PEAR CHAMPAGNE COCKTAIL



Pear Champagne Cocktail image

We chose to garnish our cocktail with Seckel or Forelle pear slices because of their small size - they fit perfectly in the Champagne flutes. Be sure to lower the slices slowly into the flute or the Champagne will bubble over.

Yield Serves 1

Number Of Ingredients 3

1 teaspoon Poire William or other pear eau-de-vie
6 oz demi-sec Champagne or sparkling wine, chilled
Garnish: thin slices of pear

Steps:

  • Pour eau-de-vie into a Champagne flute and swirl around to coat inside of glass. Top off with Champagne.

1/2 cup sugar
1 tablespoon dried lavender
4 bottles (750 mL) dry Champagne or sparkling wine, chilled
Fresh lavender sprigs, for garnish

Steps:

  • Bring sugar and 1/2 cup water to a boil in a saucepan, stirring to dissolve sugar. Stir in dried lavender. Remove from heat. Let cool completely. Strain out lavender. Refrigerate syrup until ready to serve (up to 1 month).
  • Pour about 6 ounces Champagne and 1 1/2 teaspoons syrup into each flute. Garnish each with a lavender sprig.
