Number Of Ingredients 15

1-1/2 cups sugar
3 tablespoons cornstarch
2 tablespoons quick-cooking tapioca
1 cup chopped peeled tart apples
1 cup chopped fresh or frozen rhubarb
1 cup each fresh or frozen raspberries, blueberries and sliced strawberries
CRUST:
2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup shortening
1 egg
1/4 cup cold water
2 teaspoons white vinegar
2 tablespoons half-and-half cream
2 tablespoons coarse sugar

Steps:

  • In a large bowl, combine the sugar, cornstarch, tapioca and fruit; let stand for 15 minutes. In another bowl, combine flour and salt; cut in shortening until mixture resembles coarse crumbs. Combine the egg, water and vinegar; stir into flour mixture just until moistened., Divide dough in half so that one portion is slightly larger than the other. On a lightly floured surface, roll out larger portion to fit a 9-in. pie plate. Transfer pastry to pie plate; trim pastry to 1/2 in. beyond edge of plate. Spoon fruit mixture into crust., Roll out remaining pastry to fit top of pie; make a lattice crust. Trim, seal and flute edges. Brush with cream; sprinkle with coarse sugar., Bake at 375° for 45-55 minutes or until crust is golden brown and filling is bubbly. Cool completely on a wire rack.

5 cups blueberries
3/4 to 1 cup granulated sugar
3 tablespoons all-purpose flour
1 tablespoon lemon juice
1/8 teaspoon salt
1/2 Crumb Topping
Easy Pie Crust

Steps:

  • Preheat oven to 400 degrees. Combine 5 cups blueberries or other fruit with 3/4 to 1 cup granulated sugar, 3 tablespoons flour, 1 tablespoon lemon juice, and 1/8 teaspoon salt. Pour into pie shell; sprinkle with 1/2 recipe Crumb Topping.
  • Place on foil-lined baking sheet in lower third of oven; reduce heat to 350 degrees. Bake until fruit bubbles and crust browns, 1 1/2 hours. If topping begins to brown too quickly, tent with foil. Let cool 6 hours.

One 16.3-ounce can refrigerated biscuits, flaky style
All-purpose flour, for dusting
1/4 cup plus 2 teaspoons cream cheese
1/4 cup plus 2 teaspoons guava jam
1 large egg yolk beaten with 1 tablespoon water
1/3 cup coarse sugar, such as sanding sugar or turbinado sugar

Steps:

  • Preheat the oven to 350 degrees F. Separate the biscuits. Dust a work surface with flour and roll each biscuit round into a 6-inch circle (about 1/16 inch thickness). Place 2 teaspoons cream cheese and 2 teaspoons jam on one side of the dough round. Brush the outer edge of the pastry round with egg wash. Fold one side over the filling and crimp the edges with the tines of a fork. Place on the prepared baking sheet.
  • Brush the entire pastry with the egg wash and sprinkle with coarse sugar. Cut a slit in the top of each pie to allow steam to escape as they bake. Repeat the process with the remaining biscuits. Bake until golden brown, about 16 minutes. Serve warm.

1 (16 ounce) package fresh strawberries, hulled and large berries cut in half
1 pint fresh blueberries
1 (6 ounce) container fresh raspberries
1 (6 ounce) container fresh blackberries
1 cup water
½ cup white sugar
3 tablespoons cornstarch
¼ cup water
1 (9 inch) prepared shortbread pie crust (such as Keebler®)

Steps:

  • Thoroughly combine strawberries, blueberries, raspberries, and blackberries in a bowl. Scoop out 3/4 cup of mixed berries and place into a saucepan with 1 cup water and sugar; set remaining berries aside. Bring the mixture to a boil and reduce heat to medium-low.
  • Whisk cornstarch and 1/4 cup water in a bowl until smooth and stir the cornstarch mixture into the hot fruit syrup; stir until the mixture thickens, about 2 minutes. Let the mixture cool completely, stirring occasionally, about 20 minutes.
  • Pour the thickened berry mixture into fresh berries until thoroughly combined; pour berries and sauce into shortbread pie crust. Place in refrigerator until chilled, at least 1 hour.

