flour tortillas (6-10 inches in diameter; 8" recommended for meal-size taco bowls, 10" recommended for salad, 6" recommended for appetizers)

Steps:

  • Preheat oven to 375 degrees. If tortillas are not soft and pliable, wrap them in a slightly dampened dish towel and microwave 20-30 seconds, just until soft. Mold tortillas into bowl shapes using one of these methods:1. tortilla shell maker molds (available at Amazon.com) -- press tortillas inside forms, bake for 14-16 minutes or until evenly browned.2. oven proof bowl -- coat inside with cooking spray; press tortilla inside bowl; bake for 14-16 minutes or until evenly browned3. inverted oven proof bowl -- coat outside of bowl with cooking spray; press tortilla around outside of bowl; bake for 14-16 minutes or until evenly browned4. inverted canning jars -- coat outside of jars with cooking spray; press tortillas around outside of jar; bake for 14-16 minutes or until evenly browned.5. regular muffin tins -- cut 10" tortillas into quarters. Press tortilla pieces inside muffin tins; bake for 12-15 minutes or until evenly browned.6. mini muffin tins (appetizer size) -- cut 6" tortillas into quarters. 1 onion, diced
1 jalapeño, diced
3 cloves garlic, chopped
3 chicken breasts
1 can black beans, drained
1 can corn, drained
1 can diced tomato
1 can red enchilada sauce
4 cups chicken stock
½ teaspoon dried oregano
½ teaspoon ground pepper
1 teaspoon cumin
1 teaspoon salt
1 pack large flour tortilla
vegetable oil, for frying
fresh cilantro
monterey jack cheese
lime, wedged
avocado, sliced

Steps:

  • Place diced onion, jalapeno and garlic in the bottom of a slow cooker.
  • Place the chicken breasts on top of the veggies.
  • Add all canned ingredients and seasonings to the chicken in the slow cooker. Top with the chicken stock.
  • Set slow cooker to high and cook for 3 hours.
  • Fill a large pot ⅔ full with vegetable oil and heat until it reaches 350°F (180°C).
  • Carefully place the tortilla on top of the oil and gently press the tortilla down with a ladle. Fry tortilla until golden brown. Drain on a cooling rack.
  • When soup is done, remove chicken and dice it on a cutting board. Return diced chicken to the soup.
  • Place fried tortilla bowl in a soup bowl and fill it with the soup.
  • Top it off with cheese, avocado, cilantro and garnish with a lime wedge.
  • Enjoy!!

These tortilla bowls are baked, not fried. They're crispy and not as greasy as the deep-fried ones. Just be careful not to burn them trying to get the inside bottom crispy.

2 (8 inch) flour tortillas
1 tablespoon vegetable oil
2 oven-safe ramekins, about 4 inches in diameter
Aluminum foil

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Brush both sides of tortilla with oil.
  • Invert ramekin on a work surface; center tortilla on the bottom of the ramekin. Gently shape the tortilla down around the sides. Place a double layer of aluminum foil over the tortilla and press to form the bowl around the ramekin. Place right side up on a baking sheet and leave about 1/2 inch of the edge of the tortilla above the foil so it gets browned and crispy when you bake it. Repeat with the second tortilla.
  • Place baking sheet in preheated oven for 5 minutes. Remove sheet from oven and use tongs to carefully remove the ramekins from inside the shells. Transfer sheet back to the oven. Bake shells until lightly browned, about 5 minutes. Remove baking sheet from oven.
  • Carefully remove foil from around the shells; reserve the foil. Flatten foil sheets and invert shells on them. Bring foil up just around the bottom of the shells to protect the top edge.
  • Transfer sheet back to the oven. Bake until browned and crispy, 8 to 10 minutes. Remove sheet from oven and invert the shells once again so they are right side up. Place on foil and transfer sheet back to oven for the final crisping, 3 to 5 minutes. Watch them carefully so they don't burn.
  • Remove sheet from oven; transfer basket burritos to a rack to cool completely.

