SNAPPY STROGANOFF

- Bring a pot of salted water to a boil. Add the noodles and cook according to the package directions. Drain and toss with 2 tablespoons of the butter and 1 tablespoon of the parsley. Keep warm.
- Meanwhile, melt the remaining 2 tablespoons butter over medium-high heat in an extra-large skillet. Add the beef, season with the paprika and some salt and pepper and cook until browned on all sides but still pink in the middle, 2 to 3 minutes. Remove from the skillet and set aside.
- Add the mushrooms, onions and thyme to the skillet and season with salt and pepper. Cook until beginning to soften, 2 to 3 minutes. Add the hot stock and wine and cook for a minute until it reduces. Lower the heat and stir in the heavy cream and mustard. Add the beef back in, along with any juices on the plate. Cook for 1 minute so the beef is heated through. Turn off the heat and stir in the sour cream. Taste and adjust the seasoning.
- Serve over the buttered noodles and garnish with the remaining parsley.
BEEF STROGANOFF

Steps:
- Heat 1 tbsp olive oil in a non-stick frying pan then add 1 sliced onion and cook on a medium heat until completely softened, around 15 mins, adding a little splash of water if it starts to stick.
- Crush in 1 garlic clove and cook for 2-3 mins more, then add 1 tbsp butter.
- Once the butter is foaming a little, add 250g sliced mushrooms and cook for around 5 mins until completely softened.
- Season everything well, then tip onto a plate.
- Tip 1 tbsp plain flour into a bowl with a big pinch of salt and pepper, then toss 500g sliced fillet steak in the seasoned flour.
- Add the steak pieces to the pan, splashing in a little oil if the pan looks dry, and fry for 3-4 mins, until well coloured.
- Tip the onions and mushrooms back into the pan. Whisk 150g crème fraîche, 1 tsp English mustard and 100ml beef stock together, then stir into the pan.
- Cook over a medium heat for around 5 mins.
- Scatter with some chopped parsley, and serve with pappardelle or rice.

- Cut beef across grain into about 1 1/2x1/2-inch strips.
- Cook mushrooms, onions and garlic in butter in 10-inch skillet over medium heat, stirring occasionally, until onions are tender; remove from skillet.
- Cook beef in same skillet until brown. Stir in 1 cup of the broth, the salt and Worcestershire sauce. Heat to boiling; reduce heat. Cover and simmer 15 minutes.

- Bring a large pot of water to a boil. Cook egg noodles in boiling water until done, about 8 minutes. Drain.
- Meanwhile, prepare the sauce. In a large skillet, cook mushrooms and onions in 2 tablespoons of butter over medium heat until soft; remove from pan.
- Using the same pan, melt remaining butter. Cook ground beef in melted butter until browned. Mix in flour. Stir in beef broth, and cook until slightly thickened. - Add olive to a large pan over medium heat. Once the oil begins to shimmer, add the mushrooms and cook until tender, 5 to 6 minutes. Transfer the mushrooms to a plate.
- In the same pan, add the butter. Add the onion, ground beef, and garlic powder. Stir until the meat is browned, breaking it up as you stir.
- Drain any excess fat and return the pan to the stove.
- Add the flour and paprika. Stir until thick, about 1 to 2 minutes.
- Add the sherry, and stir, scraping up any brown bits from the bottom of the pan.
- Add the beef broth and bring the mixture to a boil.
- Add the egg noodles, salt, and pepper. Reduce the heat to simmer. Cover the pan with a lid.
- Stir often, until the noodles are tender, about 8 to 10 minutes.
- Return the mushrooms to the pan and stir to combine.
- Add the sour cream and stir. Top with chopped parsley.

(FAKE) CRAB STROGANOFF
Our son always loved this recipe. He never knew it was made with you-know-what, FAKE crab, until after he worked on a crab boat a few years ago! Of course, you can always use real crab. It's easy to put together and with a salad it makes a nice meal. I always make it with lowfat sour cream, lowfat soup, and I just use butter flavored cooking spray to replace the butter. When done this way it cuts out almost all the fat, and it's still good.

- Combine 1/2 cup flour and 1/4 teaspoon pepper in a large bowl. Add beef, a few pieces at a time, and turn to coat., In a large nonstick skillet, heat oil over medium-high heat. Quick, easy, delicious, and probably uses ingredients you have on hand. This is a vegetarian recipe, but you can add group beef, turkey, or even shrimp and it would be delicious. I like serving this over curly pasta, but any noodle would work. if sauce is too think, you can add 1/4c pasta water or milk

- heat oil.
- brown mushrooms halfway. thick sliced or quartered mushrooms are better.
- add garlic, onion, bell pepper- cook about 7 minutes until they start to sweat.
- add can of cream of mushroom soup and sour cream.
- stir.
- reduce heat to a simmer, let cook about 10 minutes, stirring occasionally.
- if sauce is too think, add some milk or water to thin it out.
- add salt and pepper to taste.
- toss with warm pasta.
- sauce will thicken as it cools. sauce should be thick.
- sauce is better the next day ;).
