EASY TORTILLA PIZZA
This is an extremely easy/fast way to prepare a delicious pizza that is light enough to be a snack, serves well as an appetizer, or is so good that is can be devoured alone! I make this often when entertaining guests and it always goes fast. You can make any sort of topping variations. The one below is the classic way I usually prepare it. I cook this also with my family. Each person gets their own tortilla to, as my kids say, decorate.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Place tortilla on a baking sheet. Brush with olive oil; sprinkle garlic powder, salt, and pepper on top.
- Bake in the preheated oven until golden, 3 to 5 minutes. Remove tortilla from the oven and spread tomato sauce on top. Arrange chicken breast, green bell pepper, and green onions over tomato sauce; cover with mozzarella cheese.
- Bake in the preheated oven until cheese is melted, about 5 minutes. Sprinkle oregano over cheese. Slice pizza into wedges using a pizza cutter.

FIVE MINUTE TORTILLA PIZZAS
This is super simple way to make mini pizzas. The olive oil spray will prevent the pizzas from being soggy in the middle--yay! Feel free to add whatever additional toppings you have on hand. We especially like to add caramelized onions.

Steps:
- Heat the oven to 450 degrees.
- Spray each tortilla lightly with the olive oil spray, and then flip them over, so that the oiled side is facing down.
- Lightly sprinkle the top of the tortillas with garlic powder.
- Cut each tortilla in half (this will allow you to fit both tortillas on the pizza stone) and arrange on a pizza stone.
- Evenly divide the tomato sauce over the tortillas. Sprinkle with the cheese.
- Add any additional toppings you desire, and put the pizza stone into the oven. Watch carefully to ensure the pizza doesn't burn. (In my convection oven, the pizza was done after a mere 5 minutes).

- Arrange one rack in the oven to the center position. Preheat the oven to 425ºF (218ºC). Place tortillas on a flat surface.
- Spoon approximately ¼ cup (63g) of the sauce onto each tortilla and spread around evenly, leaving a small margin around the edges.
- Sprinkle approximately 1 and ½ Tablespoons (8.5g) of Parmesan cheese, followed by ¼ cup (56g) of shredded mozzarella on each pizza. Top with pepperoni and/or desired toppings.
- Carefully place pizzas in the oven directly on the rack and bake for 5 minutes, or until desired color/crispness. You may also bake each pizza individually in a toaster oven. Remove from oven and allow to cool a few minutes before cutting and serving.
