FARMER'S PORK CHOPS



Farmer's Pork Chops image

This is a Paula Deen recipe which has become a favorite in our house. It is a hearty, comfort-food type of meal. The white sauce and potatoes are absolutely delicious. It takes a bit of time to prepare but the results are well worth it! I also like to serve this with a steamed vegetable and/or salad. Enjoy!

8 medium potatoes
1/2 medium onion
salt and pepper, to taste
8 tablespoons butter
1/2 cup all-purpose flour
1 -2 teaspoon salt
1/2-3/4 teaspoon pepper
4 cups whole milk
1/4 cup chopped fresh parsley (optional) or 1/4 cup chives
1 cup all-purpose flour
2 tablespoons Lawry's Seasoned Salt
8 center-cut pork chops, about 1/2 inch thick
1/3 cup vegetable oil

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Peel potatoes, slice 1/4 inch thick and cover with cold water.
  • Slice onion into very thin slices. Cut slices in half.
  • Make The White Sauce:.
  • Melt butter; remove from heat.
  • Stir in flour and add salt and pepper.
  • Return to heat and cook, stirring constantly, until mixture is bubbly.
  • Add milk, 1 cup at a time.
  • Bring to a boil over medium heat, stirring frequently.
  • Reduce heat and simmer 1 to 2 minutes, then let stand at least 1 to 2 minutes.
  • Stir in parsley or chives, if desired.
  • Drain potatoes.
  • Layer half the potatoes in a well-greased 15 x 10 inch casserole dish(I use 9 x 13 and it's fine).
  • Sprinkle with salt and pepper to taste.
  • Scatter half of onion slices on top of potatoes.
  • Repeat with remaining potatoes and onions.
  • Cover potatoes with white sauce.
  • Cover casserole dish with plastic wrap and microwave for 5 minutes on high OR bake uncovered for 15 minutes.
  • Mix together flour and seasoned salt and dredge pork chops in flour mixture.
  • Lightly brown chops in vegetable oil. *Do not cook them completely*.
  • As chops are removed from frying pan, lay them on top of the potatoes.
  • Bake at 350 degrees fahrenheit for 45-60 minutes.
  • The juices from the pork chops will drip down into the potatoes and taste oh-so-yummy!

flour

1 large onion, sliced
1 clove garlic, chopped
1 1/2 cups sour cream

1 tablespoon shortening

Steps:

  • Trim excess fat from chops.
  • Roll in Flour.
  • Brown chops and garlic in 1 T.
  • Shortening over medium heat.
  • Season with salt and pepper.
  • Place potatoes in baking dish, top with browned chops.
  • Seperate onion slices into rings; layer over chops.
  • Blend sour cream with dry mustard, pour over top of onions.
  • Bake 1 hour and 30 minutes at 350 degrees.

1 medium shallot, finely chopped
1 1/2 tablespoons balsamic vinegar
2 teaspoons fresh lemon juice
1 teaspoon Dijon mustard
3 tablespoons olive oil
2 tablespoons plain nonfat yogurt
Salt and pepper to taste
1 medium head romaine lettuce, light green and white leaves only, finely chopped
1 bunch arugula, coarsely chopped
1 bunch watercress, leaves only, coarsely chopped
1 skinless medium whole chicken breast, cooked and diced into 1/4 inch pieces
1/2 medium red bell pepper, diced into 1/4- inch pieces
1/4 European cucumber, diced into 1/4-inch pieces
1/4 cup green zucchini, thinly sliced and grilled
1/4 cup yellow zucchini, thinly sliced and grilled
1 ear of white or sweet yellow corn, husked and shucked
1/4 cup coarsely shredded Parmesan (use a shredder or peeler)

Steps:

  • In a small mixing bowl, combine the shallot, vinegar, lemon juice, and mustard and whisk to combine. Slowly add the oil, whisking to incorporate. Add the yogurt, salt and pepper and blend well. Taste for seasoning. Combine all the salad ingredients in a large salad bowl. Add the dressing and toss until all the vegetables are well coated. Sprinkle with freshly ground pepper, if desired, and serve.
  • ADVANCED PREPARATION: The dressing can be prepared up to 1 day ahead and refrigerated. Whisk the dressing well before using. The salad can be prepared up to 2 hours ahead and refrigerated.

1 (14 1/2-ounce) can stewed tomatoes cut up and juice reserved
1/2 cup sour cream
2 tablespoons cornstarch
water or milk
Chopped chives or parsley (optional)

Steps:

  • Preparation Time: 20 minutesSlow Cooker Cooking Time: 3 1/2 to 4 hours on high or 7 to 8 hours on lowLast-Minute Cooking Time: about 5 minutes on stovetop1. Trim excess fat from chops. Coat chops with 2 tablespoons of the flour. In a large skillet over medium heat, brown chops in oil.2. In a slow cooker, place potatoes and onion. Sprinkle remaining flour over and toss to coat. As chops are removed from frying pan, lay them on top of potatoes. Bake at 350 degrees for 45 to 60 minutes. The juices from the pork chops will drip down into the potatoes. Delicious! White Sauce 8 T (1 stick) butter 1/2 cup all-purpose flow 1 to 2 teaspoons salt 1/2 to 3/4 teaspoon pepper 4 cups milk Melt butter; remove from heat. Stir in flour; add salt and pepper. Return to heat and cook, stirring constantly, until mixture is bubbly. Add milk, 1 cup at a time. Bring to a boil over medium heat, stirring frequently. Reduce heat and simmer 1 to 2 minutes, then let stand at least 1 to 2 minutes.
