub. This mixture of dairy and alcohol might not sound (or look) appetizing, but the flavors are quite pleasant. If a white Russian works, why not this?
  • Banoffee Pie Recipe. If I could only eat one pie for the rest of my life, it would be Banoffee pie. The Brits use a digestive biscuit base, which is similar, but a little less sweet than graham crackers.
  • Sticky Toffee Pudding. This decadent pudding is made using boiled and pureed dates with brown sugar sponge cake. But the real star is the sauce. This recipe adds in a touch of brandy, but you could use rum or bourbon, too.
  • Classic English Eton Mess. My favorite thing about an Eaton mess is in the name: mess! You need not stress about getting your meringue perfect (or even making it yourself).
  • Bread and Butter Pudding. This dish came about when frugal homemakers were looking for a way to use up leftover bread. By soaking the stale bread in sweet custard before baking, it soaks in all the flavor and comes out tender and incredible.
  • Cranachan: A Traditional Scottish Dessert. This Scottish version of a strawberry fool uses raspberries instead and throws in some whiskey for good measure.
  • Traditional Treacle Tart. You will see a few staples in almost every British restaurant, and treacle tart is one of them. Made using Golden Syrup, there really is no adequate substitution.

  • Split open the vanilla bean and place in a small pot along with the milk. Heat over medium low heat, meanwhile, prepare the rest of the custard.
  • When the milk begins to simmer, remove the vanilla bean and pour about half a cup of hot milk into the egg mixture, whisking quickly. Add the rest of the milk, then whisk and return to the pot.
  • Heat over medium heat and continue stirring, taking care that the custard doesn't stick or burn, using a wooden spoon is best at this point (the photo below is before I switched to the wooden spoon)! Add the vanilla extract if not using the vanilla bean. Continue to stir until the custard begins to thicken.
