CREAMY BURRATA AND SWEET FIG APPETIZER



Creamy Burrata and Sweet Fig Appetizer image

1/2 cup balsamic vinegar
3 tablespoons fig jam
8 ounces fresh burrata, torn into pieces
8 ounces fresh figs, cut into quarters
4 ounces prosciutto
Good quality extra-virgin olive oil, for drizzling
8 fresh basil leaves, torn
8 fresh mint leaves, torn
Flakey sea salt
Sliced and toasted baguette, for serving

Steps:

  • In a small saucepan over medium heat, bring the balsamic vinegar to a simmer. Cook until reduced by half, 5 to 7 minutes. Whisk in the fig jam until emulsified. Remove from the heat.
  • Arrange the burrata, figs and prosciutto on a serving platter. Drizzle with the olive oil and 2 tablespoons of the balsamic fig sauce (reserve the remaining for another use). Garnish with the basil and mint, then season with flakey salt. Serve with the toasted baguette.

6 fresh figs, halved
1 tablespoon Demerara sugar
4 ounces Burrata cheese
extra virgin olive oil
sea salt and ground black pepper to taste

Steps:

  • Place figs on a flame-proof surface or plate and sprinkle flesh-sides with Demerara sugar. Using a kitchen torch set to a medium-high flame, melt the sugar by making short, even passes over the top of the sugar. Continue melting the sugar until it bubbles and turns dark brown, about 30 seconds.
  • Place Burrata cheese on a plate. Drizzle with olive oil, sprinkle with a pinch of sea salt and black pepper. Place bruleed figs around cheese and serve.

Use larger slices of sourdough for our fig, burrata and prosciutto tartines for an impressive-looking lunch or starter that's deceptively easy.

4 slices of sourdough
olive oil, for drizzling
2 tbsp fig chutney
2 x 100g balls burrata, drained
8 slices of prosciutto or parma ham
4-6 ripe figs, roughly torn or halved
handful of thyme or oregano, leaves picked
balsamic vinegar, to serve

Steps:

  • Heat a griddle pan over a high heat or heat the grill to high. Drizzle each side of the bread with a little olive oil, then toast in the pan or under the grill for 2 mins on each side until golden brown.
  • Spread the fig chutney over the toasted bread. Tear or chop the burrata into chunky pieces and arrange these on the toast, create little nests of prosciutto on top, then add the fig pieces. Sprinkle with the thyme, then drizzle with more olive oil and a little balsamic vinegar.
