I grew up in rural northwestern Montana, where my three sisters and I made meals and prepared food for 4-H contests. I've always loved cooking, and as the administrator of a retirement residence, I enjoy planning special events.

12 ounces cream cheese, softened
1/4 cup Miracle Whip
2 tablespoons sugar
1 carton (16 ounces) frozen whipped topping, thawed
2 cans (20 ounces each) crushed pineapple, drained
2 cups chopped walnuts
2 cups sweetened shredded coconut
2 cans (16 ounces each) whole-berry cranberry sauce
1 cup fresh or frozen cranberries, chopped, optional
Lettuce leaves

Steps:

  • In a large bowl, combine the cream cheese, Miracle Whip and sugar. Fold in the whipped topping; set aside. , In a large bowl, combine the pineapple, nuts, coconut and cranberry sauce. Add cranberries if desired. Gently combine with cream cheese mixture. Spread into a 13x9-in. dish or three foil-lined 8x4-in. loaf pans. Cover and freeze. , Remove from freezer 10-15 minutes before serving. Cut in squares or slices. Serve on lettuce leaves.

Frozen Cranberry Salad image

A refreshing summer treat or a surprising variation on a holiday tradition

Number Of Ingredients 7

6 ounces cream cheese, softened
2 tablespoons Mayonnaise
2 tablespoon sugar
1 cup crushed pineapple, drained
1 16 ounce can whole cranberry sauce
½ cup walnut pieces
1 cup whipped topping

Steps:

  • Blend cream cheese, mayo and sugar.
  • In a separate bowl, mix cranberry, pineapple and nuts.
  • Add to cream cheese mixture and stir well.
  • Gently add whipped topping.
  • Choose one of the following to shape the frozen mixture: A) Pour into a 9x5 inch loaf pan OR 8x8 inch pan and cover with foil B) Divide into 12-16 cupcake liners placed in muffin cups, number depending on size C) Divide into small ramekins, 8-12 depending on size.
  • Place in freezer until solid, overnight is best.
  • Serve depending on method used to shape the salad. For loaf pan, cut into slices and place on a bed of lettuce. 8x8 inch pan, cut into squares. Frozen in cupcake liners, let diners help themselves and remove wrapper before eating. Small ramekins can be set at each place or on a buffet, with contents eaten from the ramekin.

  • Mix cool whip into cranberry mixture and put into a 9x13 pan. Freeze overnight.

3 tbsp lemon juice
1 cup heavy whipping cream
¼ cup yogurt (Can also use mayonnaise)
¼ cup powdered sugar
1 cup chopped walnuts

Steps:

  • Crush the cranberry sauce with a fork. Add lemon juice. Spoon into a mold 3/4 full.
  • Whip the whipping cream and fold in the yogurt, powdered sugar, and walnuts.
  • Freeze for 6 to 8 hours.
  • Remove from the freezer and let thaw 4 to 5 minutes. Turn out onto a serving plate and serve. Using a thin knife makes it easier.

This tangy fruit salad is perfect with turkey or ham, and has always been on our holiday table. With real whipped cream, walnuts, and pineapple, it's a treat you'll always want to make for the holidays.

1 (12 ounce) package fresh or frozen cranberries, coarsely chopped
1 (20 ounce) can crushed pineapple, with juice
2 cups white sugar
½ pint heavy whipping cream
1 cup chopped walnuts
2 cups miniature marshmallows

Steps:

  • In a large bowl, stir together the cranberries, pineapple (with juice) and sugar. Let stand for about an hour, to let sugar dissolve, and then pour the mixture into a strainer over a bowl. Let drain, covered, in the refrigerator for at least two hours, or overnight. (Note: The drippings make a wonderful cranberry punch, when mixed with lemon-lime soda!)
  • Before serving, whip the cream until soft peaks form. (You can sweeten the whipped cream with a little sugar, if desired.) In a large bowl, mix together the cranberry mixture, walnuts and marshmallows. Fold in the whipped cream and store in refrigerator until serving.

1/2 cup sugar
1 (9 ounce) container Cool Whip
2 (16 ounce) cans whole cranberry sauce (make sure you get whole)
1 pint sour cream
4 mashed bananas
1 cup nuts (optional)

Steps:

  • Drain pineapple well and place in large mixing bowl.
  • Add sugar, cool whip, cranberry sauce, and sour cream.
  • In a separate mixing bowl, peel & smash bananas with a fork.
  • Now combine pineapple mixture and banana mixture and stir well.
  • Add nuts, if desired.
  • Spoon into cupcake papers placed in a muffin pan. Freeze. When frozen, remove from muffin pan and place in Ziploc bag. Remove cupcake liners prior to serving.
