Most Amazing Challah image

I made up my own Challah that is amazing! I have tried countless combinations to finally get it right. It uses quick rise yeast to save you a bunch of time. Enjoy!

4 (.25 ounce) packages quick-rise yeast
4 cups warm water (110 degrees F/45 degrees C)
2 tablespoons salt
¾ cup white sugar
1 cup pareve margarine, melted
4 eggs
12 cups bread flour, or as needed
1 egg
½ teaspoon vanilla extract
¼ cup sesame seeds, divided

Steps:

  • Sprinkle the yeast over the water in a large bowl, and stir gently to moisten the yeast. Stir in salt, sugar, margarine, and 4 eggs, and beat well. Gradually mix in the flour, 1 cup at a time, up to 12 cups, until the dough becomes slightly tacky but not wet. Turn the dough out onto a floured surface, and knead until smooth and elastic, 8 to 10 minutes.
  • Grease baking sheets, or line them with parchment paper and set aside.
  • Cut the bread dough into 4 equal-sized pieces (or 2 pieces to make 2 large loaves). Cut each piece into thirds for 3-strand braided loaves. Working on a floured surface, roll the small dough pieces into ropes about the thickness of your thumb and about 12 inches long. Ropes should be fatter in the middle and thinner at the ends. Pinch 3 ropes together at the top and braid them. Starting with the strand to the right, move it to the left over the middle strand (that strand becomes the new middle strand.) Take the strand farthest to the left, and move it over the new middle strand. Continue braiding, alternating sides each time, until the loaf is braided, and pinch the ends together and fold them underneath for a neat look. Repeat for the remaining loaves.
  • Place the loaves onto the prepared baking sheets, and let rise until double in size, 1 to 1 1/2 hours.
  • Preheat an oven to 350 degrees F (175 degrees C). Whisk 1 egg with vanilla extract in a small bowl, and brush the loaves with the egg wash. Sprinkle each loaf with about 1 tablespoon of sesame seeds.
  • Bake in the preheated oven until the tops are shiny and golden brown, about 30 minutes. Let cool before slicing.

Make challah bread, a sweet, enriched loaf traditionally eaten on Friday nights by Jewish families to celebrate the Sabbath. The leftovers make lovely French toast

Yield Makes 1 loaf (cuts into 18-20 slices)

Number Of Ingredients 6

500g strong white bread flour, plus extra for dusting
70g caster sugar
7g sachet fast-action dried yeast
2 eggs, beaten
70ml sunflower oil, plus extra for the bowl
1 tbsp poppy seeds or sesame seeds (optional)

Steps:

  • Combine the yeast, a pinch of the sugar and a couple tablespoons of lukewarm water in a small bowl. Stir to dissolve the yeast, then leave for 10 mins until foamy.
  • Meanwhile, combine the flour, the remaining sugar and 3 tsp fine salt in a large bowl. Make a well in the centre, then add half the beaten egg, the yeast mixture and the oil. Pour in 200ml lukewarm water (it should feel slightly warm to the touch) and stir with a spoon, then mix using one hand, keeping the other clean while you bring the dough together. If there are a lot of very dry bits, gradually add a little water to just bring it together - you don't want it to get too wet and sticky. The dough should be moist, but not soggy.
  • Once the dough has come together, turn it out onto a lightly floured surface. Knead using both hands for 10 mins until smooth and a bit springy. If it gets very sticky, add a very small amount of flour - as little as possible. A dough scraper is useful if the dough is sticking to the work surface. Stretch the sides of the dough down and pull together to form a ball. Lightly oil a bowl, then lightly roll the dough ball around the bowl so it's coated in the oil. Cover with a clean tea towel and leave in a warm place for 1 hr, or until dough has doubled in size.
  • Line a baking sheet with baking parchment. Turn the dough out onto a clean work surface and divide into three equal pieces, weighing for accuracy, if you like. Roll each piece into a long sausage shape about 25cm long, tapering them slightly at both ends. Lay the pieces out in front of you, parallel to one another with a couple centimetres between each. Bring the sausages together at the top end, then plait them down the length, tucking in the ends when you reach the bottom. Carefully transfer the loaf to the prepared baking sheet and loosely cover with a clean tea towel. Leave to rise until puffy and billowy, about 40 mins.
  • Meanwhile, heat the oven to 200C/180C fan/gas 6. Gently brush the rest of the beaten egg all over the challah, getting it into all the crevices, and sprinkle with the poppy or sesame seeds, if using. Bake on a middle shelf of the oven for 25-30 mins, until the loaf is golden brown underneath and sounds hollow when tapped. Check after about 15 mins - if the top of the loaf has started to get too dark, cover it with foil. Leave to cool on a wire rack, then serve.

