MEXICAN FIESTA SOUP

Steps:

• In a large saucepan, combine salsa, beans, corn, chicken or turkey and broth. Bring to a boil over medium high heat.
• Reduce heat and simmer 5 minutes.
• Garnish with sour cream.

CAMPBELLS FIESTA CHILI BEEF SOUP RECIPE - (3.3/5)

Steps:

• Add beef fat to electric fry pan over medium heat. When hot, add tomato paste and cook stirring constantly for 2 minutes. Combine Garlic Powder, Onion Powder, sugar, salt, Paprika and Chili Powder in a small bowl, mix. Add to fat/tomato paste mixture and cook for 30 sec to bloom the spices. Mix in rest of ingredients, mashing about half of the pinto beans as you do so, heating on low until evenly melted.

FIESTA BEEF SOUP

Steps:

• Place all ingredients - except rice - into large pot
• Bring to a gentle boil
• Boil for approximately 1 hour (or until celery is tender)
• If freezing part of your soup - pull that out here and freeze
• Add in 5 minute rice and serve
• Freezer Meal/Slow Cooker Instructions
• Brown Beef
• Place all ingredients MINUS RICE into Freezer Bag and Freeze
• Thaw partially overnight in Fridge
• Place in Slow Cooker and cook on low for about 6 hours
• Add in Rice and cook 1 more hour (or until Rice is done)

CROCK POT MEXICAN FIESTA

Steps:

• Spray crock pot with non-stick spray and cover the bottom with slightly crushed chips.
• Combine soups, rotel, chili powder, and onion in a separate bowl and blend well with a whisk.
• Brown ground beef in a skillet, drain fat, and add ranch style beans to it and mix together. (Do not drain the beans). Layer half of the beef mixture over the chips, then half of the soup mixture over the beef, ending with half the cheese over the beef. Repeat these layers once more beginning with chips and ending with cheese.
• Cook on high in crock pot for three hours.

BEEF FIESTA CASSEROLE

Steps:

• Preheat oven to 375°.
• Grease a 3-quart casserole.
• In a large skillet, cook ground beef over med-high heat until browned; drain.
• Reduce heat to medium; add onion and garlic and cook for about 5 minutes.
• Add tomatoes, tomato paste, chilies, beans, salt, chili powder, cumin and pepper.
• Stir to combine and simmer for about 10 minutes.
• Pour into prepared casserole.
• Add macaroni and mix well to combine all.
• Sprinkle with cheese, add jalapeño slices if desired; cover and bake for 30 minutes.
• Uncover and continue baking for 10 minutes.
