FRENCH TOAST STICKS
I never liked French toast, but these sticks are the best. No need to have syrup or anything, they are good as-is.

- Mix eggs, powdered sugar, milk, maple syrup, brown sugar, and cinnamon together in a bowl with a fork until well blended. Dip each bread stick into the egg mixture.
- Coat a skillet with nonstick spray and heat over medium heat. Place sticks in the hot skillet and cook until brown, 2 to 3 minutes; turn over and cook until browned on other side, 2 to 3 minutes more. Repeat with the second batch.

- Cut each slice of bread into 3 strips. Place bread strips in rectangular baking dish, 13x9x2 inches.
- Beat eggs and milk in medium bowl with eggbeater or fork until foamy. Pour over bread. Turn bread over, using pancake turner, to coat other side.
- Place cereal in resealable plastic food-storage bag; seal bag. Crush cereal with rolling pin or saucepan. Place crushed cereal in pie plate or shallow dish.
- Melt butter in 12-inch skillet over medium heat; tilt skillet so butter covers bottom.
- Remove bread strips from egg mixture, and dip into crushed cereal. Turn bread strips over, using pancake turner, to coat other side.
- Cook cereal-coated bread in butter about 4 minutes or until bottoms are golden brown. Turn bread over. Cook other sides about 4 minutes or until bottoms are golden brown. Serve with syrup.

CRUNCHY FRENCH TOAST STICKS

- Crack the eggs into a pie plate. Add the half-and-half, vanilla, 1/4 cup of the granulated sugar and 1/2 teaspoon of the cinnamon. Whisk lightly until combined; set aside.
- In a separate pie plate, stir together the panko breadcrumbs, crushed cereal and remaining 1/4 cup granulated sugar and 1/2 teaspoon cinnamon. Use a fork to stir in the melted butter so that the crumbs are slightly moist. Crack up at the madness that is in this dish, then set it aside.
- One by one, quickly dunk the bread strips in the egg mixture, turning to coat. Then lay them in the dish with the crumb mixture, turning them over, sprinkling and pressing so the crumbs totally cover the surface. Place the sticks on a rack set in a baking sheet. Flash-freeze for 30 minutes to set the surface.
- Transfer the sticks to zipper bags for storage in the freezer. I do smaller bags of 6 to 8 sticks each, but you can do larger batches if you prefer!
- To bake them from frozen state, preheat the oven to 425 degrees F. Line a pan with frozen sticks and bake until golden brown around the edges, 15 to 18 minutes. Sprinkle with powdered sugar. Serve with warm pancake syrup for dipping and fruit to make you feel good about life!

- In a medium bowl whisk together eggs, milk, white sugar and cinnamon. Dip the sliced French bread into the egg mixture and fry in a medium heat skillet. Use enough oil to brown the bread nicely. While the toast is cooking mix the cream cheese, powdered sugar, sour cream, vanilla and cool whip. Use a hand mixer to blend until smooth, yet firm. Top the finished French toast with the cream cheese frosting on each slice. You may also top with fresh raspberries or strawberries. This recipe may be altered by using fat free milk, cream cheese, sour cream and cool whip.

- Prepare a pan on the stove with about a 1/4 inch layer of the oil on medium heat.
- Mix all dry ingredients in a large bowl.
- Add eggs and milk and mix well, consistency should be a very thin pancake or crepe batter.
- Cut toast in half diagonally to form triangles.
- Dip pieces of toast and allow to soak for about ten seconds. This is very important!
- SLOWLY lower into oil to avoid splashing. When edges turn golden brown, turn over with a slotted spatula and finish cooking. Remove to a plate or platter. Add more oil as needed.
- You can hold these in a warm oven to serve all at once or serve as they finish. Dust with the powdered sugar and serve with syrup and butter or your favorite fruit topping or compote.

- In a medium bowl, whisk together the eggs, milk, 2 tablespoons of sugar, and cinnamon. Melt one tablespoon of butter in a large skillet over medium heat. Dip a few bread slices into the egg mixture just to coat. Place in the hot skillet, and cook until golden on each side, about 4 minutes per side. Repeat with remaining slices of bread. Melt 1 tablespoon of butter in the skillet before frying each batch of toast.
- While the toast is cooking, mix cream cheese, 2 tablespoons of sugar, sour cream, and whipped topping using an electric mixer or blender until smooth, yet firm.