1 homemade pastry for double-crust pie (or store bought frozen roll out pastry)
1 (17 ounce) can apricot halves, drained, reserving liquid
1/2 cup sugar
2 tablespoons cornstarch
3 cups tart apples, peeled, chopped
1 cup dates, chopped
1 tablespoon lemon juice
1/4 teaspoon nutmeg (optional)

Steps:

  • Prepare pastry for a two crust pie or use store bought rollout pie pastry.
  • Heat your oven to 425*F. In a large saucepan, combine reserved apricot liquid, sugar, cornstarch, apples, dates and lemon juice. You may sprinkle the nutmeg over the top now, if desired. Cover; cook gently until apples are soft, stirring occasionally. Remove from hea and fold in apricot halves. Spoon this mixture into pastry lined pie pan.
  • To make a decorative top crust, use canape(or small cookie) cutter(1") to cut out center of dough. Repeat cutouts in an evenly spaced pattern, working from center to within 1 1/2" of edge. Arrange pastry over filling. Fold the edge of the top pastry under bottom pastry. Press together to seal; flute edge.
  • Bake at 425*F. for 25 to 35 minutes or until crust is golden brown and filling bubbles. Enjoy!

3 cups all-purpose flour
2 teaspoons sugar
1 cup shortening
5 tablespoons fruit juice, from pineapple or oranges in filling
1 (15-ounce) can pineapple tidbits, juice reserved
1 (15-ounce) can mandarin oranges, juice reserved
1 (20-ounce) can cherry pie filling
1 (14-ounce) can whole cranberry sauce
1/2 cup sugar
4 tablespoons cooking tapioca
1/2 teaspoon cinnamon
1 teaspoon lemon juice
2 teaspoons margarine
1/2 cup powdered sugar
1 tablespoon lemon juice

Steps:

  • Preheat oven to 400 degrees F.
  • For the crust: Place flour and sugar in bowl, cut in shortening. Add fruit juice. Mix until dough forms a ball. Add more juice if necessary. Divide ball into 2 pieces and roll out.
  • For the filling: Combine pineapple, oranges, cherry pie filling, cranberry sauce, sugar, tapioca, cinnamon and lemon juice. Line a 9-inch deep-dish pie plate with half of the rolled out pastry. Add filling, dot with margarine and top with other half of pastry. Make several slits in top crust. Bake 50 to 60 minutes or until crust is golden brown. Remove from oven. Mix together the powdered sugar and lemon and brush glaze on the pie.

I thought I would post this recipe for a group that I joined on "Just a Pinch" called "Camping Recipes and Ways you Can Cook Them". This is Camp Debelak (my parents camp) in Cooks Forest, PA and is very woodsy and beautiful there. The whole family enjoys their time camping. Especially the grandkids love to spend time with Papa hunting, fishing and sitting around the fire. This is the late night snacks everyone gets if they want one & of course they do! It is so wonderful to sit around the fire listening to it crackle and watching the fire burn. It is so beautiful and mesmerizing at the same time. I grew camping with my grandparents in Summersville, WVA and some camping sites in Pennsylvania too. My Grandpa used to cook all kinds of things over the fire and tell scary stories to all the children. Those were some really memorable days!!! I am so very thankful to God that my parents have a camp that they can go to and spend time with their grandchildren. Memories that will last forever!!! I hope you enjoy this recipe. Steps:

  • Need one good camp fire.
  • For as many as you would like to serve, butter bread on one side. Then, begin filling your breads. For fruit pies use your jellies and for your pizza pies use your pepperoni and cheese. You can be creative and make any sandwich you want.
  • These are the sammies that my Dad makes for the adults and kids at camp.
  • He loves making them for everyone and helping make smores too.
  • (The Hobo cast-iron pie iron can be bought online at Cabela's if you cannot find it in a hardware store.)
