PORK AND KIMCHI SOUP
This kimchi soup is a recipe from my childhood. Not extremely spicy, but has some kick.

Steps:
- Combine kimchi, kimchi juice, pork, hot pepper paste, and sugar in a large pot. Pour in water and bring to a boil over high heat. Cook for 30 minutes.
- Add tofu and reduce heat to medium-low; cook until heated through, about 10 minutes. Add green onions and remove soup from heat.

Steps:
- In a Dutch oven, heat oil over medium heat; saute onion until tender, about 5 minutes. Add garlic, jalapeno and cumin; cook 1 minute. Stir in tomatoes, and broth. Bring to a boil; reduce heat. Stir in chicken, corn and beans.
- Simmer, uncovered, 10 minutes. Add cilantro, lime juice, salt and pepper. Top servings with crushed chips.
- Freeze option: Before adding chips, cool soup; freeze in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a large saucepan over medium-low heat, stirring occasionally and adding a little broth or water if necessary. Add chips and before serving.

GRANDMA'S CHICKEN SOUP
Whenever you're feeling sick, this will make you feel better! Trust me, you can even freeze it, this way you have it whenever you need it. Serve with egg noodles, if desired.

- Clean chicken and remove some, but not all, fat. Place in a 2-quart soup pot with carrots, celery, tomatoes, and onion. Tie all dill sprigs into a bunch with kitchen string; add to the pot with salt and pepper. Add water until chicken is covered by 2 inches.
- Cook over medium-low heat until chicken is just about cooked through, about 3 hours. Remove chicken to a platter and allow to cool slightly, 15 to 20 minutes. Cut meat off the bones, place meat back into the pot, and discard the bones. Cook over medium-low heat until heated through, about 30 minutes longer. Remove dill before serving.

KIM'S COUNTRY CHICKEN SOUP
My old friend, Kim from Marion County, KY, used to make this for her family at least once every 2 weeks. They adore it and my kids and I love it too! The addition of the tomato puree puts a whole new "twist" on this chicken soup. Kim said her family had been making it this way for at least 3 generations! Must be a Kentucky thing...NOTE: Original recipe calls for 3 TBSP hot sauce.

Steps:
- Boil chicken in large stock pot with water to cover. (45 minutes or until done.).
- Remove chicken and cut into large cubes. Return chicken pieces to water.
- Add chicken broth and tomato puree. Add carrots, potatoes, corn and onion.
- Cook on low for 45 minutes (until potatoes are fork tender).
- Add noodles and cook for 10 minutes more.
- Add hot sauce and extra spices, if desired.
