FIREHOUSE WINGS
GOOD-GOOD-GOOD!!!! I love wings and these are definetly not for the faint of heart. They are good and spicy (aren't hot wings supposed to be?)and easy to fix. Prep time will depend on how long you want to keep these in the frige.

Steps:
- In a large bowl mix together the oil, vinegar, Tabasco, chili powder, garlic powder and salt.
- Rinse wings in cold water and pat dry with paper towels.
- Add wings to the mixture in bowl and toss to evenly coat all wings (I put the mixture in a large zip-lock bag and shake everything together until coated).
- If tossing in bowl cover and chill the wings in sauce for at least 30 minutes.
- (of course the longer you chill them the more the sauce soaks in).
- Set oven to broil.
- Remove wings from sauce and place in a 13x9 foil lined baking pan.
- Broil wings about 4" from heat 7-10 minutes.
- Turn and broil other side about 7 minutes.
- Continue turning every couple of minutes until wings are done.
- Serve with blue cheese or ranch dressing.

FIREHOUSE CHILI

- In a large kettle on low simmer combine tomato paste, tomato sauce, kidney beans, garlic powder, onion powder, cumin, chili powder, parsley, oregano, pork and beans, salt, pepper, chili hot beans, chipotle powder, habenero powder, habaneros, jalapenos, New Mexico chiles, and dry pasta and bring to a simmer. While that is simmering, grill the steak, and brown the pork and beef in a large saute pan. Drain the meat, season to taste, and add to sauce. Add the beer and cook for 30 minutes. Serve with crackers and cheese.
- Serving suggestions: crackers and cheese.
FIRECRACKER CHICKEN WINGS
Steps:
- Cut the chicken wings apart at the joints and discard the tips. Combine 6 cups water, 1/4 cup of the honey, 1/4 cup of the chili-garlic sauce and the salt in a large glass bowl. Stir until the salt is dissolved. Add the wings and refrigerate for 30 minutes or up to 4 hours.
- To make the basting and dipping sauce, combine the remaining chili-garlic sauce, remaining honey, sweet soy sauce, Sriracha, low-sodium soy sauce, ginger and vinegar in a small bowl and mix well. Set aside half of the sauce for serving in order to avoid contamination.
- Preheat a grill to medium-high heat. Drain the wings and sprinkle them with sea salt and pepper. Grill the wings until golden, 15 to 20 minutes, turning as needed. When the wings reach the right color, continue cooking over indirect heat until they're at the desired doneness, then baste them with the sauce, turning as needed until the wings are glossy and well coated. Garnish the wings with the green onions and sesame seeds and serve with the reserved dipping sauce.
FIREHOUSE BBQ SAUCE
This recipe has been passed down by word of mouth in our fire station for years! It is fabulous and you can control how hot it is by how much red pepper you add. Please note that the longer it sits, the hotter it gets! Great on chicken, pork, and just about anything you can think of. Try it on a cracker with a slice of cheese!

Steps:
- Pour ketchup into a large saucepan. Pour vinegar into the ketchup bottle, shake to loosen any remaining ketchup, and pour into the saucepan. Save the bottle, and clean. Stir in the brown sugar, butter, and red pepper flakes. Cook over medium heat until almost boiling, but do not boil. For convenience, refrigerate leftover sauce in the clean ketchup bottle.