Virtually fail-proof recipe designed for ease of preparation and maximum flavor. NOT sweet, but may be sweetened by using 1/2 cup sugar instead of 1/4 cup.

¼ cup white sugar
1 tablespoon salt
¼ cup vegetable oil
1 ¼ cups warm water
2 (.25 ounce) packages active dry yeast
3 eggs
6 cups all-purpose flour
1 egg
1 tablespoon poppy seeds

Steps:

  • Place sugar, salt, and oil in either a mixing bowl for an electric mixer with a dough hook or any large bowl. Add hot water, and stir to dissolve the sugar and salt. Stir in yeast, and let stand until mixture gets foamy. Add slightly beaten eggs.
  • If using an electric mixer, add 4 1/2 cups of flour to the yeast mixture. Mix until flour is mixed in, and dough gets stringy. This stringiness indicates that the gluten has developed. Continue to add flour until dough is all on dough hook; 1 or 2 cups is usually sufficient. Let hook continue to knead for several minutes. Dough should be smooth and elastic. To knead by hand, stir 4 1/2 cups of flour in to the yeast mixture. Turn soft dough onto lightly floured surface, and work in 1 to 2 cups of flour. Knead until smooth and elastic, about 8 to 10 minutes.
  • Place dough into a greased bowl, and turn several times to coat the surface. Cover bowl with a damp cloth. Let dough rise until doubled in bulk. Punch down after first rising, and allow to rise a second time. The first rising is about 1 hour, the second about 45 minutes. Two risings makes for a better bread, but if time is a problem just do one.
  • Divide dough in half, and divide each half into three or four equal parts. Make two braids, and place both breads on a greased baking sheet. Cover, and allow to rise until doubled. Brush with beaten egg. Sprinkle with poppy seeds, if desired.
  • Bake at 350 degrees F (175 degrees C) for 35 minutes until golden brown. Allow loaves to cool on a wire rack.

Since I've been making these Challah's my family refuses those bought in the Bakery & whenever we're invited for a holiday meal somewhere else, the only request is...please bring your Challahs! This, with only minor adaptations comes from The Spice & Spirit of Kosher-Jewish Cooking. Please read all the directions first--yes, they do take a long time to prepare, but only 30-40 minutes or less of that is active time & they are truly worth it!

3 1/2 cups all-purpose flour, plus
3 1/2 cups all-purpose flour
2 (1/4 ounce) packages dry yeast
1 egg, beaten
1/2 cup vegetable oil
1 tablespoon salt
1/2 cup sugar
2 cups warm water (80 -90)
1 egg, beaten
poppy seeds (optional) or sesame seeds (optional)

Steps:

  • First measure out all your ingredients.
  • Now from the 1/2 of cup sugar take 1 tablespoon of the sugar & combine it with the yeast& warm water (you know you have the right temperature of warm water when it's the same temperature as the inside of your wrist).
  • I let my mixer bowl which is metal (kitchen aid) sit in a hot water bath while the yeast dissolves, 10 minutes.
  • After the yeast has dissolved (it's nice & foamy) add to it the rest of the sugar, salt & 3 1/2 cups flour.
  • Mix well (I use the bread hook).
  • Add egg (already beaten) & oil.
  • Slowly start mixing in most of the remaining 3 1/2 cups of flour.
  • The dough will become quite thick.
  • When the dough pulls away from the sides of the bowl, turn it onto a floured surface& knead for approximately 10 minute.
  • Add only enough additional flour to make dough manageable.
  • Knead until dough has acquired a "life of its own"; it should be smooth & elastic, springing back when pressed lightly with your fingertip.
  • Place dough into a large oiled bowl turning the dough once so its oiled on all sides.
  • Cover with a damp towel & let rise in a warm place for 2 hours, punching down in 4-5 places every 20 minutes.
  • Now, I always write down what time I started so I don't forget when the 2 hours are up & set a timer every 20 minutes. (In the summer I let the dough rise on my balcony & in the winter in front of my oven where something is always baking, turning it every time I punch down the dough).
  • After the 2 hours, turn your dough onto your working surface.
  • Now comes the forming part.
  • For Shabbos I always make a 2 level braided challah which looks great & is really easy.
  • Prepare your baking sheet lining it with parchment paper.
  • Preheat oven to 375°F.
  • First, take a large knife & cut the dough in half.
  • Next, from each 1/2 now cut off a third & place the 2 thirds on the side.
  • Now, from the first half (where you've removed a third) divide the remaining dough into approximately equal thirds.
  • Roll each third out till its about 10-12 inches (I'm guessing I never measured it) & braid all 3 roll together pinching the top & bottom half together& turning them slightly under.
  • Place on baking sheet.
  • Repeat the same for other half.
  • Now take the first third you removed earlier& divide in 3, braid just like you did before& place on top of the already braided challah.
  • Repeat same for other third.
  • Now let the challah rise for 1/2 an hour.
  • After the challah has risen glaze with beaten egg & add mohn or sesame if you wish.
  • Almost done!
  • Put in preheated oven & let bake for exactly 25 minutes!
  • Turn off oven & leave Challahs in for exactly another 10 minutes!
  • Remove from oven.
  • Enjoy--you deserve every compliment you get!

RICH CHALLAH (BRAIDED EGG BREAD)

Many Challah breads either have too many eggs or just not enough. This recipe has just the right amount, about 1 egg per cup of flour. This recipe can also be done on the dough cycle in your bread machine and finished by hand. Best of all it makes THE BEST French toast! Cooking time does not include rising time.

1/2 cup water or 1/2 cup milk, for more richness
4 eggs
6 tablespoons oil, makes it more cake like
6 tablespoons sugar
1 1/2 teaspoons salt
5 cups flour
2 1/2 teaspoons instant yeast (OR AMOUNT SPECIFIED BY YOUR YEAST PER CUP OF FLOUR) or 2 1/2 teaspoons bread machine yeast (OR AMOUNT SPECIFIED BY YOUR YEAST PER CUP OF FLOUR)
2 egg yolks
2 tablespoons water
1/8 teaspoon salt

Steps:

  • In bread machine add to bread pan in order suggested by manufacturer, select dough setting, press start.
  • After beep, remove risen dough and follow directions on how to shape and bake below.
  • In Kitchen-aid stand mixer or like devise mix dry ingredients in bowl and turn on low speed to incorporate.
  • Add eggs one at a time, allow to mix in before adding next one, then add oil.
  • Turn mixer up to next speed (2 on Kitchen-aid), add milk in a slow stream, knead until soft, smooth, and warm, about 3 to 4 minutes.
  • Grease a bowl and place dough in bowl turning to coat.
  • Allow to rest and rise until double in size.
  • ***Shaping and baking***.
  • Punch down and turn out risen dough onto a lightly oiled surface, let rest 5 minutes, punching dough down gets it all excited, it needs to sit and relax.
  • Shape dough into a log and cut off 1/3; set aside.
  • Cut remaining dough into 3 pieces and roll into 18 inch ropes, start braid from middle and braid to one end, pinch together and tuck under, repeat with other side.
  • Cut set aside dough into 3 pieces and roll out to 13-15 inches long, repeat braiding method and place smaller braid on top of larger braid.
  • Grease a large 1/2 sheet baking sheet and place finished braid sideways from corner to corner.
  • Allow to rise until almost double, mix glaze ingredients and brush loaf gently.
  • Bake in preheated 350°F oven for 35-45 minutes, cover loosely with foil 15-20 minutes into baking to avoid over browning.
