CHINESE FIRE POT FISH BALLS
This is the Chinese version of Swiss fondue, Korean BBQ, Japanese shabu-shabu, French raclette, etc. It is communal cooking and eating at its best. This recipe will create enough food for eight to 12 people, depending on appetite and cultural origin, i.e., we Chinese eat like there is no tomorrow. We would hate to leave this planet hungry! You can add other seafood, meats and vegetables. This is what the Tsai family ate.

Steps:
- In a food processor, puree fish with egg yolks until smooth. Add pepper, salt, sesame oil, fish sauce, and chilies; pulse processor a few times. Transfer mousse to a large, chilled bowl and fold in the scallions. Using a mixer, lift the egg whites to a stiff peak. Gently fold in the egg whites with the mousse. Cook a very small portion either in boiling water or in a microwave oven to verify seasonings. Using wet hands, make small balls (1-inch in diameter). Quickly blanch in salted boiling water for only 2 minutes. Drain and set aside to cool.
STARBUCKS-INSPIRED MEDICINE BALL
When you're starting to feel a cold coming on or you just can't get to Starbucks for the real deal, here's a recipe inspired by the secret menu item. The company's Medicine Ball became such a customer favorite they finally had to put it on the regular menu. This citrusy peach-mint combination will provide instant warmth and comfort for those days when you need a little hug in a mug.

- Heat 1 1/4 cups water and the lemonade in a small saucepan over medium heat until simmering. (Alternatively, combine water and lemonade in a large microwave-safe container and microwave on high for 3 minutes.) Remove from the heat and add all the tea bags. Cover and steep the tea bags for 4 minutes. Remove and discard the tea bags, then stir in the honey if using. Pour into 2 mugs and serve each with a slice of lemon.
FRIED MAC AND CHEESE BALLS
Steps:
- Cook the macaroni according to package instructions. Drain and rinse with cold water to stop the cooking. Drain again and set aside.
- In a saucepan, melt the butter over medium heat. Sprinkle the flour into the butter and stir it with a whisk. Cook for 2 minutes. Whisk the warmed milk into the flour mixture, working out any lumps. Cook until the sauce thickens, about 2 minutes. Remove from the heat, add the cheeses, and stir until melted and smooth; season with salt and pepper. Fold the cheese sauce into macaroni. Pour the mac and cheese into a shallow pan and refrigerate until cold, at least 2 hours.
- Shape the cold mac and cheese into meatball-sized balls and place them onto a waxed paper-lined tray. Freeze the balls overnight.
- Beat the eggs and 2 tablespoons milk together to form an egg wash and pour it into a shallow bowl. Put the bread crumbs into another shallow bowl. Remove the mac and cheese balls from the freezer. Dip the frozen balls into the egg wash then into the bread crumbs. Put the balls back into the freezer until you are ready to fry.
- Heat the oil in a deep-fat fryer to 350 degrees F. Fry the mac and cheese balls until they are golden brown and center is hot, about 5 minutes. Serve hot with your favorite marinara or Alfredo sauce or combination or both for dipping.

- For the table, jars/small bottles of the following to make your own dipping sauce:
- Thread beef, chicken, shrimp, fishballs and scallops on wooden skewers and set aside. Combine water and chicken stock in an electric wok and bring to a boil. Add mung bean noodles, cabbage, bok choy and shiitake mushrooms. Place skewers in pot and cook according to individual taste. Ladle broth into bowls with skewered meats and seafood and serve with condiments.
- Fish Balls:

- Mix the butter, cream cheese, sour cream, and mayonnaise until blended.
- Add seasoned salt, paprika, and chili powder.
- Add cheese, onion, green pepper, and jalapenos.
- Add crab and shrimp; mix.
- Roll into 1/4 inch balls; refrigerate for 30 minutes.
- Beat eggs and milk.
- Dip the balls into egg mixture; dredge in fine bread crumbs.

- In a medium size bowl, mix the liquor, honey, garlic, salt and pepper. Add the chicken and toss to a evenly coat. Cover and marinate in the refrigerator 8 hours, or overnight.
- To cook, preheat the oven to 350 degrees.
- Remove the chicken, shaking off excess marinade.
- Pour the marinade into a small saucepan.
