1 egg
2 cups shredded cooked chicken
1 cup panko bread crumbs
⅓ cup Buffalo wing sauce
⅓ cup minced celery
¼ cup crumbled blue cheese
¼ cup minced carrot
¼ cup vegetable oil

Steps:

  • Whisk egg in a large mixing bowl. Add chicken, bread crumbs, wing sauce, celery, blue cheese, and carrot. Mix well until evenly combined.
  • Form mixture into 6 patties and place on a baking sheet. Freeze until firm, about 30 minutes.
  • Heat oil in a large skillet over medium-high heat. Add fritters and cook, undisturbed, about 5 minutes. Carefully flip fritters and cook for 5 minutes more. Transfer patties to a paper towel-lined plate. Repeat with any remaining fritters.

Here's what you need: dinner rolls, shredded mozzarella cheese, rotisserie chicken, hot sauce, ranch dressing, butter

12 rolls dinner rolls, 1 pack
1 ½ cups shredded mozzarella cheese
3 cups rotisserie chicken, shredded
¾ cup hot sauce
½ cup ranch dressing
2 tablespoons butter, melted

Steps:

  • Carefully slice the pack of dinner rolls in half, being sure to keep the rolls connected as a single units as they are split into tops and bottoms.
  • Remove the top and place the bottom section in a 9x12 inch (23x30 cm) baking dish.
  • Sprinkle the bottom with about 1 cup (100 g) of the shredded mozzarella cheese (make sure it is evenly coated as this will act as a barrier between the sauce and the bread, preventing the rolls from getting soggy).
  • Top the cheese with the shredded rotisserie chicken. Drizzle the hot sauce and ranch dressing evenly over the chicken and spread out evenly with a spoon. Top with remaining mozzarella cheese.
  • Place the top half of the rolls on top and brush evenly with melted butter.
  • Bake in a preheated oven for 20-25 minutes, until the cheese is melty and the rolls have heated through.
  • Remove from oven, cool slightly before transferring to a cutting board.
  • Using a large knife, follow the lines of the rolls, cutting them into 12 individual sliders.
  • Enjoy!

1/4 cup Frank's™ RedHot™ Buffalo Wings Sauce
1 1/4 cups Progresso™ plain panko crispy bread crumbs
1/2 teaspoon paprika
1/4 teaspoon salt
2 tablespoons butter or margarine, melted
1 lb boneless skinless chicken breasts, cut crosswise into 24 (1/2-inch-thick) strips
Blue cheese dressing, if desired
Celery sticks, if desired

Steps:

  • Heat oven to 425°F. Line cookie sheet with foil; spray foil with cooking spray.
  • In shallow dish, place buffalo wing sauce. In another shallow dish, mix bread crumbs, paprika, salt and butter. Dip chicken into wing sauce; coat evenly with bread crumb mixture. Place on cookie sheet.
  • Bake uncovered 8 to 10 minutes or until chicken is no longer pink in center and coating is starting to brown. Serve chicken with dressing and celery sticks.

1/2 cup quinoa, rinsed
1 cups water
1 cup chicken, cooked and shredded
1/4 cup hot sauce or to taste
1/4 cup onion, finely diced
1/2 cup cheddar, shredded
1/4 cup blue cheese, crumbled
1 egg
1/4 cup panko breadcrumbs
salt and pepper to taste
oil for frying

Steps:

  • Simmer the quinoa in the water until the liquid has been absorbed and the quinoa is tender, about 15 minutes and let cool enough to handle.
  • Mix the cooked quinoa with the chicken, hot sauce, onion, cheddar cheese, blue cheese, egg, breadcrumbs, salt and pepper, adding more breadcrumbs if required to allow it to hold its shape.
  • Heat the oil in a pan over medium heat.
  • Spoon the mixture into the pan and form patties of any size that you desire and cook until golden brown on both sides, about 2-4 minutes per side, and set aside on paper towels to drain.

1 pound boneless skinless chicken breasts
2 tablespoons plus 1/3 cup Louisiana-style hot sauce, divided
1/4 teaspoon pepper
1/4 cup butter, cubed
1/4 cup honey
12 Hawaiian sweet rolls, warmed
Optional ingredients: Lettuce leaves, sliced tomato, thinly sliced red onion and crumbled blue cheese

Steps:

  • Place chicken in a 3-qt. slow cooker. Toss with 2 tablespoons hot sauce and pepper; cook, covered, on low 3-4 hours or until tender., Remove chicken; discard cooking juices. In a small saucepan, combine butter, honey and remaining hot sauce; cook and stir over medium heat until blended. Shred chicken with 2 forks; stir into sauce and heat through. Serve on rolls with desired optional ingredients. Freeze option: Freeze cooled chicken mixture in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, stirring occasionally; add water or broth if necessary.