4 teaspoons vegetable oil
4 large flour tortillas
2 romaine lettuce hearts
2 tomatoes
½ red onion
2 avocados
1 cup corn, canned, rinsed and drained
1 cup black beans, canned, rinsed and drained
¼ cup olive oil
¼ cup lime juice
1 clove garlic, minced
⅛ teaspoon cumin
½ teaspoon red pepper flakes
3 tablespoons fresh cilantro, chopped
½ teaspoon salt
½ teaspoon pepper

Steps:

  • Preheat the oven to 350°F (180°C).
  • Pour the vegetable oil (1 teaspoon per bowl) into medium (1.2 quart) oven-proof bowls and rub around to coat the surface. Press each tortilla into a greased bowl.
  • Bake for about 10 minutes, until golden brown. Let the tortilla bowls cool.
  • Make 3 cuts lengthwise on each of the romaine hearts, remove the stems, and chop into smaller pieces. Rinse, drain, and place in a large salad bowl.
  • Dice the tomatoes and add them to the bowl with the romaine.
  • Dice the onion and add it to the salad.
  • Cut the avocados in half, remove the pits, and dice. Add to the salad.
  • Add the corn and black beans.
  • In a small bowl or liquid measuring cup, combine the olive oil, lime juice, garlic, cumin, red pepper flakes, cilantro, salt, and pepper. Mix well.
  • Pour the dressing over the salad and toss well.
  • Fill each tortilla bowl with the salad.
  • Enjoy!

I found this method of making tortilla bowls for Mexican salads in Company's Coming Greatist Hits Mexican. Make as many as you need. If using corn tortillas, use the microwave method as they tend to crack in the oven.

1 corn tortillas or 1 flour tortilla
1 teaspoon vegetable oil

Steps:

  • Microwave Oven Method:.
  • Lightly grease bottom and outside of a 2 cup microwave-safe liquid measure measuring cup.
  • Turn measuring cup upside-down and press tortilla over bottom and sides.
  • Microwave on high (100%) for 1 minute.
  • Using clean oven mitts, again press tortilla around measuring cup and microwave on high for another minute until brown spots begin to appear.
  • If necessary, press tortilla against measuring cup again.
  • Turn out onto rack to cool.
  • Conventional Oven Method:.
  • Lightly grease bottom an outside of oven-safe 2 cup liquid measure measuring cup.
  • Turn measuring cup upside down onto a baking sheet and press tortilla over bottom and sides.
  • Bake in 325F oven for 7 to 10 minutes, occasionally pressing tortilla against measuring cup, until brown spots appear.
  • Turn out onto rack to cool.
  • Note:.
  • For larger bowl, use a 10 inch flour tortilla over a 4 cup liquid measure measuring cup.

8 (6 inch) flour tortillas
1 1/2 cups shredded cheddar cheese
1 lb ground beef, cooked and drained
15 ounces black beans or 15 ounces pinto beans, drained
1/3 cup taco sauce
black olives, sliced jalapeno peppers, shredded lettuce, tomato slices (optional toppings)
avocado, sour cream, guacamole, and salsa (optional toppings)

Steps:

  • Spray both sides of each tortilla with cooking spray.
  • Prepare foil handles. To make foil handles, tear off three 18X2-inch strips of heavy-duty foil or use regular foil folded to double thickness. Crisscross foil strips to spoke design and place in CROCK-POT slow cooker.
  • Place 4 tortillas in bottom and extending up sides of CROCK-POT slow cooker, forming a bowl. Layer one third of cheese, half of beef, half of beans and half of taco sauce over tortillas. Layer 2 tortillas, one third of cheese, remaining half of beef and beans. Top with remaining half of taco sauce, remaining 2 tortillas and remaining one third of cheese.
  • Cover; cook on HIGH 3 hours or until tortillas are crispy and cheese is melted. Remove from CROCK-POT slow cooker using foil handles. Cut into eight wedges. Serve with desired toppings.

4 corn tortillas
4 canning jars

Steps:

  • Heat oil in a large, heavy saucepan for about 7 minutes. Ensure oil is hot enough by sticking the end of a wooden spoon into the oil; bubbles should form around the wood start to float up.
  • Place 1 tortilla on a slotted spoon and bottom of 1 jar on top of tortilla; lower into the hot oil. Carefully remove spoon, making sure not to tear the tortilla. Mold tortilla around the bottom of the jar using the spoon; cook for about 1 minute.
  • Remove the jar and tortilla bowl from oil using tongs, tilting the tortilla bowl so excess oil goes back into the saucepan. Lay bowl on a paper towel-lined plate to drain and cool. Repeat with remaining tortillas and jars.
