"My son-in-law, who is very creative, came up with these potatoes," says Pat Pennell of El Dorado Springs, Missouri. Use only one jalapeno or serve these fiery potatoes with sour cream to cool them off a bit.

1 medium onion, chopped
2 jalapeno peppers, seeded and chopped
1/4 teaspoon salt-free seasoning blend
1/4 teaspoon pepper
2 teaspoons canola oil
2 small tomatoes, chopped

Steps:

  • In a large nonstick skillet, saute the potatoes, onion, jalapenos, seasoning blend and pepper in oil for 30-35 minutes or until potatoes are tender. Stir in tomatoes; heat through.

1 (32 fluid ounce) container vegetable broth
4 cups peeled and cubed sweet potatoes
1 (15 ounce) can reduced-sodium black beans, rinsed and drained
1 cup mild picante sauce
1 (12 ounce) jar roasted red peppers, coarsely chopped
¼ cup chopped cilantro
1 tablespoon smoked paprika
2 medium limes, juiced

Steps:

  • Combine vegetable broth and sweet potatoes in a pot over medium-high heat. Bring to a boil and cook until sweet potatoes are softened, about 7 minutes.
  • Meanwhile, combine black beans and picante sauce in a blender; blend until smooth.
  • Add the black bean mixture and roasted red peppers to the soup. Reduce heat. Add cilantro, smoked paprika, and lime juice. Stir soup and cook until heated through, 5 to 7 minutes.

2 2/3 cups water
1/4 cup butter or margarine
1 teaspoon salt, if desired
2/3 cup milk
2 cups Betty Crocker™ mashed potatoes
1 cup Old El Paso™ salsa (any variety)
1 can (2 1/4 oz) sliced ripe olives
1 cup shredded Cheddar cheese (4 oz)
1/2 cup crushed tortilla chips
Guacamole, if desired
Sour cream, if desired
Chopped fresh cilantro, if desired

Steps:

  • Set oven control to broil. In 3-quart saucepan, heat water, butter and salt to boiling. Remove from heat. Stir in milk and dry potatoes just until moistened. Let stand about 30 seconds or until liquid is absorbed. Whip with fork until fluffy.
  • Spread hot potatoes in ungreased 8-inch square (2-quart) glass baking dish. Spread with salsa. Sprinkle with olives and cheese. Broil with top 3 to 4 inches from heat about 2 minutes or until cheese is melted. Sprinkle with tortilla chips.
  • Serve with guacamole, sour cream and cilantro.

1/2 cup sour cream
1/2 cup diced fully cooked ham
3 tablespoons grated Parmesan cheese
2 tablespoons mayonnaise
1 to 2 tablespoons chopped green chilies
Salt and pepper to taste
1 cup shredded sharp cheddar cheese

Steps:

  • Place potatoes in a 13x9-in. baking dish. With a sharp knife, cut an X in the top of each potato. Bake, uncovered, at 350° for 10 minutes or until warm. , Meanwhile, combine the sour cream, ham, Parmesan, mayonnaise, chilies, salt and pepper; mix well. Fluff potato pulp with a fork. Top with ham mixture; sprinkle with cheese. Bake, uncovered, 10-15 minutes longer or until cheese is melted.

1 (32 ounce) frozen o'brien style hash browns
1 1/3 cups French's French fried onions, divided
1 cup shredded cheddar cheese, and 1 c jack cheese mixed then divided
1 (10 3/4 ounce) can cream of celery soup
1 (7 ounce) can mild green chilies, undrained (use less if you like it milder)
1 cup sour cream
2 eggs, beaten
1 tablespoon hot sauce (optional)

Steps:

  • Preheat oven to 400.
  • Layer potatoes, 2/3 c French Fried Onions and 1 cup of the mixed cheeses in 3 quart casserole.
  • Combine soup, chilies, sour cream, eggs and Frank's RedHot sauce in medium bowl. Pour over potatoes and onions in casserole.
  • Bake uncovered 45 minutes or until potatoes are cooked and mixture is set.
  • Remove from oven and sprinkle with remaining 1 c cheeses and 2/3 c onions.
  • Return to oven and bake 3 minutes more or until onions are golden brown.
  • Let stand 5 minutes before serving.

4 cups very hot water
2 tablespoons margarine, butter or spread, melted
1 egg, slightly beaten
2 cups shredded Colby-Monterey Jack cheese (8 ounces)
2 small jalapeño chiles, seeded and finely chopped
1 small red bell pepper, finely chopped (1/2 cup)
2 tablespoons Gold Medal™ all-purpose flour
1/2 teaspoon salt
2 eggs
2/3 cup milk
Shredded lettuce, if desired
Sour cream, if desired
Sliced chile peppers, if desired

Steps:

  • Heat oven to 375°F. Cover potatoes with water. Let stand 15 minutes; drain thoroughly. Toss potatoes, margarine and 1 egg. Press potato mixture on bottom and up side of ungreased pie plate, 9x1 1/2 inches. Bake 20 minutes.
  • Reduce oven temperature to 350°F. Sprinkle half of the cheese, finely chopped chiles and bell pepper in potato crust; repeat. Beat flour, salt and 2 eggs until blended; stir in milk. Pour over cheese mixture.
  • Bake about 35 minutes or until center is set and top is golden brown. Let stand 10 minutes before cutting. Garnish with shredded lettuce, sour cream and sliced chile peppers.

1/2 teaspoon salt (for boiling potatoes)
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon pepper
3 tablespoons canola oil
1/2 cup monterey jack cheese or 1/2 cup monterey jack pepper cheese
1/4 cup sour cream
1/2 cup prepared salsa
1 green onion, greens sliced thinly (optional for garnish)

Steps:

  • Boil potatoes in salted water until a knife can easily poke through them. Drain into a colander and let them steam off for about 5 minutes.
  • Heat oil in a large frying pan over medium to medium high heat and add potatoes.
  • Add seasonings to potatoes and cook until they are golden brown and the skins are crispy. About 10 minutes.
  • Plate potatoes and top with remaining ingredients.
  • Enjoy!
