SPICED MULTI-LAYER CHINESE PANCAKE
Steps:
- In a large bowl, mix a small pinch of salt with flour. Stir warm water in and then knead until get smooth and elastic dough. The dough should be much softer than normal pancakes. Then cover the bowl and set aside for 30 minutes.
- In a saucepan, heat around 2 tablespoons of cooking oil with minced garlic until fragrant. Add chopped doubanjiang, fry for 1-2 minutes over slow fire. Place black vinegar, sugar, oyster sauce and hot water. Mix well and let the sauce simmer for 4-5 minutes. Set aside.
- Divide the dough into 4 equal pieces. Take one out and roll out to a large rectangle piece on a slightly oiled operating board. Then cut 2 slices each long side of the dough to separate it into 9 portions. Then we roll the large rectangle up. Start from the bottom part; fold the two side slaps over the middle one. And then fold the three layers over the most middle one. Repeat to finish the top part and then fold the remaining piece over. You will end up with a small and neat rectangle. Then roll it out to a larger rectangle (about 2 or 2.5 times of the original size).
- Then heat around 1 tablespoon of oil in pan and fry the pancake around 3-5 minutes each side with over medium fire. Brush a thin layer of sauce before garnishing toasted sesame seeds and chopped scallion.
- Cut into one-bite sizes and serve warm.

FIVE-SPICE CHINESE PANCAKES
The addition of five spice powder to the batter is what makes these Chinese pancakes special. I use these with my recipe #399013 *Note: The dough needs to chill for an hour prior to making the pancakes. The pancakes do not keep well left-over, but are delicious freshly made!

Steps:
- Place flour, five spice powder, and chives (optional) in a medium bowl.
- Combine milk, margarine, and egg in a separate bowl.
- Add milk mixture to the flour mixture, stirring with a whisk until blended.
- Cover and chill for an hour.
- Place an 8-inch crepe pan or nonstick skillet pan coated with cooking spray over medium-high heat until hot.
- Remove pan from heat and pour scant 1/4 cup of batter into pan; quickly tilt pan in all directions so batter covers the bottom of pan.
- Place pan back on burner and cook about 1 minute.
- Carefully lift edge of pancake with a spatula to test for doneness. The pancake will be ready to turn when it can be shaken loose from the pan and the underside is lightly browned.
- Turn pancake over, cook other side for about 30 seconds.
- Place the pancake on a plate and cool. Repeat until all of the batter is used. Stack pancakes between single layers of wax paper to prevent pancakes from sticking.
FIVE SPICE
At once musky and sweet, with a pronounced kick, five spice is traditionally made from equal parts cinnamon, cloves, fennel seeds, star anise and peppercorns (usually Sichuan or white). This one, adapted from Kian Lam Kho, the author of "Phoenix Claws and Jade Trees: Essential Techniques of Authentic Chinese Cooking" (Clarkson Potter, 2015), includes Sichuan peppercorns to give the mix a characteristically numbing, tingly sensation on the tongue known as mala. Once the spices are toasted and mixed, the blend can be used both whole (simmered into stews, braises and soups) and ground (added to sauces, roasted meats and vegetables). Or, stir some salt into the ground blend and use it as a piquant table condiment: It's wonderful sprinkled on everything from barbecued meats to scrambled eggs.

- Place a small skillet over medium heat. Add spices and toast, stirring, until fragrant, 2 to 4 minutes. Pour into a small bowl and set aside to cool. If using the whole spices for a braise, they are ready to go.
- To make the spices into a powder, use a spice grinder, clean coffee grinder, or mortar and pestle to grind the spices until fine. If you like, you can strain the mix through a fine-mesh strainer to remove any coarse bits, but this is optional. Store in an airtight container in a cool, dark place for up to 1 year.

The exotic Asian flavor will surprise everyone's taste buds. I tried a similar cake when I was living in the US. It is definitely an interesting use of the Chinese five-spice! I make this cake based on my tasting memory, and I added in some ingredients that I consider will go well with it.

- Preheat the oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking pan and line it with parchment paper.
- Mix flour, ginger, baking powder, orange zest, baking powder, five-spice, and salt together.
- Mix applesauce and tea together in a separate bowl.
- Beat eggs with 1/2 cup plus 2 tablespoons sugar in a large bowl with an electric mixer until very fluffy and light. Pour in oil gradually and beat on medium speed until combined. Alternate adding the flour and applesauce mixtures, mixing just until combined. Pour batter into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 60 minutes.
- Remove from the oven and let cool for 30 minutes. Place a wire rack over the cake pan and flip to release cake onto the rack. Let cool completely, at least 45 minutes.
- Cut parchment paper into any shapes you like to act as stencils. Brush lightly with water and stick them over the surface of the cake. Gently sprinkle turmeric around the shapes. Carefully lift up stencils.

- The duckHeat oven to 180C/160C fan/gas 4. Mix the honey and five-spice in a bowl, then brush all over the duck. Transfer to a roasting tin and roast for 25-30 mins until bronzed. Cool for 10 mins, then shred the meat and finely slice the skin.
- Plum sauceWhile the duck is cooking, put all the plum sauce ingredients in a saucepan and simmer gently over a medium heat for 15 mins or until the plums are soft and the sauce is thick. Using a stick blender, blend until smooth.
- PancakesWhile the sauce is cooking, put the flour, 125ml boiling water and a pinch of salt in a bowl and mix together until it forms a dough. When cool enough to handle, knead for 5-10 mins. Divide it into 10 little balls and roll each one out as thin as you can. Brush a frying pan with the oil and cook each pancake over a medium heat for 20 secs each side or until cooked but not browned.
- To serveSpread a pancake with a little plum sauce. Top with the shredded duck, a few pieces of cucumber and spring onion.
