3 cups (600g) granulated sugar
3/4 cups (170g) butter
2/3 cups (168g) evaporated milk
1 bag (10 ounces) white chocolate chips
1 cup dried cranberries
1 jar (7 ounces) marshmallow fluff
1 teaspoon vanilla extract

Steps:

  • Line a 9x13 inch pan with parchment paper.
  • In a large saucepan, over medium heat, mix together sugar, butter, and evaporated milk.
  • Bring mixture to a boil, leave on heat until the mixture registers 234°F on a candy thermometer (about 5 minutes), stirring constantly.
  • Remove from heat and stir in white chocolate chips until melted and thoroughly combined.
  • Stir in dried cranberries, marshmallow fluff, and vanilla extract.
  • Transfer fudge to the prepared pan and let cool for about 2 hours before cutting.

This White Chocolate Cranberry Fudge is made with sweetened condensed milk and dried cranberries! It's a super easy & quick dessert with Christmas colors!

3 3/4 cups (24oz) white chocolate chips
14 oz can sweetened condensed milk
1 tsp vanilla extract
6 oz (1 1/4 cups) dried cranberries
Pinch of salt
Sparkling sugar sprinkles

Steps:

  • Line a 9×9 square pan with parchment paper that covers the sides of the pan.
  • 2. Place the white chocolate chips and sweetened condensed milk in a large bowl and microwave for one minute. Stir well to combine and allow the heat to melt the chocolate chips. If needed, microwave for another 30 seconds or so, until the chocolate is completely smooth.
  • 3. Stir in the vanilla extract, dried cranberries and salt, then quickly transfer the mixture to the lined pan and spread evenly.
  • 4. Top the fudge with some sparkling sugar sprinkles, if you'd like to include them, and press them down into the top of the fudge.
  • 5. Let the fudge cool completely to room temperature before cutting into squares. You could also refrigerate it until it's cool.
  • 6. Cut the fudge and store in an air tight container. Fudge can be stored at either room temperature or the fridge.

Unsalted butter, room temperature, for brushing
3 cups chopped white chocolate (14 ounces)
1 can (14 ounces) sweetened condensed milk
1/4 teaspoon kosher salt
3/4 cup dried cranberries
1/2 cup finely chopped candied citrus peel, such as orange or lemon
1/4 teaspoon ground cardamom

Steps:

  • Lightly brush a standard 9-by-5-inch loaf pan with butter, then line in both directions with parchment.
  • In a medium saucepan over medium heat, cook chocolate, sweetened condensed milk, and salt, stirring until chocolate melts and mixture is smooth. Remove from heat; stir in cranberries, citrus peel, and cardamom. Pour mixture into prepared loaf pan. Refrigerate until firm, at least 4 hours. Slice crosswise into 8 pieces. Fudge can be refrigerated, covered, up to 2 weeks.

2/3 cup sweetened condensed milk
1 cup roasted salted almonds, coarsely chopped
1/2 cup dried cranberries
2 teaspoons grated orange zest

Steps:

  • Line an 8-in. square pan with foil and grease the foil with 1 teaspoon butter; set aside. In a large microwave-safe bowl, combine the chocolate and milk. Microwave, uncovered, at 30% power for 2-3 minutes or until chocolate is almost melted; stir until smooth. Stir in the almonds, cranberries and orange zest. Spread into prepared pan. , Cover and refrigerate for 2 hours or until firm. Using foil, lift fudge out of pan. Discard foil; cut fudge into 1-in. squares.

2 cups sugar
1 cup heavy cream
4 tablespoons unsalted butter
Pinch kosher salt
3 cups white chocolate chips (18 ounces)
1 teaspoon pure vanilla extract
1/2 teaspoon finely grated orange zest
2/3 cup dried cranberries, roughly chopped

Steps:

  • Line a 9-by-13-inch baking dish with foil.
  • Heat the marshmallows, sugar, cream, butter and salt in a medium saucepan over medium heat, stirring constantly, until the marshmallows melt and the sugar dissolves. Remove the saucepan from the heat, add the white chocolate chips, vanilla and orange zest and stir until the chips completely melt.
  • Pour the mixture into the prepared pan, and scatter the cranberries over the top. Lightly press the fruit into the fudge. Let cool to room temperature, then cover with plastic wrap and refrigerate until firm, about 1 hour. Cut into 1-inch squares.

6 Tbsp. butter
1/3 cup water
1 pkg. (3.9 oz.) JELL-O Pistachio Flavor Instant Pudding
3 cups powdered sugar
6 Tbsp. dried cranberries

Steps:

  • Line 8-inch square pan with foil, with ends of foil extending over sides. Microwave first 3 ingredients in large microwaveable bowl on HIGH 2 min. or until butter is melted; stir until chocolate is completely melted.
  • Add dry pudding mix; stir with whisk 2 min. Add powdered sugar, 1 cup at a time, stirring after each addition until blended; press onto bottom of prepared pan. Top with cranberries; press into fudge to secure.
  • Refrigerate 2 hours or until firm. Use foil handles to lift fudge from pan before cutting into squares.

After discovering this nutty white fudge in a church cookbook, I modified the recipe a bit to make it my own. The bright red cranberries look festive for the Christmas season.

1 teaspoon butter
2 cups sugar
1/2 cup sour cream
1/3 cup light corn syrup
1/4 teaspoon salt
2 teaspoons vanilla extract
1 cup chopped walnuts
1/4 cup dried cranberries

Steps:

  • Line an 8-in. square pan with foil and grease the foil with butter; set aside. In a large heavy saucepan, combine the sugar, sour cream, corn syrup and salt. Bring to a boil over medium heat, stirring until sugar is dissolved. Cook, without stirring until a candy thermometer reads 240° (soft-ball stage)., Remove from the heat and let stand for 15 minutes, without stirring. Add vanilla. With a wooden spoon, beat until mixture begins to lose its gloss, about 10 minutes. Fold in walnuts and cranberries. Pour into prepared pan; refrigerate until firm. , Using foil, lift fudge out of pan. Discard foil; cut fudge into 1-in. squares. Store in an airtight container in the refrigerator.

1 Tbsp. lime zest

Steps:

  • Line 8-inch square pan with foil, with ends of foil extending over sides. Microwave chocolate and milk in microwaveable bowl on HIGH 2 to 3 min. or until chocolate is almost melted; stir until chocolate is completely melted and mixture is well blended.
  • Add remaining ingredients; mix well. Spread onto bottom of prepared pan. Refrigerate 2 hours or until firm.
  • Use foil handles to lift fudge from pan before cutting to serve.
