HOW TO MAKE A HOMEMADE FATBURGER
Steps:
- Butter your bun on both half and toast in a pan. This is not done at Fatburger but I like it this way so that's what I do.
- Place the two buns side by side and spread the mayonnaise on the top bun.
- Carefully top the mayonnaise with the shredded lettuce. It has to all sit on top.
- Now heat your grill or pan so that it is as hot as you can get it.
- Place the meat discs on the grill and smash them with a large flat spatula.
- Season generously with salt and pepper.
- Fry for about two minutes and then flip the patties over.
- Season again with salt and pepper and then top each patty with a slice of American cheese.
- When the cheese melts down the side of the patties, your burger will be about medium rare.
- Place one patty with the cheese side down on the bottom bun. Then top with the other patty, again cheese side down.
- Squirt with French's yellow mustard and cover with pickle relish and onions.
- Carefully bring the two halves together and enjoy.
HAMBURGER PATTIES
Perfect burgers every time! There is quite a debate about the origin of the popular American hamburger. I will side with the Wisconsin theory, and attribute this recipe to the Midwest U.S. region.

Steps:
- Sometimes I vary the seasonings- using a steak seasoning or Cajun seasoning instead of salt and pepper.
- Mix ingredients with your hands using a light touch.
- Don't be tempted to overmix.
- If you do, it becomes too dense.
- When charcoal grilling, add 1/2 cup water to the beef mixture to keep it from drying out.
- For pan frying, don't use a nonstick pan- it won't brown as well, and heat some oil in the pan before adding burgers to keep the burgers from sticking and to help sear and form a nice brown, crispy exterior.
- Either method will take about 10- 12 minutes of cooking time, depending on thickness of patty, temperature of heat source and your preference (we like ours medium cooked).
- Note: when pan-frying don't be tempted to press down and squeeze all the juice out, just turn them more often (turn only once on the grill).

Steps:
- Melt butter in a saucepan over medium heat, then add olive oil. Allow butter to brown. Reduce heat to low and add onion. Cover and cook over very low heat, stirring occasionally, until very soft, about 20 minutes. You do not want to caramelize the onion.
- Meanwhile, season ground beef with Italian seasoning and shape into 2 hamburger patties.
- Melt ghee in a skillet over medium-high heat. Cook hamburger patties, about 3 minutes per side. Add cheese onto each patty and allow to melt.
- Meanwhile, preheat the oven's broiler and toast buns until crisp, 1 to 2 minutes.
- Set hamburger patties on the bottom buns and add add sauteed onions on top. Spread 1 tablespoon butter across the freshly toasted top bun.
