1/2 cup sour cream
1 tablespoon finely grated lime zest (about 1 lime)
2 tablespoons fresh lime juice
1/2 teaspoon paprika
1/2 teaspoon cumin
salt and pepper
vegetable oil
15 ounces refried black beans or 15 ounces pinto beans
8 (8 inch) flour tortillas
1 cup shredded monterey jack cheese
1 cup salsa
8 large eggs

Steps:

  • Make the Cream Sauce: Stir together all ingredients in a small bowl and refrigerate until ready to use. May be refrigerated up to 2 days.
  • For the Eggs: Warm the refried beans in order to make them easier to spread. Spread a thin layer on four of the tortillas and sprinkle the other four with the cheese. Heat a few teaspoons of oil on a griddle or large skillet. Place one chhese and one bean tortilla on griddle and when cheese melts invert the cheese tortilla over the bean tortilla. Cook until golden on both sides. Transfer to a warm plate. Repeat with remaning quesadillas, keeping them in a warm oven or covered with foil.
  • Either poach or fry eggs to your liking.
  • To serve cut each quesadilla into six wedges. Arrange in a circle with points facing out on a warm plate. Top with salsa and place two eggs on top. Drizzle cumin lime cream over each serving.

In June of 2020 we were still dealing with the Coronavirus ravaging our country and making us pretty much stir-crazy. Luckily in California the lockdown rules were loosening, and my husband and I were able to host some good friends at our home for the weekend. The weather was heating up and while we were spending the day by the pool (pretending we were at an exotic resort) my friend asked if I could make her a foofie drink. I went inside, took an inventory of my ingredients, and the COVID Creamsicle® cocktail was created.

1 fluid ounce good-quality vodka
½ cup ice as needed
1 scoop orange sherbet
1 scoop lemon sorbet
1 fluid ounce lemon-flavored sparkling water (such as Sanpellegrino®)
1 fluid ounce orange-flavored carbonated water (such as Perrier®)
1 fluid ounce Prosecco
1 slice lemon

Steps:

  • Pour vodka into a chilled single rocks glass or stemless wine glass and add ice. Add orange sherbet and lemon sorbet. Top with lemon-flavored sparkling water and orange-flavored carbonated water. Use a long-handled or tall drink spoon to quickly stir together until completely blended.
  • Top with Prosecco and garnish with lemon slice.

3 medium cucumbers, peeled and thinly sliced
1 medium onion, sliced
2 cups water
1/2 teaspoon salt
3/4 cup heavy whipping cream
1/4 cup sugar
1/4 cup cider vinegar
Minced fresh parsley, optional

Steps:

  • In a bowl, combine cucumbers, onion, water and salt. Let stand for 1 hour; drain and rinse. In a serving bowl, beat cream, sugar and vinegar. Add cucumbers and onion; toss gently. Sprinkle with parsley if desired.

14 large ears sweet corn in husks
5 pounds medium red or white potatoes
1-1/2 pounds carrots, halved
2 large onions, quartered
2 medium heads cabbage
16 fresh Polish sausage links
2 quarts water
Salt and pepper, optional

Steps:

  • Peel and clean corn, saving and washing enough husks to cover the bottom of a 5-gallon metal cream can or stockpot. Layer with corn, half of the potatoes, carrots, onions and cabbage, then half of the sausages. Repeat layers with the rest of the vegetables and sausages. Pour the water over and add salt and pepper if desired. Cover and bring to a boil on grate over a fire. Let steam for about 45 minutes or until a thermometer inserted in the sausage reads 160°.
